AMYLOSIN P (FUNGAL ALPHA - AMYLASE) DESCRIPTION Amylosin is a purified amylolytic preparation designed to hydrolyze starch into maltose under strictly determined conditions. It is derived by in-dept fermentation of specially selected producer strain of Aspergillus sp. UNITS OF ACTIVITY The enzyme's activity is measured in amylolytic units AU/g, and represents the amount of enzyme, which hydrolyzes 1 g of starch into a hydrolyzed degree of 30% at temperature - 30û C, pH - 4.7, during 10 minutes. STANDARDS 1 000 - 10 000 U/g
