St. Mary’s Assumption Church is in need of catechists for our religious education program. We will provide the necessary training if needed. Thank you for your support! LA CIENCIA POR FIN SABE EXACTAMENTE POR QUE LA CEBOLLA NOS HACE LLORAR Hasta ahora, la ciencia sabia la química que producía ese factor lacrimógeno, pero no estaban muy seguros de cómo funcionaba. Ahora han desbloqueado los secretos químicos. El bulbo de la cebolla esta compuesto por células unidas entre si por una sustancia cuya función es la de darle una estructura firme. Además, la estructura del bulbo consta de esas “hojas” con las que podemos ir separando la planta. Cuando se troce o corta, rompemos las células y permite que una enzima denominada alinasa entre en contacto con una molécula (inodora) que se encuentra en el interior de la cebolla. La combinación de ambas produce una sustancia que, al penetrar en los ojos, producen irritación ocular y, en última instancia, lagrimas. Además, el ácido sulfúrico también ayuda a dañar esa membrana conjuntival (de ahí el remedio casero de cortar bajo el agua). Lo cierto es que los científicos habían identificado la composición química de la molécula irritante hace mucho tiempo, sabían de la existencia de ese tipo de azufre y la enzima que ayuda a crearlo. Sin embargo, no estaban muy seguros de cómo funcionaba el proceso hasta ahora. El hallazgo ha sido posible gracias a los investigadores de la Case Western Reserve University. El equipo se centró en el factor en la sintasa, la enzima que ayuda a darle forma a la molécula. Analizaron la estructura de la enzima y determinaron como interactúa con los precursores químicos que producen el facto lacrimógeno en una cebolla. Posteriormente y después de comparar la enzima con moléculas similares, los investigadores fueron capaces de identificar los pasos exactos involucrados en la conversión del ácido sulfónico en una cebolla en algo que nos hace llorar a las personas. Habían dado con los fundamentos a nivel molecular de la cebolla.

SCIENCE AT LAST KNOWS EXACTLY WHY ONIONS MAKES US CRY Until now, science knew the chemistry that produced that tear factor, but they were not quite sure how it worked. They have now unlocked the chemical secrets. The bulb of the onion is composed of cells joined together by a substance whose function is to give it a firm structure. In addition, the structure of the bulb consists of those "leaves" with which we separate the plant by. When it is chopped or cut, we break the cells and allow an enzyme called alinase to come into contact with a molecule (odorless) inside the onion. The combination of both produces a substance that, when penetrating the eyes, produces eye irritation and, ultimately, tears. In addition, sulfuric acid also helps to damage that conjunctival membrane (hence the home remedy of cutting onions under water). The truth is that scientists had identified the chemical composition of the irritant molecule long ago, they knew of the existence of that type of sulfur and the enzyme that helps to create it. However, they were not quite sure how the process worked so far. The finding was made possible by researchers at Case Western Reserve University. The team focused on the factor in the synthase, the enzyme that helps shape the molecule. They analyzed the structure of the enzyme and determined how it interacts with the chemical precursors that produce the tear factor in an onion. Subsequently and after comparing the enzyme with similar molecules, the researchers were able to identify the exact steps involved in converting sulphonic acid into an onion into something that makes people cry. They had found the molecular basis of the onion.
