ปจจุบันการลดน้ําหนักและการควบคุมปองกันการเกิดโรคที่เกี่ยวของกับ metabolic syndrome กําลัง เปนที่สนใจของนักวิจัยที่เกี่ยวเนื่องกับโภชนาการ การใชอาหารสูตรตางๆ ในการควบคุมภาวะเหลานี้ เปนงานวิจัยที่ นาสนใจ อยางไรก็ตามสูตรอาหารบางชนิดนั้น ไมกอใหเกิดผลในการลดน้าํ หนัก อีกทั้งมีผลรายตอสุขภาพโดยรวม หากใชเปนระยะเวลานาน สูตรอาหารชนิด Low Carb ก็เชนเดียวกัน ในอดีตมีรายงานผลการใชอาหารชนิดนี้ในการลด น้ําหนักไดเปนผลสําเร็จ แตรายงานวิจัยหลายงานกลาวถึงการใชสูตรอาหารชนิดนี้วา ไมไดชวยในการลดน้ําหนัก จะ เกิดผลในระยะเวลาสั้นๆ เทานั้น การใชโดยผูที่ไมมีความรูและไมไดอยูในความดูแลของผูเชี่ยวชาญทางโภชนาการอาจ กอใหเกิดผลรายตอสุขภาพโดยรวมในระยะยาวได Advancing institutional dietetics and school nutrition program in Korea และ Sharing Singapore’s experience in dietetic practice and school nutrition programmes

หลักสูตรโภชนาการและการกําหนดอาหารเปนหลักสูตรใหม สําหรับประเทศไทย แตในประเทศ แถบยุโรปและสหรัฐอเมริกานัน้ วิชาชีพนี้เปนวิชาชีพที่เปนที่รูจักมาเปนเวลานานแลว เนื่องจากการเรียนการสอน การ ประกอบวิชาชีพแพทยนั้น ตองอาศัยความเชี่ยวชาญจากศาสตรหลายแขนง ทําใหวิชาชีพที่เกี่ยวของกับสายการแพทย ในตางประเทศเปนวิชาชีพ ตองไดรับใบอนุญาตในการประกอบวิชาชีพเชนเดียวกัน ประเทศในทวีปเอเชียประสบ ปญหาเชนเดียวกันกับประเทศไทย เนื่องจากเปนวิชาชีพที่ยังใหมสําหรับประเทศแถบนี้ การแบงปนประสบการณ เกี่ยวกับการเรียนการสอน และการผลักดันใหการกําหนดอาหารเปนวิชาชีพจึงเปนประเด็นที่นาสนใจ ในประเทศ เกาหลีและสิงคโปรนั้น มีนักกําหนดวิชาชีพแลวจํานวนหนึ่ง ถึงแมจะไมเพียงพอกับจํานวนผูปวยและจํานวนเตียงใน โรงพยาบาลตางๆ แตก็เปนการเริ่มตนที่ดี การแบงปนประสบการณเหลานี้สามารถปรับใชกับประเทศไทยไดดวย The effect of nuts on inflammation, Phytochemical composition of nuts, The energetics of nut consumption

เปนที่รูกันมานานแลววา การรับประทานถั่วบางชนิดสามารถลดความเสี่ยงตอการเกิดโรคที่เกี่ยวของ กับการอักเสบ (Inflammatory related diseases) ได เนื่องจากถั่วเกือบทุกชนิดมีกรดไขมันชนิดโอเมกา สาม arginine และสารพฤกษเคมี ที่มีฤทธิ์ในการตานการอักเสบได การบรรยายในครั้งนี้เปนการยืนยันผลการวิจยั ที่ผานมาวา การ บริโภคถั่วอยางนอย 3 ครั้งตอสัปดาห สามารถลดความเสี่ยงของการเกิดโรคที่เกี่ยวของกับการอักเสบไดจริง - รายงานเกี่ยวกับการเสนอผลงานฯ ของผูรับทุนและผลที่ไดรับ การนําเสนอผลงานในครั้งนี้เปนการนําเสนอในรูปแบบของ poster ไดรับความสนใจจากผูเขาชม พอสมควร อีกทั้งผูรับทุนไดมีโอกาสแลกเปลีย่ นประสบการณการวิจัย และขอซักถามกับผูที่สนใจเขาชม เนื่องจากมี ความสนใจในการทําวิจัยในเรือ่ งเดียวกัน

การนําเสนอผลงานในรูปแบบ poster ในครั้งนี้นั้น สวนใหญเปนการนําเสนอผลงานที่ยืนยัน ผลการวิจัยที่ไดมีการทําไวแลว แตการบรรยายในบางเรื่องเปนสิ่งใหม ทําใหผูรับทุนใชเวลาสวนใหญเขาฟงการ บรรยาย 3. สาระสําคัญทางวิชาการที่ไดเรียนรูจากการเขาประชุม/สัมมนา หรือเสนอผลงาน สรุปขอคิดเห็นและ ประโยชนที่ไดรับจากการไปประชุม/สัมมนา หรือเสนอผลงาน 3.1. ดานความกาวหนาทางวิชาการ การเขารวมประชุมในครั้งนี้เปนโอกาสดี ที่จะไดเพิ่มเติมความรูในสวนที่สนใจ ซึ่งเกี่ยวเนือ่ งกับการ ควบคุมยับยั้ง และลดความเสี่ยงของการเกิดโรคที่เกี่ยวเนื่องกับการอักเสบโดยใชอาหารและโภชนาการแทนการใชยา อีกทั้งได ติดตามขอมูลความรูเกี่ยวกับการใชสูตรอาหารตางๆ ในการลดน้ําหนัก 3.2. ดานความรวมมือทางวิชาการ ไดพบและทําความรูจักนักกําหนดอาหารจากประเทศตางๆ ซึ่งอาจมีความรวมมือกันในอนาคต 3.3. ดานแนวทางการแกปญหา 3.4. ผลตอเนื่องจากการไปประชุม/สัมมนา หรือการไปเสนอผลงาน (ถามี) ขอเสนอแนะหรือสิ่งที่คิดวา นาจะเปนประโยชนตอสวนรวม -
