Introduction  “The doctor of the future will no longer treat the human frame with drugs, but rather will cure and prevent disease with nutrition”.  Thomas Edison  For the better part of 45 years, I had rarely considered the healthy functioning of my gastrointestinal track.  The mineral content in my diet never crossed my mind and I just assumed that the water coming from my tap was suitable for drinking.  I seemed to be healthy, as healthy as anyone else in my family, as healthy as my friends.  I ate with moderation the food that tasted good to me and I considered my work as a property Investor to be sufficient exercise.  I was busy, very busy, a person consumed by the engine of the property market.  My stress levels were high but so were those of my colleagues and most high earners in the busy Capitol; This all seemed normal.  I was living the status quo until two events began to unravel my long established paradigm. A close family friend was diagnosed with cancer and the emergence of my daughter’s dyslexia.    I am no stranger to dyslexia.  I have coped with the disorder my whole life, finding through trial and error methods for overcoming the difficulties it presents.  Only a few people in my inner circle know that I am dyslexic.  Somehow, I imagined that it may be perceived as a weakness, so I hid it from the world; that is until my daughter was diagnosed at the age of nine.  It forced me to examine the disorder through a different lens and to investigate the reasons for its presentation. I began to study the brain and learned that it is fueled by nutrients and oxygen. It then occurred to me that the food which we eat affects not only our physical health, but our mental functioning. During the same period, a close family member was diagnosed with inoperable and terminal cancer.  He was in good health, or what I perceived to be good health.  He did not smoke, drank alcohol in moderation, was physically active.  How could cancer be ravaging his body? Conventional medicine, the only medicine I knew, offered little explanation.  The disease is random.  Sometimes it can be triggered by a poor lifestyle or a hereditary disposition but its true cause seems to elude the medical community. Before me lay a vast ocean of both knowledge and ignorance.  Where should my search begin?  I was a property investor, not a doctor but my background gave me one distinct advantage against my adversary: I was a clean slate.  I had no preconceived notions and I was open to all possibilities.  As my research commenced, I was overwhelmed by the infinite theories and endless information on the causes of disease.  There were thousands of diet plans claiming to cure both illness of the body and of the mind but who was right?  I discovered research that made sense and then found contradictory information.  I needed to look at things from a different angle and then the proverbial light bulb switched on in my head.  Are there communities in the world unaffected by disease?  Indeed there are!    “The longevity nations”, they are called.  There are pockets of them throughout the world in remote areas untouched by Western civilization. I studied them, concentrating on the Hunzakuts of the Himalayas, examining their diet, lifestyle, and environment.  What makes them so different from us?  I endeavoured to understand the human body and what it requires to operate in balance free from disease.  I used myself as a guinea pig, undergoing blood, urine, and saliva tests.  I interviewed experts of 'alternative' technology and I put diet plans

through different trials.  The results were truly enlightening and I will share them in the book to follow.    This book will bring together all the best research on wellness, fulfilment, and longevity so that others may be freed from the viscous cycle of disease. My book will shed light on the current state of modern medicine, examine the longevity nations, explore nutrition for the brain and the importance of healthy water and organic food.  The effect of toxins and stress in our environment shall be discussed as well as mineral and pH balance in the body. A detailed and easy to follow nutrition plan that treats the body as an integrated whole will follow a plan for engaging both hemispheres of the brain for clearer and deeper thought processes and to eliminate brain fog.         This is not a diet directed towards weight loss, however, one will lose weight naturally by following the nutrition plan. The plan will also help those who have been suffering from skin conditions, high and low blood pressure, high cholesterol, poor digestion, infertility, depression, allergies and a host of other ailments both common and uncommon. It is not a magic bullet but a gradual plan to restore the body’s balance though I must stress that it is not a substitution for allopathic medicine. Modern medicine saves countless lives every day.  It is there for us when we need it and we would suffer without it.  I am not suggesting that we do away with healthcare as we know it, simply that we pre-empt doctors, drugs, and hospitals by providing our bodies with the nutrients they requires for optimum health.    As a closing note, I would like to thank Jackie Kilroe my ghost writer who streamlined my chapters and contributed critical research. Chapter 1 - Modern Medicine vs. “Alternative”  Before 1861, modern medicine was in its infancy and the future of Western healthcare was for the taking.  Louis Pasteur, the founder of modern medicine, used his wealth, power, and considerable influence in the budding medical community to coin “Germ Theory” which holds that illness is caused by micro organisms in the air which invade the body; in other words, germs from outside the body invade the body creating disease.  Not only was much of his research plagiarized, having been studied years before, it was also incomplete and distorted.  Pasteur was partially correct to point out that there are germs in the air that cause illness, as the theory states, however, the conditions in the body must be advantageous for these air born bugs to take hold.  Bacteria and microforms already exist within the body in greater or lesser numbers depending on diet and lifestyle. These in turn allow them to either flourish and literally germinate, or exist in much smaller non-harmful and even beneficial numbers.  This is why some people catch every bug going around while others never seem to get sick. Pasteur supported monomorphism. (1) “Germ Theory” was not the only hypothesis being investigated in the nineteenth century.  Antione Bechamp, an esteemed French researcher, biologist, and contemporary of Pasteur formulated a sharply different theory affirming that, “disease is caused by microorganisms inside the body that act upon cellular imbalance resulting from “a toxic/nutrient deficient diet, toxic emotions, and a toxic lifestyle”. His findings demonstrate how cancer develops through the morbid changes of germs to bacteria, bacteria to viruses, viruses to fungal forms and fungal forms to cancer cells (2).” Claude Bernard, continued where Bechamp left of, describing the environment that causes pleomorphism; the morbid changes of germs to bacteria. He is also responsible for today’s knowledge of pH, “and how the nature of microorganisms change as the body moves from an alkaline pH to an acidic pH (3).” On his death bed Pasteur recanted “Bernard was right: the Terrain is everything, the Germ is nothing (3)”. The son of Louis Pasteur discovered in his notes that Pasteur knew this long before his death. Had the theory of microorganisms inside the body taken hold, healthcare today would look drastically different.  There would be very little disease and the individual would have the ability to self heal and maintain a healthy lifestyle based on a complete diet, emotional balance, and toxic free environment and in the nineteenth century, this was not such a radical idea.  The Populous had not yet been conditioned to believe that health was only achievable through drug supplementation and medical intervention that addresses symptoms of disease rather than the underlying cause.  However, medicine as an industry saw the opportunity to profit by endorsing Pasteur’s “germ theory”.  Instead of healing through food and lifestyle changes, people would be required to pay for drugs.  Today the pharmaceutical industry is among the most prosperous and powerful in the world while disease continues to thrive and grow more predominate in the West.  The narrow model that our healthcare system is based on ignores and dismisses all systems that do not fit its single track philosophy.  Symptoms are suppressed with drugs rather than examined as indicators of underlying illness and all patients with similar conditions are treated the same.  Doctors view the human body as a compilation of many different parts that can be treated separately and independently from the whole while nature is ignored completely as an influencing factor in overall health.   

It is a shock to discover that many doctors today receive only six to eight hours of nutritional training in medical school despite the irrefutable evidence that diet and lifestyle can create or eliminate disease.  As a result of this lack of training, most doctors do not understand how to achieve better health via nutrition, nor do they recognize the harmful impact of a toxic environment on overall health.  Many are however, deeply compromised in the profitability of pharmaceuticals (4).  However, Bechamp’s theory is beginning to make a resurgence in the research of doctors like Gitte Jensen. Microorganisms are categorized under different names being microzymas, protits, somatid, boids and nanobes. Germ Theory, which our entire medical system is based on, ignores thousands of years of medical research including Chinese medicine, Ayurveda of India, and the true father of western medicine, Hippocrates, who stated 2,400 years ago,  “Nature is the physician of man." and, "Leave your drugs in the chemist’s pots if you can cure your patient with food."  1. Chapter 2 - Longevity Nations: The Hunzakuts Jay Hoffman in Hunza, Secrets of the world’s healthiest and oldest living people agrees with doctors and medical professionals who theorise that human beings can live to 120 and beyond. Dr Edward L Bortz, former President of the American Medical Association, claims that man should have a life span of 150 years, “A dog is full grown physically at 2 years and has an average life expectancy of 12 years. At 1 ½ years of age a cat is fully grown and has a life expectancy of 10 years. At 4 years a horse is fully grown and has a life expectancy of 25, accordingly if a man is physically mature at 25, then he should have an average normal life span of 150 (1, Pg.232).” The Hunzakuts, commonly referred to as the Hunza, reside in the Hunza Valley of the Karakorum Mountains in Northern Pakistan. This fair skinned race of people are said to descend from several soldiers of Alexander the Great’s army who arrived in the region in the 4th century BCE though genetically, they are linked to the Afghans, Sinti Romani, (Gypsies), and East Asians. They are recorded to have lived up to 120 although some dispute this. The Hunza region of the Himalayas is of exceptional beauty and legend claims that it is the mythical home of the lost city of Shangri La. Unlike the myth, the Hunzakuts are very real but they did possess some extraordinary characteristics that have drawn researchers to the remote valley since the turn of the 20th century. In stark contrast to the tribes surrounding them, the Hunzakuts are endowed with long, strong, healthy lives. Their remarkable health and endurance was kept a secret for nearly 2,000 years because of their remote location, however the age of exploration exposed them to enquiring doctors, scientists, and researchers who traveled to the region to study and document the diet, lifestyle, customs, and philosophies of this curious and remarkable nation of people. Unfortunately, a modern transport network has been built in the Hunza Valley, exposing the people to different diets and customs. Currently, they eat a more Western diet and disease now exists within their community, thus, the following description of their way of life is written in the past tense. Not only did the Hunzakuts outlive surrounding tribes, they also outlived the average Westerner and they did so in complete health and disease free. Men were able to father children into their 90’s and women were blessed with abundant fertility. Most Hunzakut men and women surpassed their centennial birthday but hardly looked over half a century old. Cardiovascular disease, the number one killer in the Western world, did not exist in Hunza. Cancer was unknown as well as strokes, digestive disorders, and mental health troubles. There was no crime, therefore there were no jails or police yet they were no more supernatural than you or I. Their vitality, virility, wellbeing, and happiness were a direct result of their simple and rich diet and lifestyle.

At the turn of the 20th century, a renowned English surgeon, Dr. Robert McCarrison sought to discover the origin of disease in Asia and to what extent diet played a role in the individual’s health. Among those he studies were the Hunzakuts. “My own experience provides and example of a race unsurpassed in perfection of physique and in freedom from disease in general. I refer to the people of the State of Hunza, situated in the extreme northernmost point of India. The Span of life is extremely long amongst these people and such service as I was able to render them during the seven years I spent in their midst was confined chiefly to the treatment of accidental lesions, the removal of senile cataracts, plastic operations for granular lids, or the treatment of maladies wholly unconnected with food supply. During the period of my association with these people, I never saw a case of asthenic dyspepsia, of gastric or duodenal ulcer, or appendicitis, of mucous colitis, or cancer….Among these people the “abdomen oversensitive” to nerve impressions, to fatigue, anxiety or cold was unknown. The consciousness of the existence of this part of their anatomy was, as a rule, related solely to the feeling of hunger. Indeed, their buoyant abdominal health as, since my return to the West, provided abdominal contrast with the dyspeptic and chronic lamentations of our highly civilized communities (2, Pg 95).” Many factors contributed to the extraordinary health and longevity of the Hunza people including their unique and isolated location with its mineral rich soil, pure glacial waters, and clean high altitude air. However, there are many tribes who inhabit the same general area, benefiting from the same pure resources but they are plagued by disease. Those who traveled to the region and lived among the Hunzakut people revealed that the mystery of their incredible wellness, longevity, and fulfilment was simply a healthy diet and lifestyle. Vegetables A remarkable characteristic of the Hunzakuts was that they subsisted mainly on vegetarian foods. This was because they did not have enough land to graze a large number of cattle. What land they had was used for the cultivation of fruits, vegetables, and grains, the basic foods of the Hunza people. The Hunzakuts ate large quantities of spinach with every meal as well as carrots, potatoes, radishes, pulses that were carefully sprouted, lettuce, peas, turnips, and various herbs. Their cooking capabilities were limited by their lack of fuel so they either ate their vegetables lightly cooked or lightly steamed. Salads were popular and served with either grape vinegar or apricot kernel oil. Fruit Apricots were the staple of the Hunzakut diet. Every family grew as many trees as their land would support and every part of the fruit was consumed. In the summer months apricots were eaten fresh while preparations were made for the long winter months. Apricots were sun dried on rooftops so they could be eaten year round.

The apricot, however, has a secret. The kernel of the Apricot, or pit, that is most often discarded is a nutrient powerhouse and the Hunzakuts ground it into oil which was used on salads, for cooking, as a food supplement. The Hunzakuts also grew and ate peaches, cherries, pears, and apples. The Hunzakuts did not have toothpaste, brushes, or dentists yet they had healthy white teeth. The apple is one method used to aid dental hygiene as its acid acts as a potent germicide in the mouth while also cleaning and massaging the gums with each bite. Meat & Poultry While the Hunzakuts were not strict vegetarians, they rarely consumed meat. The Hunza people did not have enough food and pasture land to raise animals for slaughter. The lack of refrigeration meant that when an animal was slaughtered for a special occasion, the meat was consumed immediately. The Hunzakuts did not keep chickens because they ate the seeds that the Hunzakuts use for their own consumption and food production. Therefore they did not eat poultry including eggs. Dairy There were few cows in the Hunza Valley. It is a harsh environment where the cow struggles to survive and it competes for vital resources. Instead the Hunzakuts raised goats and yaks in the higher altitude areas of the valley. From the milk of the goat they produced buttermilk, yogurt, and cheese. The curing process removed casein and lactose. They did not consume animal milk. Grains The first crop of the year was barley, then millet, wheat and then buckwheat. The Hunzakuts also produced and consumed large amounts of millet, an ancient and highly nutritious grain. The Hunzakuts made bread called chapatti which, depending on the season, used wheat grain, millet, barely, buckwheat, and ground pulses such as chickpeas and ground beans. While they did eat bread, grains accounted for a very small portion of their diet which shall be discussed in further chapters. Sugar The Hunzakuts had no refined sugar. The only sugar in their diet was mainly found in their fruits which were “astonishingly sweet and of magnificent quality (3, Pg. 105).” Drinking and smoking The Hunzakuts consumed moderate amounts of red wine and tea. There is no indication from the research available whether they drank coffee and they did not smoke.

Fulfilment The Hunzakuts believed in the power of prayer, in the benefits of positive thinking, mindfulness, and love for their fellow man. They were committed to their way of life and lived in the moment without stress or fear. They were truly a nation of happy people which contributed to their health and longevity. I love food as much as the next culinary enthusiast but I have come to understand that we truly are what we eat, as the old saying goes. Every fiber of the human body is run on the food that we eat, “ Should we eat good nutritious food, we are going to have healthy bodies: but if we eat food that is demineralized, devitalized, and diseased, it is only natural that we will have sick bodies. Modern civilization today does not think that way. All that the average Mr. and Mrs. Public consider is the way food tastes. Most people are more interested in the type of oil they put in their automobiles than they are in the type of food they put in their stomachs (3, Pg. 231).” Whether by trial and error, hereditary knowledge, or simply instinct, the Hunzakus had a diet that was complete in minerals and vitamins in amounts exceeding the modern daily recommended allowances by sometimes up to 100 times. This was the key to their exceptional health. Their diet was 99% vegetarian, yet there are many people today who eat a plant based diet and live a healthy lifestyle, yet they have not escaped from disease. There are plenty of vegetarians who have cancer, for instance. The key is providing the body with all the minerals and vitamins it requires. Take one key mineral or vitamin away and the whole system can malfunction. If you can imagine for a moment, the mechanics of a car: it needs fuel as the body needs nutrients. In order for the car to move, the spark plugs needs to fire to push the pistons down and ultimately make the car wheels turn. The waste of the burning fuel is then sent to the catalytic converter where it is cleaned and leaves the car via the exhaust. In the body, pH (which will be discussed in the chapter to follow) acts as the spark and the waste material is sent to the organs via the lymph system. Leftovers are expelled via

the digestive tract. Conveniently, the catalytic converter in a car can be changed. Should one piston stop firing over time the catalytic converter will melt and the car will come to a halt. In our body our organs and critical systems of the body cannot be replaced (other than via transplants), therefore, the fuel put into the body must be nutritious and complete in all minerals and vitamins to keep its parts in healthy working order. Without every piston firing in a car, the machine will over time not operate. Without all the minerals and vitamins in the body present and in adequate quantities, it cannot function. Chapter 3 - pH Balance/PRAL score pH balance PH within the body is measured on a scale of 1-14; 7 is neutral while anything below is acidic and above 7 is base or alkaline. The blood runs at a pH of 7.365. Like our core temperature, this number must remain constant with a consequence of death should it vary more than approximately 0.5pH up or down. (1) The difficulty with our Western diet is that an average of 80% of the food consumed is acidic. The body works very hard to regulate pH. The Lungs, Circulation (blood) and Kidneys, are all responsible for keeping the score at 7.365 pH. When an acidic diet and lifestyle threatens the balance, the body cannot assimilate minerals and vitamins effectively. Minerals and vitamins are the overlooked heroes of the human body and when they are in short supply, internal havoc breaks loose. Take for instance, Iodine. It is one of the most important minerals for proper thyroid functioning and it requires a near perfect pH score for proper assimilation into the body (2). It is no coincidence that over 27 million Americans suffer from thyroid dysfunction (3) and that number reflects only those who are officially diagnosed. Millions more suffer under the radar. Other symptoms of a slight acidic imbalance are allergies, skin conditions, headaches, weight gain, colds and flues, and sinus discomfort (4. Pg. 17). Such conditions are considered to be mere inconveniences and treated with over the counter medication that address the symptoms instead of investigating the underlying condition. Should the pH acid imbalance escalates, organs, the adrenals, the lymphatic system, and the thyroid all begin to fail followed by oxygen deprivation of cells. Cancer, predicted to displace heart disease as the number one killer of people worldwide in 2013 (5), thrives in low oxygen acidic tissue conditions. An acidic pH imbalance is also the culprit behind diabetes, heart disease, chronic fatigue, obesity, and a host of other ailments. “All disease is acid related. In general, degenerative diseases are the result of acid waste build-up within weak cells and organs that are too weak to clean house. When we are born, we have the highest alkaline mineral concentration, establishing the highest pH. That is why most degenerative diseases do not occur when you are young; they occur usually after 40 years of age” (6). Luckily, the body has a mechanism to compensate for pH imbalance but it comes at a great cost. “When faced with a lot of incoming acid, the blood begins to pull alkaline minerals out of our tissues to compensate. There is a family of minerals particularly suited to neutralizing, or detoxifying, strong acids including sodium, potassium, calcium, and magnesium. When these minerals react with acids, they create much less detrimental substances (4).”

A healthy body has reserves of these minerals for the occasional acid attack but should a person maintain an unhealthy diet, these minerals are lacking. To prevent cellular metabolism dysfunction which would result in death, the body must find these alkalizing minerals in other parts of the body: calcium from the bones and magnesium from the muscles to name a few. The medical condition of my close family member, mentioned in the introduction, is an example of minerals leaching from the body due to acidic conditions. Prior to his myeloma cancer diagnosis, he was diagnosed with type two diabetes. He was prescribed medication that has a pH score of 3-4 which compounded the acidic condition in his body which likely played a part in the development of his diabetes. While the medicine treated some of his symptoms, it was compounding the problem within the body, thus, it did not come as a surprise that his bones were found to be brittle and several of his vertebrae needed to be fused. My family member had a typical Western diet that was lacking in nutrition. Because of this, his stockpile of alkalizing minerals were lacking but the body needed to balance the acid so it leached calcium from his bones. Does this sound like a familiar scenario? “ In the United States, an estimated 5.3 million people aged 50 years and older have osteoporosis. Most of these people are women, but about 0.8 million are men. Just over 34 million more people, including 12 million men, have low bone mass, which puts them at increased risk for developing osteoporosis. Half of all women and as many as 1 in 4 men aged 50 years and older will have an osteoporosis-related fracture in their lifetime”(7). My theory, is that the human body has a hereditary disposition that directs it to leach alkalizing minerals from certain areas of the body. My family member’s genes directed the body to seek alkalizing calcium from his bones to neutralize his acidic environment resulting in brittle bones and later myeloma cancer. Other people’s genes direct the body to leach from other areas. I believe that multiple sclerosis is a direct result of the body leaching the alkalinity from the myelin sheath insulator that surrounds our central nervous system. The catalyst for my nutritional investigation was my family member’s myeloma cancer diagnosis that followed his diabetes diagnoses. He naturally went on chemotherapy while continuing to eat the unhealthy diet that lead him down the road of disease. I understand that chemotherapy has a pH score of between 3-4 just like his diabetes medication. So it is like a snow ball effect. First acid diet; then acid pills for diabetes; then acid chemo for cancer. Acid producing food vs. Alkaline producing food (Pral score) All food in its natural (or unnatural) state has a pH score. However, this can significantly differ when the food interacts with the body’s digestive enzymes. For example, lemons are very acidic but they are alkaline forming in the body (they leave an alkaline residue). Conversely, meat has an alkaline pH score but it is acid forming in the body (they leave an acid residue). The actual pH impact of a food on the body after digestion and assimilation is called ‘potential renal acid load’, or PRAL. Negative numbers indicate alkaline producing foods and

positive numbers indicate acid producing foods. For optimum health, 80% of food ingested should have a negative score. It is advisable to eat approximately 75-80% alkaline foods along with only about 20-25% acidifying foods. This will produce a slightly alkaline pH in the body which is perfect for optimum health. Stress is acidic and the Hunzakuts did not know what the word meant. We will in later chapters discuss ways of reducing stress. It is not only your diet that causes disease however having an alkaline diet assists greatly. An alkaline diet is like a alkaline battery, calm and cool. Whereas an acidic diet is like an acidic car battery, spiky and hot. Nutritionists typically break down the ingredients for a balanced body into six categories: water, minerals, vitamins, protein, carbohydrates and fats. I propose that pH is the seventh and arguably the most important category as it acts as the body’s conductor. An orchestra without a conductor will eventually crumble. Should the pH (spark plug) in the body be unbalanced, every system in the body will be affected. 1. Chapter 4 – Constitution of Human Body: The China Study Are Humans Designed to be Carnivores, Omnivores, or Herbivores? There are plenty in the medical, nutritional, and diet field who still maintain that a well balanced diet should include animal protein so how is one to make an educated decision as to what is best for the body when so many theories abound that all claim to be the gospel truth? A simple method for determining if the human body is designed and equipped to digest meat is to compare its digestive system and physiological characteristics to those of other carnivorous (meat eating), omnivorous (meat eating and non meat eating), and herbivorous (non meat eating) species. Jaws and Teeth: One of the most obvious differences between carnivores, omnivores, and herbivores are the teeth. Carnivores have teeth that are designed for killing and tearing flesh. They are pointed and sharp, long and spaced to prevent debris from getting stuck. Conversely, the teeth of herbivores are flat and platform topped in order to grind down food. Omnivores rest between the two. (1) Swallowing: Carnivores swallow their food in whole large chunks. They do not have enzymes in their mouths to begin digestion as herbivores and omnivores do. For optimal digestion, herbivores and omnivores must chew their foods in order to release enzymes in saliva to begin breaking down the food and to release the digestible innards of the plant. (1) Stomach: Carnivores have large stomachs, or sometimes dual stomachs (ruminants), that comprise of roughly 60 – 70 percent of their digestive tract in order to accommodate large chunks of undigested meat. To aid fast efficient digestion, their stomachs excrete powerful acidic digestive enzymes. The stomachs of omnivores are similar to carnivores but the herbivore’s stomach is quite different. It is far smaller in order to process smaller amounts of food and is roughly 20 times more alkaline than a carnivore’s. (1) (2) Colon and other Organs: The intestinal tract of carnivores is 3 times their body length, smooth and relatively straight in order to process rapidly decaying meat quickly through the body while the intestinal tract of an herbivore is 10-12 times their body length. It is designed to hold food for as long as possible for optimal nutrient absorption. Because of the design of an herbivore’s digestive tract, foods that are high in cholesterol tend to become stuck in the pockets and pouches off the long winding tunnel. The digestive tract of an omnivore is similar to that of a carnivore. The liver of a carnivore is designed for the purposes of eliminating uric acid in large quantities. Uric acid is released into the system for the purposes of breaking down the complex proteins found in meat into amino acids. The Herbivore’s liver can cope with less than 10 times the amount of uric acid as a carnivore’s. Again, the omnivore’s liver is similar to the carnivore’s. (1) (2)

Body structure and movement: Carnivores have claws and paws and a gait designed to hunt, chase, and trap prey. The gait of herbivores is designed for mobility only and human’s hands and nails are tailored to picking rather than killing. (2) Outcome: By comparing the structure of the human body to other species, it is clear that we were not designed to ingest and digest meat. A plant based diet constitute a human’s natural food. However, many opponents of vegetarianism believe that the human body will become weak should meat be removed from the diet but one must only look to nature to see that some of the largest and most powerful animals on the planet are herbivores: take for instance the gorilla, elephant, rhinoceros, horse, ox, etc. Additionally, carnivores live roughly one-third as long as herbivores. (3) The China Study Chou En Lai, the former premier of China, was diagnosed with terminal cancer in the early 1970’s. Little was understood about the disease at that time so he dedicated the last part of his life to initiating the largest survey of cancer ever conducted to date. Over 96% of the then 880 Million Chinese population was surveyed. After all the data was collected, a beautiful multi colored atlas was created which clearly displayed that cancer rates were centralized. “Counties with the highest rates of some cancers were more than 100 times greater than counties with the lowest rates of these cancers. These are truly remarkable figures. By way of comparison, we in the US see at most two to three times the cancer rates from one part of the country to another (4, Pg. 71)”. To analyze the findings and discover why cancer was so prominent in some regions and nonexistent in others, a world class team, including the top scientists in China and the world, were assembled. They knew that China was generally genetically homogonous so the cause of disease had to be environmental (but even if the population was more genetically diverse, only 2-3% of all cancers can be attributed to genes, according to Sir Richard Doll and Sir Richard Peto of the University of Oxford). Thus, the questions they sought to answer in their study were: “Why was cancer so high in come Chinese counties and not in others? Why were these differences so incredibly large? Why was overall cancer, in the aggregate, less common in China than in the US? (4, Pg. 72)” The Team administered questionaires and performed blood tests and urine samples, while measuring everything families ate over a three-day period, and analyzing food samples from marketplaces in the country. “Critical to the importance of the China Study was the nature of the diet consumed in rural china. It was a rare opportunity to study health related effects of a mostly plant-based diet. In America, 15-16% of our total calories comes from protein and upwards of 80% of this

amount comes from animal-based foods. But, in rural china, only 9-10% of total calories comes from protein and only 10% of the protein comes from animal-based foods.” In simple terms, the study revealed that those on a mostly plant-based diet were largely disease free and the healthiest while those who consumed the most animal protein and products had the highest levels of chronic disease including cancer. The team was struck by the realization that chronic disease is the rich man’s Achilles heel. In the wealthier areas of China, a more Western diet was adopted and disease was drastically more prominent as opposed to poorer rural china where the diet was almost exclusively plant-based. The team labeled Cancers including colon, lung, breast, leukemia, childhood brain, stomach, liver, diabetes, and coronary heart disease as “Diseases of Affluence due to Nutritional Extravagance”. They labeled pneumonia, intestinal obstruction, peptic ulcer, digestive disease, pulmonary tuberculosis, parasitic disease, rheumatic heart disease, metababolic and endocrine disease other than diabetes, and diseases associated with pregnancy as “Diseases of Poverty or Nutritional Inadequacy and Poor Sanitation. Cholesterol derived from the consumption of animal products was discovered to be the underlying cause of the ‘diseases of affluence’. “At the onset of the China Study, no one could or would have predicted that there would be a relationship between cholesterol and any of the disease rates. What a surprise we got! As blood cholesterol levels decreased from 170mg/dl to 90 mg/dl cancers of the liver, rectum, colon, male lung, female lung, childhood leukemia, adult leukemia, childhood brain, adult brain, stomach and esophagus (throat) decreased. As you can see, this is a sizable list. Most Americans know that if you have high cholesterol, you should worry about your heart, but they don’t know that you might want to worry about cancer as well. At the time of our study, the death rate of coronary heart disease was seventeen times higher among American men than rural Chinese men. The American death rate from breast cancer was five times higher than the rural Chinese rate (4, Pg. 78).” The foods associated with increased cholesterol levels are: all animal protein including meat, dairy, and eggs. Foods associated with decreased levels are: all plant-based foods and nutrients.” I can attest to this from my own personal experience. In 2008 I my diet heavily based on meat and dairy and as a result, my overall cholesterol was 5.7. In 2010, I reduced the animal products in my diet and my cholesterol level fell to 5.1 (mmol/L) but the highest acceptable level is 5 so I still had work to do (European measurements seem to differ from US). Afrikaners, descendants of Dutch settlers in South Africa, are the nation with the highest cholesterol levels in the world due to the consumption of copious amounts of meat, poultry, dairy and eggs, so I was not surprised by my high score. After being on a mainly Hunzakut diet (but also fish) for 1 ½ years my overall cholesterol count reduced to 4.3. See below two links (5). I am happy with this score but I will be reducing my fish intake to twice a month as a ‘treat’ because the Hunzakuts did not have fish in their diets. Interestingly, When I lowered my fish intake my cholesterol level stayed static at 4.3.

In is interesting to note that colon cancer rates are lower in black South Africans compared to white South Africans (Afrikaners are white South Africans). This is due to the lower intake of animal products amongst rural black South Africans: a mini China Study (6). Not only does Cholesterol clog and block arteries which causes many of the diseases listed above, it also causes the lymphatic system to become blocked and unable to function properly. The lymphatic system is responsible for cleaning the blood and transporting immune cells. When cholesterol causes fat to build up in and around cells, it is forced into the lymphatic system in an attempt to clean and break down the waste. This waste material can be too sticky and abundant for the system to handle and it can clog and malfunction causing illness in the lymph nodes (the strategic centers in the body that contain concentrations of white blood cells that kill bacteria and other harmful agents that pass through), the lymph system, and vitally in the blood. If the blood cannot be properly cleaned of waste material, the body suffers and life expectancy will be greatly reduced. As an example,“Dr Alexis Carrel kept pieces of a chicken heart alive in a saline solution which contained minerals in the same proportion as chicken blood for over 28 years! The secret was that he changed the solution every day. In other words, he disposed of the waste products daily. An ordinary chicken does not live anywhere near 28 years. This means that there is no limit in the number of cell divisions as long as the cell waste products are disposed of every day.” While the body does not have a blood waste collection system to completely remove waste and return perfect blood in its place, it does have the lymphatic system which will clean and purify the blood to maintain circulatory health which has a direct correlation to longevity. When the lymph is clogged by fatty waste from cholesterol buildup, it cannot function properly which will manifest as disease. Additionally, the lymphatic system has a pH score just like every other system and organ in the body. For optimum functioning, the lymph pH score should be 7.4 but the average Westerner’s is 6.2, thus a poor diet doubly hits the lymph. Already, it is not functioning properly because it is too acidic while also being required to purify and clean massive amounts of waste; more waste than the system was designed to process (7). Chapter 5 – Decline in Health Since the Dawn of Agriculture 12,000 years ago; the advent of agriculture, one of the most significant cultural shifts in human history, evokes positive notions of civilization, progress, and mental superiority yet researchers are only now realizing that the fossil records paint a much different picture. The most recent interpretation of fossil evidence demonstrates that our pre-agricultural ancestors were larger in bodily and brain stature, healthier, and significantly more disease free than our agriculturalist ancestors. In fact, the last 10,000 years has seen a 10% reduction in brain size and physique (1)! Traditionally, it was assumed that the change of lifestyle from foraging to farming was a great leap forward for the human race. Emory anthropologist George Armelagos refers to modern man as, “agricultural chauvinists”. It is widely believed that the production of food has advanced the human race but this is not necessarily the case. “Many people have this image of the rise of agriculture and the dawn of modern civilization, and they just assume that a more stable food source makes you healthier, but early agriculturalists experienced nutritional deficiencies and had a harder time adapting to stress, probably because they became dependent on particular food crops rather than having a more significantly diverse diet (2).” Researchers discovered that as populations settled, a more sedentary lifestyle was adopted which impacted upon physical health. A less active lifestyle lead to chronic health conditions in the body which can be seen in the fossil records by observing bone density and robusticity. An active lifestyle develops robust bones where as a more sedentary lifestyle develops a more gracile skeleton. Many studies have shown that man developed a less robust skeleton with a high instance of arthritis 10,000 years ago (3). This, however, is just the tip of the iceberg. Early agriculturalists were eating a less varied diet that lacked the nutrients found in their previous foraging diet. This mineral and vitamin deficiency compounded the problem of comparative inactivity. As an example, niacin, commonly known as B3, is one of eight B vitamins and it plays a vital role in the digestive process by converting carbohydrates into glucose, and metabolizing fats and proteins. It also keeps the nervous system working properly and helps the body produce sex and stress related hormones and improves circulation and cholesterol levels. Niacin is water soluble and regularly leaves the body via urine, hence the body needs to regularly replenish its stores of the vitamin through diet. Niacin is created in the liver from tryptophan, an amino acid, iron, and enzymes containing vitamin B6. Pellagra can result should these ingredients be lacking because of an insufficient diet. Symptoms include mental confusion, depression, vomiting, delusions, diarrhea, memory loss, inflamed mucus membranes, scaly skin, and death (4). The disease was particularly prevalent for early agriculturalists due to the fact that a reliance on the wheat grain leaves the consumer lacking in tryptophan, vitamin B6, and iron, the ingredients for producing niacin.

“Cereal proteins have poor nutritional value for monogastric animals, including humans, because of reduced content of essential amino acids such as lysine, tryptophan and threonine. Cereal proteins contain on an average about 2% lysine, which is less than one-half of the concentration recommended for human nutrition by the Food and Agriculture Organization (FOA) of the United Nations. It follows that healthy diets for humans and other mongastric animals must include alternate sources of lysine and tryptophan (5, Pg. 1308).” Importantly, ancient grains such as quinoa and amaranth are very high in lysine which cereals are lacking (6). The Dawn of Domesticated Wheat The mass transition from foraging to agriculture begs the question of why and how? Until recently, the reasons for the shift were unknown. Many speculated that it suddenly dawned on our ‘less intelligent’ ancestors that food could be grown and life could be easier however this was not the case. Ancient grains including buckwheat, millet, quinoa, amaranth, and einkorn wheat, the ancestor of our current wheat, were and continue to be very difficult to collect for a single meal let alone to harvest. The seed of these grasses are precariously attached to the seed head and it falls to the ground with the slightest breeze or touch once ripe and mature (7). In the BBC documentary, “How to Grow a Planet”, Professor Iain Stewart sites the city of Gobekli Tepe, Turkey, as the pioneer of agriculture. The city is 12,000 years old, three times older than the Egyptian pyramids, yet remarkably complex. Archaeologist, Klaus Schmidt, discovered the city and the incredible specimens of wheat that had been adapted specifically for human harvest. The unanswered question is whether the wheat was deliberately biologically engineered or whether it was an evolutionary adaptation. Should evolution be responsible, how did it happen so suddenly? If you look closely you can see the difference between the two types of wheat. In the original wild wheat, a special ridge of cells between the stalk and the seed breaks down as the plant ripens and then allows the seed to fall away. However, in the wheat with the genetic mutation, these cells remain as a solid band. This means that the new wheat never lets go of its seeds, which under normal circumstances would doom a plant as it could not reproduce. But, for one animal species (humans) this was very beneficial. Not only could people collect the grain easily, they could start to farm it. It was the dawn of domesticated wheat which first enabled man to farm 12,000 years ago, the people of Gobekli Tepe began to sustain themselves with bread made from the grass we call wheat. This marked the beginning of a new age and the turning point in world history (7)”.

While there is no current research available regarding the genetic mutation in ancient wheat which allowed the Gobekli Tepe people to farm and harvest, I believe that it was deliberately biologically engineered as opposed to an accidental mutation. The ancient city’s archaeological evidence suggests that they were highly advanced and it is likely that other concurrent civilizations were also well advanced. Recommended Grain Consumption Humans require far less grain in the diet than traditionally thought. We consume wheat at breakfast, wheat for lunch (sandwich bread), and wheat for dinner (pasta). The Hunzakuts ate very little grain and the majority of the grain they consumed comprised of ancient grains that were rotated seasonally. Gluten is the protein found in wheat that aggravates many people’s digestive tract. Those with a severe allergic reaction to the gluten protein are called coeliacs and Ireland has the highest celiac rate in the world. One in one hundred people are officially diagnosed while countless others suffer under the radar. Gluten is present in wheat, barley, oats (debatably), and rye. These grains should be avoided for coeliacs and non coeliacs as the protein causes a condition called ‘brain fog’. However it is not only coeliacs that have gluten issues. Research shows that gluten also causes issues with people in the autism spectrum (8). Other alternative grains include rice, corn, buckwheat, quinoa, and amaranth. Dr. Paul Enrich discovered that the brain has a barrier to keep certain products out. Called the blood brain barrier (BBB). However, both gluten and the casein in milk pass through this barrier. Gluten also takes a lot of energy for the body to digest and often leaves people feeling sluggish and heavy after its consumption. For this reason, many athletes avoid the grain. Milk “Milk; does a body good!” Or does it? In the United States, the dairy association launched a multi billion dollar add Advertisement campaign to keep people drinking milk however its health benefits are a cultural myth. Milk does contain calcium but it comes in a form that is not easily absorbed and digested by the body. Calcium in much greater quantities can be found in green vegetables and grasses which are also high in iron, magnesium, vitamin C, and many of the B vitamins. Great vegetable sources of calcium are celery, cauliflower, beans, avocado, okra, onions, chickpeas, and many more (9, Pg. 93). Dr Robert Young respond to questions of calcium with the following statement, “When we’re asked about where we get our calcium, we often answer with a question of our own: where does a cow get hers (9, Pg. 93)?”

Staffan Lindeberg says “Even if cows lived in some kind of bovine utopia and produced the perfect milk, let’s face it: it simply isn’t a human food. It is designed for baby cows, whose requirements are far different from those of humans. Milk is full of components of no use to us, and they must either be converted to use (wasting our body’s resources in the process) or eliminated as toxins. No other animal species drinks milk beyond infancy – and certainly not from a species outside their own!” There is also evidence that milk is a contributing factor in many diseases including ischaemic heart disease while aggravating insulin resistance and raising serum cholesterol (10). European countries that reduced their milk consumption in the late twentieth century greatly reduced their instance of mortality from myocardial infractions, commonly know as the heart attack. Like gluten, Milk has also been implicated as a cause of brain fog as the casein it contains can pass through the brain barrier. Milk Vs. Cheese Lactose is largely removed in the process of cheese making leaving in its place residual lactic acid. Countries such as France consume high amounts of cheese though they have a low risk of developing myocardial infraction. This anomaly in the study (cited above) is explained by the fact that they consume very little milk. My nutritionist explains that, “whey, which contains lactose and whey proteins, is removed during the process of making cheese. The curd (casein) then undergoes enzymatic degradation.” Dairy products such as yogurt, cottage cheese, kefir, feta cheese and goat cheese have been pre-digested and are good sources of essential amino acids according to Carla Hannaford in her book, Smart Moves. Fortunately there are alternatives to animal milk such as rice, quinoa milk, almond, hemp, coconut, and more. It is interesting to note that cows were ‘engineered’ from a single group of wild ox (now extinct) during the dawn of agriculture at roughly the same time that wheat was genetically altered. Chapter 6 – Minerals and Vitamins “Every ailment, every sickness, and disease can be traced to a mineral deficiency”- Lindus Pauling (two times recipient of the Nobel Prize). While meat creates an unfavorable acidic environment within the body causing high cholesterol and a host of diseases as a result, it is mineral and vitamin rich. When meat is removed from the diet, minerals and vitamins can become dangerously low which in itself is a major cause of disease. Therefore, a vegetarian diet must be carefully planned to ensure that the correct food is being eaten to provide the body with all the vital nutrients required. The longevity Nations of the World, ingest naturally through their diet much higher levels of minerals and vitamins than the recommended daily allowance (RDA). Hence, they are strangers to physical and mental disease and they live decades longer than those of us in the western world. “All of these disease-free societies violate our doctor recommended daily allowances (RDA’s) by massive amounts. For example, they consume 70 times the RDA of calcium, 22 times the RDA of magnesium, 18 times the RDA of potassium, 126 times the RDA of iron, 120 times the RDA of Fluoride, and so on. Also they consume “RDA unacceptable” amounts of trace minerals (1, Pg. 122)”. Unfortunately, doctors today refer to minerals and vitamins as being toxic if taken in excess of the RDA, perpetuating a grave misconception and ignoring the fact that prescription medications are by definition toxic to the body. Robert Barefoot and Carl Reich explain, “Toxicity is defined as “the ability of a substance to cause injury to living tissue once it reaches a susceptible site in or on the body”. Based on this definition, almost all drugs are toxic. However, when a doctor tells a patient that something is “toxic”, almost always, the patient believes that the doctor means that it can kill you. Unfortunately, the doctor’s common referral to “too much minerals and vitamins as toxic”, is more than often interpreted as meaning that they can be lethal. For example, most people have been told by their doctor that “too much vitamin A and too much vitamin D are toxic”. It is unfortunate, both because the doctor never tells you that the drugs he/she prescribes are indeed toxic by true definition, and because the minerals and vitamins that he is referring to are scientifically non-toxic when taken in reasonable amounts and what is too much? Nutritionists believe that the amounts that should be consumed are often 2 to 100 times the recommended daily allowance (RDA). Scientific testing has shown that such amounts are both safe and effective (1, Pg. 193)”. The key minerals are: Calcium, chromium, copper, fluoride (fluorine), iodine, iron, magnesium, manganese, molybdenum, phosphorus, potassium, selenium, sodium chloride, zinc. The key vitamins are:

Biotin, folic acid (folate), thiamin (B1), riboflavin (B2), niacin (B3), pantothenic acid, thiamin, carotene, vitamin A, vitamin B6, vitamin B12, vitamin C, vitamin D, vitamin E, vitamin K. Dr Joel Wallach, who was nominated for a Nobel Peace Prize in 1991, began his career as a farm hand before becoming a veterinarian, and finally a physician. During his youth while working on the family farm, he learned that livestock required a diet rich in minerals and vitamins to be healthy and disease free and he recalls wondering why his own diet did not include the same supplementation. While in veterinary school he realized that animals do not have a complex medical system like humans therefore, if a farmer wants to make money, he must understand how to prevent disease via nutrition. During his twelve years as a vet, he preformed 17,500 autopsies on over 454 species of animals including 3,000 humans and he discovered that, “Every animal and every human being who dies of ‘natural’ causes dies of a nutritional deficiency (2, Pg. 3)”. This realization prompted him to become a medical doctor in order to have a platform to present his amazingly simple solution to human health conditions. Wallach explains, “You need 90 nutrients in your diet everyday. You need 60 minerals, 16 vitamins, 12 essential amino acids or protein building-blocks, and you need 3 essential fatty acids. You need 90 nutrients in your daily diet, otherwise you are going to get a deficiency disease if you don’t have them in complete numbers and in optimal amounts (2 Pg. 6).” If one mineral or vitamin is deficient, the body will be unable to operate optimally, eventually succumbing to disease. To illustrate two minerals important in neuron function. Bananas are packed with potassium but a person could consume 50 bananas a day and still be sodium deficient. Potassium relies on sodium and sodium relies on potassium for proper neuron functioning, which will be discussed in chapter 20. When either is lacking, neuron function is diminished. Many minerals and vitamins are rendered useless in the body if the pH is not balanced. For instance, iodine, critical for thyroid function, cannot be assimilated if the body’s pH is not balanced (slightly alkaline). While Dr. Joel Wallach believes in supplementing the diet with deficient nutrients, I believe these nutrients should be consumed in the food we eat. Supplementation is problematic for two reasons; people believe that they can eat a less than nutritious diet should they use supplements, forgetting that unhealthy elements of a diet will prevent nutrients from being absorbed and assimilated. Secondly, supplements may contain the required amounts of minerals and vitamins but they are not presented to the body in their natural form, again, making absorption and assimilation difficult. The bottom line is that our diets must be nourishing and able to provide us with the nutrients necessary for optimal health without the aid of supplementation. The one exception is Vitamin D.

T Colin Campbell and Thomas M. Campbell II state in the china study, “Under optimal conditions, sunshine exposure alone can supply all the vitamin D that we need to produce the all-important 1, 25 D at the right time. How much is “enough”? If you know how much sunshine causes a slight redness of your skin, then one-forth of this amount, provided two or three times per week, is more than adequate to meet our vitamin D needs and store some in our liver and body fat. If your skin becomes slightly red after about thirty minutes in the sun, then ten minutes, three times per week will be enough exposure to get plenty of Vitamin D. When and if we don’t get enough sunshine, it may be helpful to consume vitamin D from our diets (3 Pg. 365).” Because of the lack of sunshine in Ireland, I had been supplementing my diet with one vitamin D3 tablet (1,000 IU) daily. When tested, my vitamin D level was 91 nmol/L. To identify if I could reach my target vitamin D3 levels through a diet rich in vitamin D containing foods, I ceased taking the supplement. After three months I had my levels tested again and was disappointed to find that they had dropped to 37 nmol/L. Therefore, in Ireland, it is necessary to supplement a nutritious diet with vitamin D. Chapter 19 will illuminate the method for designing a nutrition plan and critically, the simple methods for testing that the body is meeting its nutritional requirements. Chapter 7 – Salt Good Vs. Bad Salt has a bad rap. Doctors tell us to cut down, healthy people avoid it but why is it so bad? After all, salt is composed of minerals, essential minerals that the human body requires for optimum health. Throughout history, salt has been prized and coveted, traded around the globe, valued more than gold, and used as currency. Originally, Roman soldiers were paid with salt and the word ‘salary’ actually derives from salt (1). So what has changed? Salt in its natural form comes from the evaporation of sea, ocean, and salt water lake evaporation. It is also mined on terra firma where there are ancient salt water deposits. While salt’s composition varies slightly due to its source, it is generally composed of 55% chloride, 30% sodium, and 15% sulphate, magnesium, calcium, potassium, including up to 80 trace minerals. The human body requires these minerals and as discussed in the previous chapter, Minerals and Vitamins, sodium is necessary for the absorption of potassium as well as other minerals. The problem, however, arises when natural salt, which will be referred to as sea salt for clarity, is mined from underground deposits and chemically processed into common table salt. This process removes nearly all of the minerals, leaving only sodium chloride (NaCl). What remains is an unnatural chemical form of salt that the body recognizes as something completely foreign (2). The minerals are intentionally removed from salt because 90% of all salt mined is used for industrial purposes where concentrations of sodium chloride (NaCl) are required. NaCl is used in oil and gas exploration, drilling, road building, textile manufacturing and dyeing, rubber manufacturing, etc. (3). The majority of the remaining 10% is used in the food industry and lastly, for consumer consumption as table salt. While sea salt is a natural preservative, its mineral content will eventually begin to breakdown food, causing it to spoil or slightly alter the texture. For example, copper and iron increases decomposition while calcium toughens food. Also, magnesium and calcium increase sea salt’s absorbency so that it cakes from moisture retention which is undesirable for sale. In order to produce table salt, sea salt is treated through extreme heat, removing the minerals before highly toxic halogen additives are mixed back in. The remaining NaCl is added to almost every processed food product as a preservative. The next time you are in a grocery store, have a look at any packaged food item; it is almost guaranteed to contain salt. Dr. Med. Barbara Hendel in, Water & Salt, explains; “There is hardly a single ready-made or fast-food product which doesn’t contain sodium chloride, be it yogurt, bread, or ham. This has been a blessing to the logistics of the food industry because now they are able to extend the shelf life of many other products for up to one year. However, for the human body, this has been a fatal development (4, Pg. 111).” Mj Pangman and Melanie Evans in, Dancing with Water, explain, “Most Americans suffer from a lack of salt- even though they habitually consume copious amounts of refined salt (table salt). The deficit of natural salt with its balance of

minerals causes salt cravings which can never be satisfied by NaCl alone. The more refined salt they consume, the worse off they are. Most people in the Western world are literally poisoned with refined salt. The human body responds to the excessive consumption of refined salt by pulling water from inside the cells to dilute the sodium in the extracellular fluid. This force the body to retain water. The consumption of refined salt also contributes to high blood pressure, diabetes, and to a whole list of maladies. No wonder doctors often recommend a salt-free diet. But it is not a salt-free diet that is necessary – it is natural, unprocessed salt (5, Pg. 49).” When table salt is ingested, the body identifies it as a dangerous toxin because the heating process has removed the minerals, chemically altered the remaining sodium chloride, and added halogens. “By intensive advertising campaigns, the salt industry tries to convince the general public of the health advantages of halogens in salt, such as highly toxic iodine (in the form of iodide compound. Fluoride is another popular additive to table salt, an extremely reactive, greenishyellowish, piercingly sharp gas with stinging odour that also belongs to the group of halogens. Both are artificially added (4, Pg, 113).” Iodine is the most crucial mineral for thyroid function, as discussed in previous chapters, however, it is unrecognizable and highly toxic to the body when ingested in an artificial form. The same scenario applies to fluoride. While it is beneficial for our teeth, it is also poisonous. “The body is simply not capable of metabolizing artificially provided iodine and fluoride compounds (4, Pg. 113).” High quantities of iodine can naturally be found in sea herbs such as sea spaghetti, wakame, kombu, and others. A later chapter will discuss how to naturally meet and exceed mineral and vitamin requirements. The reason why table salt creates dehydration is because water is needed to ionize and eliminate the toxin. The water is drawn from cells in the process, resulting in cellular death. Cellular death results in premature aging, disease, and death. Metaphorically, table salt is burning our bodies (4). The redirection of the body’s fluids also is a contributing factor in constipation and the accumulation of toxins in the intestinal tract (6). The biological effect of table salt on the body is cause for major concern; so much so that The Center for Science in the Public Interest, a US lobbying group, is pushing the FDA (Food and Drug Administration) to change salt from an unregulated to a regulated substance (6). Different countries and institutions recommend a range of between 1.2 grams to 4 grams of salt per day. There are two major problems with this recommendation. Firstly, they are recommending what they deem as a safe amount of a toxic substance, table salt, and secondly, 90% of the average Westerner’s diet is comprised of packaged processed food and it is impossible to know how much salt is added. Yet, as previously stated, most

Westerners are suffering from a lack of sodium despite the high quantities of table salt consumption. When the body is lacking sodium (the correct form), blood pressure is affected as well as nerve and muscle function. “When the amount of sodium in fluids outside cells drops, water moves into the cells to balance the levels. This causes the cells to swell with too much water. Although most cells can handle this swelling, brain cells cannot, because the skull bones confine them. Brain swelling causes most of the symptoms of hyponatremia. Hyponatremia is the most common electrolyte disorder in the United States. Common symptoms include: abnormal mental status, convulsions, fatigue, headache, irritability, loss of appetite, muscle spasms or cramps, nausea, restlessness, and vomiting (7).” The Hunzakuts did not have salt in their diet, however, research has shown that they far exceeded all the current FDA requirements of minerals and vitamins therefore, they did not require the substance. Today in the West, almost everyone is deficient in minerals and vitamins so natural salt in small doses is beneficial to our diets. ‘Good’ salt includes sea salt, Celtic salt, and Himalayan salt (though I do not think it necessary to dig up the Himalayas as we have copious amounts of sea and Celtic salt available). 1. http://en.wikipedia.org/wiki/salary 2. Chapter 8 – Protein, Carbohydrates, Fat, and Calories Protein Proteins are large molecules comprised of combinations of different amino acids. There are 23 different types of amino acids, 15 of which can be produced by the body. The remaining 8, known as essential amino acids, must be obtained through protein rich food (1). It is commonly believed that animal proteins are far superior to plant based proteins however there is little research to qualify this, “High-protein diets have beneficial effects on body fat regulation, but the difference in effect of various types of protein is not known. Thus, this review examines whether proteins from different sources have similar effects on body composition and energy balance. Animal proteins, especially those from dairy, seem to support better muscle protein synthesis than plant proteins. This could potentially enhance energy expenditure, but no conclusion can be drawn from the scant evidence. Some studies, but not all, demonstrate the higher satiating effect of whey and fish proteins than other protein sources. The evidence from intervention studies comparing the effects of different protein sources on body weight is inconclusive. However, body composition was not evaluated precisely in these studies and the literature is still incomplete (e.g. comparative data are missing for legumes and nuts). Protein intake enhances energy expenditure, satiety and fat loss, but there is no clear evidence to indicate whether there is a difference in the effect dependent on the source of the protein, i.e. from animal or plant-based foods (2).” Chapter 18 will discuss how to provide the body with the correct protein intake through plant-based sources. It is possible, despite contrary belief, to meet minimum protein requirements on a plant based diet without supplementation. There are products available such as pea, hemp, and rice proteins as well as chia seeds that will add additional protein to the diet. Soya is also a good protein source but I would urge against any soybean product. Soya is implicated in uric acid production. Uric acid is what causes gout. Additionally, there is a possible link between soya and nut allergies. The vegetarian diet is often criticized for its lack of protein but there is no conclusive evidence on how much protein we actually need. The popular belief is that humans require a great deal of protein to be healthy but I believe we require far less. In infancy, the rapidly developing human body requires nutritionally packed breast milk for such tremendous growth, yet, breast milk only contains 1% protein. This indicates to me that we don’t require huge amounts of protein if at the body's most critical stage of development, only 1% protein is being consumed. Carbohydrates A carbohydrate is an organic compound, “consisting of carbon, hydrogen, and oxygen. Examples include sugar, starch, cellulose and gums (3).” The Glycemic Index measures how rabidly carbohydrates in food turn into sugar. Glycemicindex.com says, “What is the Glycemic Index? Not all carbohydrate foods are created equal, in fact they behave quite differently in our bodies. The glycemic index or GI

describes this difference by ranking carbohydrates according to their effect on our blood glucose levels. Choosing low GI carbs - the ones that produce only small fluctuations in our blood glucose and insulin levels – is the secret to long-term health, reducing your risk of heart disease and diabetes and is the key to sustainable weight loss (4).” Most vegetables have a low GI of below 15 while fruits range between 15 – 60 GI. Both avocados and grapefruits have low GI score, contributing to their super food credentials. Individual foods should generally not exceed a GI of 50 though this score does not take portion size into account. Conversely, some vegetables like carrots have a high GI score but in reality, one would need to eat a very large portion of carrots to have a dramatic effect on your blood sugar balance. Authors of the The Anti-Aging Plan go on to say, “Total average sugar intake has increased twenty-five fold during the past two hundred years. Sugar is the number one preservative used in today’s processed foods. This is energy-rich but nutrient poor consumption, exactly the reverse of healthy eating…For many reasons, consumption of simple, refined sugars is bad for you. Refined sugars like sucrose (the one in your sugar bowl) tend to increase blood cholesterol. Cholesterol not only comes from the diet but also is synthesized by our liver, and refined sugar increases this internal synthesis; also, it lowers HDL. So if you think you have beaten the cholesterol problem by eating low fat foods, you may well be mistaken…One of the major modern theories of aging, the glycation theory, concern excess sugar in the diet. Excess blood sugar slowly binds to proteins in our bodies, permanently altering their molecular structure. The proteins gradually turn yellow-brown, and their function is impaired. This process is called glycation (5).” This is why we must stop our children from eating sweets and other sugary foods and substances like soda and chocolate. Even dark chocolate contains dairy (milk) and refined sugar. Many people notice a significant positive improvement in their health when they remove refined sugar. Paul Congdon of positivelife.ie recently mentioned to me that he removed refined sugar from his diet, replacing it with natural sugar, glucose, from fruit, and noticed a significant improvement (an estimated 25%) in his athletic performance. In one of his articles on why essential fatty acids are so important for your health he says, “There are several reasons why you need fat in your diet….If you eat healthy fat it can be beneficial, pH neutral, or even alkalizing source of calories, or a way to make you feel full and to give you a fuel source to make energy. On top of that, there are certain body

structures that are made of fat (or to give them their biological name lipids). The membranes that form every cell in your body are made from fats. The myelin sheaths that act as insulators around your nerves are made from fats. Your skin is primarily made of fat and messenger substances in your body have a lipid component to them. Add to that the fact that grey matter of your brain mostly consists of fats and suddenly you may start to feel and urge to start drinking fat…!(6).” However, not all fat is created equal. While essential fatty acids are necessary, saturated fat and trans fat can be extremely hazardous in the body. Below is a breakdown of the different forms of fats. Unsaturated fat On a molecular level, fats are distinguished by their chains of carbon (C), hydrogen (H), and Oxygen (O) atoms. Monounsaturated fats have one double bond and polyunsaturated fats have more than one double bond. Both monounsaturated and polyunsaturated fats contain omega 3, 6, and 9 derived mostly from plant sources. Also, they are both unstable when heated and easily turn into trans fats. Monounsaturated fats have a slightly higher smoke point (the point at which the oil turns rancid and becomes a trans fat) than polyunsaturated fats but neither are ideal for cooking. Should either be used in the oven, keep the heat low. For sautéing, the heat should also not be high and water should be added. Seeds and nuts should be eaten raw and untoasted/roasted. Monounsaturated fats include: Olive oil, canola oil (rapeseed), sunflower oil, canola oil, peanuts, peanut oil, sesame oil, avocados , avocado oil. Nuts: cashews, almonds, macadamia, pecans, hazelnuts Polyunsaturated fats include: Corn oil, soybean oil, walnuts, safflower, sunflower, sesame, pumpkin, flax seeds, tofu, soymilk. Fatty fish: salmon, tuna, herring, sardines, trout, mackerel (7). Please note that this is a semi comprehensive list. I am not recommending all of these fats and again, I would urge against any soybean product including tofu. While it is good to know which fats are monounsaturated and polyunsaturated, it is much more important to understand omega intake and which fats contain the essentials fatty acids. Essential fatty acids must be obtained through food because the body cannot synthesize them (omega 9 is not considered to be essential because it can be made by the body from both unsat and sat). While essential fatty acids are good for the body they too are not created equal. Omega-3’s Omega 3’s are anti-inflammatory which are crucially important for optimal health because they prevent diseases that are inflammatory in nature (most degenerative diseases). Also,

omega 3’s are, “essential to the brain, impacting behavior and cognitive function, and are especially necessary during fetal development. University of Maryland Medical Center lists further benefits in the following link: (http://www.sparkpeople.com/resource/nutrition_articles.asp?id=873) To obtain omega 3’s, I eat flaxseed and use flaxseed oil. Many people supplement with fish or krill oil but our oceans are in great jeopardy. Krill, for example, a small shrimp like organism, is a main food source for most marine species in the Southern Ocean including whales, seals, penguins, albatrosses and others. Krill supplies are in peril because of ocean temperature fluxuations and over fishing (8). There are omega 3 supplements derived from deep cold water fish that are caught for food and the oil is a secondary product. However, there are vegan and vegetarian suitable oil combinations that provide more than enough omega 3. Also, the Hunzakuts did not eat fish. Omega 3 sources include: Flaxseed, walnuts, hempseed, cold deep sea fish, salmon, sardines, mackerel, herring Omega 6 The problem in the Western diet is that too much omega 6 is consumed. The ratio of omega 6 to 3 should be between 2:1 and 4:1 but the ratio in most Americans diets is between 10:1 and 30:1 (9). This is because the common inexpensive cooking oils used by restaurants, the fast food industry, and processed food companies are all omega 6 rich and include, sunflower, soybean, canola (rapeseed), and corn. Also, meat, dairy, and eggs all contain omega 6. When omega 6 is overabundant in the body it creates inflammation which leads to many chronic diseases such as arthritis, cardiovascular disease, autoimmune diseases, Alzheimer’s, heart disease, etc (10). Conversely, omega 3’s are anti-inflammatory and cool the metaphorical fire of the omega 6’s. Many supplements contain a balance of omega 3, 6, and 9 in their proper balance. This would be fine if omegas were not being consumed in the diet already. In reality, most people do not need to supplement omega 6, especially those who eat out regularly. The same is true for omega 9. However, I use oils that contain both omega 6 and 9 because I am not acquiring them through processed food. I consume apricot kernel oil for omega 6 and 9 as well as rapeseed oil and olive oil. When I eat out or get a take away as a weekend treat, I inquire about the unknown ingredients like the oils used for cooking. At home I cook with olive or rapeseed oil at low heat but restaurants rarely use either due to cost. The best one can do when eating out is to make sure that restaurants cook with vegetable oils or ask them to cook your food with olive oil at a low temperature. I used to treat myself with fish and chips from a local chipper on a Friday but I discovered that all chippers use animal based fats but, even if they used unsaturated oils, the cooking temperature would be high enough to transform them into trans fats.

Omega 6 sources include: Olive oil, safflower oil, rapeseed oil, wheat germ oil, corn oil, walnut oil, cottonseed oil, soybean oil, sunflower oil. Please note that soybean oil is not recommended for reasons discussed earlier, nor is wheat germ oil because of the presence of the gluten protein. Saturated fat Saturated fats do not have a single double or multiple double bounds between atoms like unsaturated fats. Saturated fats are mostly found in meat and dairy products (including eggs) as well as some vegetable oils such as coconut, palm, and palm kernel oil. Saturated fats are solid at room temperature and are not as easily susceptible to heat damage like unsaturated fats. Thus, some prefer to cook with saturated fats. However, saturated fats directly contribute to LDL (bad cholesterol) and even inhibit the body’s ability to use HDL (good cholesterol). Coconut oil has been the subject of recent debate. Some believe it to be a super food but even if its health claims are legitimate, it is still a saturated fat and will have a negative impact on the body if over consumed. However, the saturated fats in coconut are short in length, rendering them easily available for the body to use as an energy source so it is good for athletes and those who are critically ill. In chapter 17 we will provide details of a test so that with your nutritionist assistance you can over time make sure you get your fatty acids in the correct ratio’s Trans fats Trans fats are unsaturated fats that have been hydrogenated, meaning their double bonds have been removed so they act like saturated fats; they are less prone to damage and therefore are used to extend the shelf life of baked goods. Trans fats lower HDL (good cholesterol) and raise LDL (bad cholesterol).Food manufacturers in the US are now required to list trans fat on food labels that had previously been disguised as hydrogenated oils. Calories “Technically, 1 calorie is the amount of energy required to raise the temperature of 1 gram of water 1 degree. The amount of calories in a diet refers to how much energy the diet can provide for the body (10 ).” Quite simply, the body requires so many calories a day to function. This number depends on gender, body size, and fitness level. If the amount of calories a person’s body requires per day is exceeded, the excess calories will be stored as fat. While this is important, there is no need to calorie count on my proposed nutrition plan.

Chapter 9 – Water “On average, the body of an adult human being contains 60% water. Most of the water in the human body is contained inside our cells (1).” “Over a hundred years ago, French scientist Rene Quinton (1866-1925) became interested in the similarity between the oceanic environment and the environment within our bodies. His research verified the striking similarity between the composition of the ocean and the composition of our own internal fluids. Quinton’s years of investigation proved that an organism’s survival depends on maintaining its own internal ocean. In fact, Quinton confirmed that one of the prerequisites for an evolving species was that it take the ocean with it (2, Pg. 41).” The ocean’s water is vigorously maintained through its complex eco system and the dependency upon temperature. Our oceans are exhibiting symptoms of sickness because their balance has been interrupted by human activity; over fishing, pollution, climate change, etc. The waters of the human body mirror those of the earth’s great oceans in their salinity and mineral content as well as in the delicate equilibrium that must be maintained at all times for optimal health. Within the body, water is responsible for the regulation of metabolism, circulation, digestion, and nerve communication. And crucially, it is the fluid giving every cell life. It is also the force that nurtures the fetus (amniotic fluid). Water is truly the life force of the body yet its quality, purity, and composition are rarely considered. One of the most important functions of water in the body is to bathe the cells. This fluid, called the extracellular fluid, connects every cell in the body enabling communication and nutrient flow. “Rene Quinton demonstrated that when the quality of our internal ocean is maintained or restored to its original marine composition, every cell, every organ, and every tissue functions as it was designed (2, Pg. 43).” Interestingly, Rene Quinton was an opponent of Pasteur and Germ Theory. In order to restore the body’s inner ocean, Quinton used an infusion of marine plasma known today as Quinton Marine Plasma (QMP). In the early 1900’s Quinton and his dedicated team of doctors treated thousands of patients with mixed maladies using QMP. Research shows that they had a success rate of 95%. QMP is not simply seawater. “It was harvested from a specific plankton bloom- a vortex that gathered nutrients from the ocean floor and mixed them with other nutritional elements introduced by plankton in the spring. QMP (still harvested today) is a living matrix containing genetic codes that span billions of years. Extensive research has determined that it contains the entire periodic table of elements as well as a long list of supporting nutrients including, DNA, RNA, vitamins, enzymes, proteins, fatty acids, organic acids and many biological and biochemical factors not yet defined by science (2, Pg. 44).

Referring back to chapter 4, the necessity of an optimally functioning lymphatic system was discussed and illustrated by the chicken heart that was kept alive for over thirty years in a cleaned saline solution by Nobel Prize laureate, Dr. Alexis Carrel. While Carrel never revealed the content of his life-giving saline solution, it is speculated that he used QMP (he was very familiar with Quinton’s research). Carrel understood that cells function properly when the extracellular fluid it optimally maintained. He says, “The cell is immortal. It is merely the fluid in which it floats that degenerates (2, Pg. 43).” The vortex that thrusts life to the ocean’s surface during the plankton boom from which QMP is harvested is essential for life on planet earth, “Oceanic vortices… are typically associated with large concentrations of tiny marine life. Krill, (a type of zooplankton) surge to the surface at dusk to feed on phytoplankton. This surge causes turbulence up to four times the normal magnitude and fosters the exchange of nutrients in the ocean. The water in these vortices has a living quality that is greater than the sum of its known parts. Whales, dolphins, and other sea life travel thousands of miles to feed during plankton blooms each spring (2, Pg. 44).” The vortex, which is an upward levitational force, is also responsible for salmon’s ability to travel up river to spawn and the trout’s incredible ability to remain stationary against powerful currents. On land the vortex is demonstrated in the tornado. The upward levitational vortex responsible for the tremendous force of the tornado allows it to literally uproot buildings in an instant and cause mass devastation in the blink of an eye (2, Pg. 30). So, how does this apply to the internal oceans of the human body?

When water is structured via a vortex, it is infused with energy that bathes the body’s cells in exceptional fluid. The molecular Water Environment Theory, presented by Dr. Mu Shik Jhon in 1986, identifies the lack of structured water in cells, tissue, and organs to be the culprit of aging. Jhon identified structured water as the solution to decrease the aging process, prevent disease, and increase vitality (2, Pg. 213). “Structured water is more efficient water. Consuming it can improve hydration, facilitate more effective detoxification, enhance, nutrient absorption, and improve cellular

communication. It can support every process that goes on in your body; nothing happens without water (2, Pg. 213-214).” The difficulty with the water that we drink is that it is burdened by toxins and contaminants including heavy metals, pharmaceutical residue, pesticides, microbes, and halogens like fluoride. Additionally, its natural structure is greatly depleted when it is forced to travel through straight pipes. Thus, even when one believes that they are consuming an adequate amount of water to maintain hydration, the water may be contaminated and flat, or dead, on an energetic level. Referring to the ‘energy’ of water may confuse or turn some away, however, it is important to keep in mind that water is one of the most powerful conductors on earth. It carries a tremendous amount of information even though it is most often considered simply empty fluid. MJ Pangman describes the affect of flat or dead water on the body, “Most of the drinking water on the Earth today is considered flat from a vibrational perspective. It is considered dead and it is not absorbed well. In order to get flat water in the cell, the body must revive it by drawing on its own energy reserves. When we are young, our bodies have enough extra energy to revive energetically-poor water. But as we age, our energy level diminishes and it is more difficult. No wonder the thirst mechanism declines (2, Pg. 215).” Structured energized water (Vortex water) is crucial for hydration but it is also necessary for detoxification. When the body is dehydrated from a lack of water or a lack of the correct water, toxins build up causing disease, free radical damage, and premature aging. However, water that has been stripped of its energy can be reenergized. MJ Pangman and Melanie Evans describe many systems and techniques for structuring and energizing household water. Through my research, however, I have found that the most cost effective and straight forward methods are the Photonic water home/business unit or the Vitalizer Plus. The Photonic unit is superior in that it is attached to the main water supply and therefore will energize all the water entering the home. It costs upwards of 1,500 euros. While this is expensive, it costs less than most home filtration systems. The Vitalizer is a countertop unit that contains a trace mineral cartridge. It costs about 350 euros. This is a more practical option for those who are living in rented accommodation. It is helpful when purchasing the Vitalizer to order at least three extra mineral cartridges as they need to be replaced every six months to one year depending on use. The negative is that hte Vitalizer uses electrical power.

There are less expensive water structuring/energizing systems that are manually operated and use magnetic technology. Please see the link below. http://www.vibrantvitalwater.com/index_vitalwater.htm There are testing methods to find out what system provides the most powerful energized water, however, we understand that the methods for testing are very expensive. In the future, these testing systems will no doubt be easier, more cost effective, and accessible. The above systems apply the power of the vortex, spinning the water to structure/energize it, replicating its optimal natural state. This water is not only beneficial for humans, it is also wonderful for our pets and plants. Gardens will thrive if watered with energized/structured water. When used on the vegetable garden, the harvest will be more abundant, healthy, and packed with minerals. Under the “organic section” later on I will include a clip to show you one can measure the extra minerals it produces in food. With the Vitalizer or Duet, the water is spiraled for either 9, 18, or 27 minutes within a magnetic field. It is advisable to begin slowly, starting with a 9 minute spin and gradually working up to 27 minutes. When the body is not used to the properties and power of energized/structured water, it can be overwhelmed by too much at the onset. Also, medicine must not be used with structured/energized/vortex water because it may allow a more potent dose to enter the cells (2, Pg. 218). I own the Vitilizer Plus and I am completely confident in its remarkable power to harness the vortex in order to energize/structure the water. However, I also wanted to investigate the composition of my Dublin tap water. Depending on you location, the companies that perform the testing may vary but I employed Fritz Scientific (www.fitzsci.ie) . They normal test aluminum, clostridia, colour, conductivity, E coli, iron, nitrate, pH, hardness, turbidity, and manganese. I also asked them to test for chloride, phosphate, fluoride, and calcium. Interestingly, two minerals were above European PVL maximum limits. Therefore, the Dublin tap water failed on two minerals. Out of curiosity, I bought an average Brita water filter and tested my water after filtering. It reduced the levels of the two over abundant minerals. After testing the Brita, I tested the Vitalizer Plus and it also removed the excess minerals. MJ Pangman recommends that prior to structuring/energizing water, tap water should be filtered or sent through reverse osmosis or distillation processes. This water is energetically dead but it is a clean, blank canvas that can then be structured/energized with the Vitalizer/ Duet or through other methods. Because I am in rented accommodation, I do not have the ability to install a reverse osmosis filtration system and I do not buy distilled water so I energize Dublin water straight from the tap. However, “Those who regularly drink distilled or reverse osmosis water without remineralizing and restructuring it can become depleted of the elements necessary to activate physiological processes. Without minerals, water loses the ability to participate in the exchange of energy (2, Pg. 9).” Another water energizing system that has become popular in many health circles is the water ionizer. It uses electrolysis to produce temporarily structured water but the force is too great

and it disrupts that electromagnetic field around the water molecules. The result is unstable water that looses its structure rapidly after being removed from the electrical field. These findings have been studied and published by the Journal of the Japanese Society for Food Science and Technology (1, Pg. 59). The other, more dangerous, consequence of using a water ionizer is the imbalance it produces in the body. MJ Pangman and Melanie Evans explain, “Water ionizers use electrolysis to produce two streams of water- acidic and alkaline. Alkaline ionized water carries the positively-charged mineral ions while acidic water ends up with the negatively-charged ions. Nowhere in nature does this happen- and no plant or animal organism is set up to utilize only the positively- or only the negatively-charged ions on a regular basis. When the energy used during any process destroys water’s balance, there is a negative effect on its life force and a potentially negative outcome for the life form that consumes it. Conversely, water that is processed using methods similar to those found in nature results in balance and a positive impact on living organisms (2, Pg. 59-60). “ The entire body thrives in a balanced environment. Water is naturally balanced and the body needs both the negative acidic and positive alkaline ions because water inside the cell is slightly acidic while the extracellular water is slightly alkaline. “This creates an electrical gradient that helps draw water into the cell (2, Pg. 75).” Poor diet, stress and disease compromise this gradient a well as the water ionizer. While using a water ionizer can produce some positive results and relief from disease symptoms in the short term, it is damaging if used frequently for long periods of time; it is simply not nature’s way. In Japan water ionizers are used extensively in hospitals to try and increase patients alkalinity when acidity has contributed to illness or when the treatment of illness/disease causes acidosis (Acidosis is a condition in which there is too much acid in the body fluids. It is the opposite of alkalosis (a condition in which there is too much base in the body fluids) (3). To further understand the imbalance of ionizers, and the natural balance of water in nature, the rH2 scale can be examined. rH2, (relative hydrogen), is a value scale applied to water. For optimal health, the rH2 of water should be in the range of 20 – 24. This was concluded by Dr. Claude Vincent, professor and chief hydrologist in France, many years ago. He found a correlation between rH2 and health while visiting villages whose inhabitants were consistently healthy and villages whose inhabitants were consistently unwell. In the healthy villages, the rH2 of their water was 22. In the unhealthy villages the rH2 of their water was of 42 (4). For people interested in testing the rH2 of their water, a meter must be purchased and a formula followed. The Hanna meter Hl98121 reads the ORP (oxidation-reduction potential) and pH of the water. Use the figures to fill in the following equation: rH2=((ORP + 200) / 30) + (2pH)

If for instance you set an ionizer at -600 ORP with a pH of 9 this produces a rH2 of 4.7 which will be harmful in the long run. Even if you set it at -300 ORP it is still 14.67 rH2 that is too far under 20 – 24 rH2. After using the Vilalizer Plus, Dublin tap water without filtering scored 26rH2. Determining the amount of water the human body requires is another consideration. The World Health Organization recommends two liters a day for an adult of 60 kg (9.45 stone). The US food and Nutrition Board for recommends 3.71 liters daily for men and 2.71 liters daily for women while Dr. Robert Young, author of The pH Miracle, believes an adult should consume 4 liters a day. The figures continue to vary depending but diet and climate must be taken into consideration. In Ireland, the body probably requires less water because it is wet and cool. I find it difficult to drink more than one liter a day here. A hot dry climate would necessitate greater water consumption. Also, on a plant-based diet, there is a great amount of water within the food itself. Take for instance spinach. It is upwards of 70% water. The most important thing regarding water intake is drink before thirst sets in. Once you are thirsty, the body is already in the throws of dehydration. Every body’s requirements are different so each person must be observant of their body’s unique needs. And, critically, the right structured/energized water must be consumed. I would highly recommend further reading on water. This chapter is a highlight of important information, though there is a wealth of knowledge about water that is compelling, interesting, and, dare I say, life changing; it was for me at least. Please explore the books listed in the bibliography, especially, Dancing with Water by MJ Pangman and Melanie Evans. Chapter 10 – Oxidation and antioxidants – ORAC score Antioxidants: “Their story began in the 1940s when a physician-chemist named Denham Harman set out to determine the biochemical explanation for aging. As a young man, he had worked in the lubricating department of Shell—a place where the problems of a chemical spoilage caused by “free radicals” were well-known. By the mid-50s Harman hit upon the theory that the same free radicals that were cutting into petroleum industry profits could also simply and completely explain the phenomenon of aging. Better yet, he said, their effects could be ameliorated by something called antioxidants (1).” Oxidation To understand antioxidants, oxidation must first be examined. Oxygen causes oxidation and oxidation is nature’s method of decomposition. Within the human body, oxidation is responsible for breaking down food into its byproducts that sustain life and give energy. Technically, oxidation is defined as, “The interaction between oxygen molecules and all the different substances they may contact, from metal to living tissue. Technically, however, with the discovery of electrons, oxidation came to be more precisely defined as the loss of at least one electron when two or more substances interact. Those substances may or may not include oxygen. (Incidentally, the opposite of oxidation is reduction — the addition of at least one electron when substances come into contact with each other (2).” Examples of oxidation can be seen on metal as it rusts or on an apple that turns brown after being sliced open. In the human body, oxidation causes the ageing process and contributes to many, if not all, degenerative diseases. Thus, while oxygen is the necessary agent for all life, it also takes life away by leaving reactive molecules in its wake called free radicals in its wake called oxygen radicals, reactive oxygen species, or active oxygen. “Oxygen radicals (oxidants) are like the exhaust from a car. They are by-products of a fuelburning engine. Oxygen radicals are the most aggressive free radicals. It has been estimated that two percent of the oxygen we breathe eventually produces oxygen radicals. This may not seem like a lot until you consider how many times every minute you breathe. By the end of the day, this amount produces over 57,000 cubic centimeters of oxygen radicals. Left unbalanced, oxygen radicals destroy cell membranes, deactivate enzymes, and damage DNA (3, Pg. 68).” Antioxidant The body’s natural antidote to oxygen and other radicals is the antioxidant. Technically, the antioxidant is defined as: A molecule capable of inhibiting the oxidation of other molecules. Oxidation is a chemical reaction that transfers electrons from a substance to an oxidizing agent oxidation reactions can produce free radicals. In turn, these radicals can start chain reactions….Antioxidants terminate these chain reactions by removing free radical intermediates and inhibit other oxidation reactions (4 wikipedia).”

Thus, diets rich in fruits and vegetables protect against oxidative “stress” because they contain naturally high levels of antioxidants. The goji berry, for example, is very high in antioxidants. It is considered a superfood because it is packed with nutrients and powerful antioxidants: “18 amino acids, more beta carotene than carrot, more iron than spinach, 21 trace minerals, 500 times more vitamin C than oranges, 13% protein more than whole wheat, and loaded with other vitamins such as B1, B6, and E (5).” The ORAC score To determine how high the antioxidant levels are in food, the ORAC score can be consulted. ORAC is an acronym for, “Oxygen Radical Absorbance Capacity (6)”. This is a test tube test which scores the levels of antioxidants in food. The following link is an ORAC score website. Note how high goji berries score. Other great sources of antioxidants are garlic, spinach, yellow squash, brussel sprouts, alfalfa sprouts, broccoli, and beets. http://www.sparkpeople.com/myspark/team_messageboard_thread.asp?board=0x9538x17024 678 Red wine is high in antioxidants. This is confirmed by Ray Winston in “The Human Body”. Neuroscientist Sam Wang, describes the benefits of red wine in his compelling and extensive lecture on the human brain. I believe this is because of its high antioxidant levels. However, red wine in excess has the opposite affect and therefore must be consumed in moderation for a positive impact. The ORAC score of my diet comes to approximately 36,000; way above the 5,000 unit target recommended by some. My nutritionist stated that 30,000 is a good target though she cannot find a reliable source for information of ORAC targets in any medical/nutritional journals. There is no current research that an ORAC score can be too high as antioxidants help to quench inflammation which contributes to most disease. The antioxidant controversy. Other theories suggest that it is not the antioxidant levels in food that necessarily contribute to reducing oxygen radical damage. There is speculation that other nutrients found in food may do more to counterbalance oxidation. Also antioxidant supplements and related products are a multi-billion dollar/euro industry. However, clinical research has yet to verify that antioxidant supplementation has any beneficial impact on the body. In fact, studies on mice have shown that there is no difference between the control group and the group supplemented with antioxidants. The reason for this could be because antioxidant supplements are not in the correct format for the body to use. Antioxidants must enter the body through food in order to be absorbed and used just as minerals and vitamins must be.

Pangman in Dancing with Water suggests that the quality of our water is significant in preventing free radical damage. She explains that in the human body, hydrogen is a counterbalancing reductant. In a healthy body, hydrogen is prevalent and in adequate supply to prevent free radicals from running rampant. However, a body plagued by poor diet, stress, pollution and electromagnetic interference all deplete hydrogen stores leaving an abundance of oxygen radicals. “In many ways, hydrogen is a form of energy currency. It supplies not only electrons but also protons. In the mitochondria, both are required for the production of ATP- the body’s primary source of energy. Hydrogen supplies electrons in the electron transport chain, otherwise known as oxidative phosphorylation. Hydrogen also supplies protons for the proton pump in the counterbalancing reductive cycle. Thus, the body’s major source of energy depends on proton and electrons supplied by hydrogen (Pangman).” Referring back to chapter 9, water, specifically structured energized water, is the best source of hydrogen in nature. Salt water creates further balance providing a complex balance of oxidants and reductants. This balance is perfectly struck in the ocean and in QMP (Quentin Marine Plasma- refer to chapter 9). “The balanced mixture of oxidants and reductants comprises a blend of redox signaling molecules also found naturally in the healthy human body. Ongoing research reveals the pivotal role that signaling molecules play in maintaining oxidative balance and in renewing genetic potential (3, Pg. 71).” While it is clear that oxidation/free radical damage causes the aging process and contributes to degenerative disease, the science is uncertain regarding antioxidant supplementation to counter the radical’s damaging affect. What is clear, however, is that a diet rich in fruits and vegetables along with structured/energized water will inhibit free radical damage thereby slowing the aging process and preventing disease. Below is my dry blood sample from July 2011. The sample was taken when I was on an animal based diet. The white is the free radical damage that needs to be eliminated. There should be more pink or red areas present.

Chapter 11 – Allergies and Food Intolerances “One man’s meat is another man’s poison (1 Pg. 109)” Allergy vs. Intolerance The words allergy and intolerance are often used interchangeably but specialists now distinguish between the two. An allergy displays itself immediately and is a reaction of the immune system, specifically the antibody IgE (Immunoglobulin E). An offending substance (food, or environmental allergen) will attach itself to the IgE antibody and as a result, histamines and other chemicals are released which produce the allergy symptoms (1 Pg. 113). Typical allergy reactions are, “Skin rashes, hayfever, rhinitis, sinusitis, asthma, eczema, and severe reactions to, for example, shellfish or peanuts, causing immediate gastrointestinal upsets or swelling of the face or throat. All these reactions are immediate, severe inflammatory reactions (1, Pg. 114).” My three children, for instance, have severe nut allergies which can result in anaphylactic shock. Allergies are commonly tested using the skin prick method. Concentrated amounts of suspected allergens are placed on the skin (typically the arm but also the back) and the skin is pricked so that the allergen comes in direct contact with skin mast cells. Mast cells, “hold the body’s memory for allergy, in other words, the cells recognize what you are allergic to (2 Pg. 86).” Intolerances are delayed allergic reactions and are triggered by the IgG (Immunoglobulin G) antibody molecule rather than the IgE antibody molecule that the allergen is based on. Intolerances are more common than the medical community had previously believed and interestingly, it is the psychiatry community that is discovering the most compelling research linking food intolerances to not only physical conditions but also to a spectrum of mental conditions as well. William Philpot and Dwight Kalita in, Brain Allergies, explains, “Orthomolecular-ecologic psychiatrists firmly believe that foods, chemicals, and inhalants in the environment do indeed affect human behaviour. In fact, they now understand that foods, chemicals, and inhalants can change the chemistry of our brain so dramatically that normal behavior is radically altered the end result of such a radical alteration of the brain’s chemistry is called mental and emotional illness (3 Preface XIV).” Orthomolecular-ecologic psychiatrists identify food allergies and intolerances as the first and arguably most critical step in treating mental disorders because healthy brain function is a direct result of a balanced allergen free diet and environment. The phrase environment allergy conjures images of pollen, dust, dust mites, cat hair, animal dander, grass, etc. However, there are many more environmental triggers. Philpott and Kalita explain,

“Approximately one-third of my patients react to various chemicals common to our environment. Some react to the insecticide spray residues on fruits and vegetables and thus must eat fruits and vegetables that have not been sprayed by insecticides if they are to remain sane. Some react to preservatives and additives in foods; others react to the non-caking substances in table salt and have to use sea salt. Another surprise was the number of people reacting to chlorinated water; several developed ulcerated colitis. I had never heard of chlorine as a cause of either ulcerated colitis of psychosis, but my empirical observations made me a believer (3, Pg. 22) .” Patrick Holford in, Optimum Nutrition for the Mind, writes, “Early reports, as well as the current research, have found that allergies can affect any system of the body, including the central nervous system. They can cause a diverse range of symptoms including fatigue, slowed thought processes, irritability, agitation, aggressive behavior, nervousness, anxiety, depression, schizophrenia, hyperactivity and varied learning disabilities. Allergic intolerances in susceptible individuals can be caused by a variety of substances, though many people have reactions to common foods and chemicals (1, Pg. 109).” In double blind, placebo-controlled crossover trials conducted by Dr. Joseph Egger conclusive links have been found between trigger allergies/intolerances and mental disorders. In a study of 76 hyperactive children, “79 percent of the children tested, reacted adversely to artificial food colourings and preservatives, primarily tartrazine and benzoic acid, which produced a marked deterioration in behaviour. However, no child reacted to these alone. In fact, 48 different foods were found to produce symptoms among the children tested. For example, 64 percent reacted to cow’s milk, 59 percent to chocolate, 49 percent to wheat, 45 percent to oranges, 39 percent to eggs, 32 percent to peanuts, and 16 percent to sugar. Interestingly enough, it was not only the children’s behaviour that improved after the individual dietary modifications. Most of the associated symptoms also improved considerably, such as headaches, fits, abdominal discomfort, chronic rhinitis, aches in limbs, skin rashes and mouth ulcers (1, Pg. 110).” Dr. Joseph Egger conducted a similar double blind, placebo-controlled crossover trail on 88 children who suffered from migraines: “As before, most children reacted to several food chemicals. However, the following foods and chemicals were found to be most prevalent: cow’s milk provoked symptoms in 27 children, eggs in 24, chocolate in 22, both oranges and wheat in 21, benzoic acid in 14 and tartrazine in 12. Yet again, after dietary modifications, not only did their migraines improve, but also associated physical disorders such as abdominal pain, muscle aches, fits, rhinitis, recurrent mouth ulcers, asthma, eczema and a variety of behavioural disorders. These studies are prime examples of how problems created by allergies often produce a multitude of physical and mental symptoms and affect many body systems. They affect not just the central nervous system and brain, but also, usually, the whole body in various ways (1, Pg. 110).”

Dr. Joseph Egger has also studied dietary allergies/intolerances in people with schizophrenia and autism. Interestingly, he discovered that both groups had elevated amounts of IgG antibodies to gluten (87%) and to casein, found dairy (90%). “Following a strict gluten/casein-free diet resulted in dramatic improvements in patients, with some recovering completely. The link between autism and wheat and milk allergy is particularly strong (1, Pg. 112).” As described in Chapter 2, the Hunzakut race who enjoyed longevity, did not have mental illness. They were also free from crime and therefore had no prisons. Their diet did not contain chemicals, preservatives, or any artificial additives, cows milk and milk products, oranges, eggs, peanuts, or refined sugar. They did however, have small amounts of wheat but it was combined with other ancient grains and eaten in small quantities. The Hunzakuts did eat potatoes and tomatoes (4, Pg. 176) but it is worth mentioning that potatoes, tomato, aubergine, and peppers are in the Solanaceae family of foods that the Spaniards introduced to America and Europe over 500 years ago. They have been implicated in food allergies but only in a very small population of people and typically they produce immediate IgE reactions. (5) Chapter 17 discusses a simple toxin test. I independently studied food intolerances tests and believe in them, however, if you adopt the longevity diet, these tests should be unnecessary. In today’s world, despite precautions, it is inevitable that toxins build up in our bodies , however, some people’s bodies have a more difficult time expelling them, likely due to their genetic makeup.

Chapter 12 – Organic Food & Supplementation Organic Food “After the war the government had found itself with a tremendous surplus of ammonium nitrate, the principal ingredient in the making of explosives. Ammonium nitrate also happens to be an excellent source of nitrogen for plants. Serious thought was given to spraying America’s forests with the surplus chemical, to help out the timber industry. But agronomists in the Department of Agriculture had a better idea: Spread the ammonium nitrate on farmland as fertilizer. The chemical fertilizer industry (along with that of pesticides, which are based on poison gases developed for the war) is the product of the government’s effort to convert its war machine to peacetime purposes. As the Indian farmer activist Vandana Shiva says in her speeches, “We’re still eating the leftovers of World War II.” ”–Michael Pollan, The Omnivore’s Dilemma (1, Pg. 4) Currently, only 0.9% of the world’s agricultural land is organically farmed (2): a staggeringly low number! On the remaining 99.1% of agricultural lands, pesticides, herbicides, and fertilizers are used in tremendous volumes. Take for instance fruit trees: “(They) are sprayed with insecticides, fungicides, and herbicides during the growing season. Poison grain is dropped from planes onto apple orchards to kill rodents. The trees are sprayed with chemicals designed to keep the apples from falling off their stems. After being picked, the fruit is coated with wax to improve appearance, then stored for several months in warehouses filled with toxic gases to prolong storage before coming to market (3, Pg. 185).” All these toxic chemicals, many of which are petroleum based, accumulate in the body’s tissues and organs, including the brain. Studies directly link these toxic residues to a number of diseases and disorders including autism, ADHD, cancer, birth defects, and endocrine dysfunction, to name but a few (4). The endocrine system sends messages from the brain to the entire body via hormones in the bloodstream. Chemical fertilizer, herbicides, and pesticides actually mimic human hormones estrogen and testosterone disrupting their synthesis and breakdown. This has a major detrimental affect on the endocrine glands such as the ovaries, testes, adrenals, pituitary, and thyroid (4). The good news is that conventionally grown foods can be avoided. In Ireland, the organic movement has been slow to take off but there is more organic food becoming available. Unfortunately, much of it is imported because Ireland has the lowest percentage of organic farmland in the EU. Josef Finke, a German who emigrated to Ireland in 1983 to set up a 280-acre organic farm in Ireland explains, “Despite our green image and pride in the purity of our agricultural produce, the amount of agricultural land farmed organically is just 1.2% (5). This number has only marginally increased since Finke set up his farm in 1983. However, organic is available and the slightly higher cost can be balanced by removing meat and poultry from the diet. In situations when organic is not available, there are conventionally grown foods that have lower amounts of chemical contaminants such as:Sweet corn, avocado, cauliflower, asparagus, onions, sweet peas, broccoli, pineapples, mangoes, kiwi, papayas, and bananas. Conventionally grown food

that is the most heavily contaminated include: Bell peppers, spinach, celery, potatoes, peaches, nectarines, strawberries, apples, pears, cherries, grapes and raspberries (3, Pg. 186).” However, the devastating impact of pesticides, herbicides, and fertilizers is imbedded in more than our food. “Some portion inevitably washes into waterways along with eroded sediments. This nonpoint source runoff occurs nationwide, and the nitrogen fertilizer finds its way into rivers, lakes and the ocean where it causes eutrophication and "dead zones" that kill aquatic life. Eutrophication is a process whereby nitrogen feeds an algal bloom, but when the short-lived algae die, decomposing bacteria then consume most of the available oxygen, suffocating aquatic life. Additionally, use of artificial fertilizers in place of animal or "green" manure-cover crops plowed into the soil--eventually can deplete soils of organic matter, making them lose their ability to hold water and more subject to erosion (6).” It is also important to realize that the use of herbicides in household gardening and lawn-care is equally as detrimental. The National Coalition for Pesticide-Free Lawns says, "Of 30 commonly used lawn pesticides, 19 are linked with cancer or carcinogencity, 13 are linked with birth defects, 21 with reproductive effects, 26 with liver or kidney damage, 15 with neurotoxicity, and 11 with disruption of the endocrine system (6) ." Pesticide companies spend millions on advertising campaigns that portray the odd dandelion in the garden as a treat to a family’s health. The real danger, however, is from their products. Imagine if you will, children and the family pets playing and rolling in a typical American yard that is a carpet of ‘blissful’ green, free from any pesky weeds. Then imagine the chemicals that they are absorbing through their skin and inhaling into their bodies from the invisible layer of herbicides. It is scary to contemplate. The rise in pet cancers can be linked to the increased use of herbicides resulting from an obsession with a ‘perfect’ lawn. The Hunzakut longevity nation discussed in Chapter 2 never used any pesticides, herbicides, or any unnatural fertilizers. Instead, they gathered stalks and roots from harvested vegetables, fallen leaves, manure from their animals, and human waste that is composted for a minimum of six months. The concept of human manure is repulsive to many or most in the ‘civilized’ world but it is not only greatly beneficial to the environment but also to the health of the food growing. By the time human manure is applied to the soil, it is free form pathogens and harmful bacteria which is more than can be said about sewage treatment plants that pump masses of untreated waste into oceans and septic tanks that leach untreated waste into the soil and water supply (7). The Hunzakuts food was healthy: packed with minerals and vitamins because their soil was respected. If the soil is rich, the food will be rich. Because their crops were healthy, they naturally resisted many biological threats that plague crops today. “Truly vital foods must be grown in healthy soil rich in both minerals and soil-based organisms. Healthy crops naturally resist insects and bad weather. When crops maintain a healthier immune system, their natural anti-insect and anti-disease mechanisms work more effectively- just as a human who has a strong and healthy immune system is far less likely to

develop diseases (8, Pg. 73-74).” Chemical pesticides and fertilizer are so widely used because crops are sick due to depleted soil resulting from a lack of crop rotation and decades of unnecessary chemical use. Because our soil is largely sick and therefore our food ‘sick’ or lacking in the spectrum of rich minerals and vitamins that they naturally should have, structured/energized/vortex water should be used to boost the mineral content. Supplements Synthetic supplements “If you have ever consumed vitamins at any time in your life-and two-thirds of us have, according to health surveys-you have probably unwittingly bought into one of the most enduring and toxic myths to ever shape public health consciousness (8, Pg. 13).” Since the 1930’s synthetic vitamins have forged their way into mainstream acceptance and perceived dependence, so much so that many processed foods today are now fortified with them such as bread, grain, dairy, and deserts. Already these foods cause disease in the body but marketing nearly gives them superfood status because of the addition of synthetic vitamins. Far from making these foods healthier, these so called ‘fortifications’ actually compound the problem of toxic food in the body. It will however, come as a shock to many that supplements are not only ineffective but detrimental. 22 Billion dollars are spent in the United States each year on vitamins that the public has been lead to believe fortify the body against disease and are safe and effective. The problem with vitamins is that at least 95 percent of them are synthetic or have synthetic ingredients, according to the Organic Consumer’s Association. These vitamins are made in pharmaceutical laboratories under the same conditions and in the same methods as

prescription and over the counter drugs; but that is not solely the reason why they are ineffective and even detrimental. Brian R. Clement, PhD, in Supplements Exposed explains, “Mainstream marketing of vitamins and minerals continues to promote the myth among consumers that nutrients can be isolated individually from one another and synthesized in a laboratory to give us the same health benefits as nutrients found working together in organic fruits and vegetables. This is the “magic Bullet” mindset that remains the centerpiece of or culture’s synthetics belief system (8, Pg. 15).” The manufacturers of vitamins and minerals have deceived the public into believing that synthetics created in a laboratory and isolated are the same, if not better, than their naturally organically occurring counterparts but nature does not isolate. Clement explains that nature harness the power of synergy to nurture and nourish. “Synergy means two or more chemicals or compounds interacting to produce effects more powerful than any one can create by itself. Synergy is a fundamental principle of nature, and a fact that the prevailing synthetics belief system, with its emphasis on isolating “magic bullet” molecules, chooses to ignore at our peril (8, Pg. 14).” This principle is demonstrated with seawater vs. saline solution. Some chemists claim that synthetic seawater, or saline solution, is identical to sea water but marine life struggles to survive in synthetic seawater. In reality, seawater is an incredibly complex solution that surpasses the sum of its pure chemical compounds. “It is a complex and incompletely understood mixture of virtually every substance that has graced the face of the Earth.” These substances create a synergy that nurtures and sustains marine life (8, Pg. 14).” To further explicate, Clement continues, “Those who understand that a vitamin is actually a naturally occurring and living-food-based matrix found only in foods and botanicals do not agree with chemists view of vitamins. Instead, they reject the notion that, because synthetic vitamins look similar at the molecular level to natural vitamins, they are the same. A photo of a plastic model of a plant may look like a plant but it is not. The difference between a real, living vitamin and a “dead” chemical compound is the difference between life and death…Synthetic chemicals or inorganic materials are never “alive” as they come from lifeless sources 8, Pg. 40).” Not only do synthetics, whether drugs or vitamins, not have the benefits of synergy, they are also toxic in the body. “Because they are not “nature-made” or natural whole food matrix, the body does not recognize them as useful nutritional building blocks. Furthermore, because of their synthetic nature, the body views them as foreign substances such launches an immune response against them (8, Pg. 34).” In short, the story and state of the mainstream Western diet reads like a science-fiction nightmare. The bulk of the diet is disease-producing food such as milk, dairy, gluten, meat,

poultry, and all that is processed. Much of this food is laden with refined sugar and table salt and then ‘fortified’ with synthetic minerals and vitamins. http://www.herbaldietshop.com/faq.html#natural Natural Supplements Natural supplements are derived from natural sources, not from chemical sources produced via chemical processes using formulas that are unknown to the public (8, Pg. 34). “An example of a natural supplement is vitamin C derived from the Alma berry. A full spectrum extract is made by removing the non-nutritive fiber and cellulose from the berries. Then, the berries are filtered with water, ground up, and dried at low temperatures to concentrate the nutrient and their cofactors. No high-heat, freezing, or chemical techniques are used in the natural process. By contrast, synthetics can begin in a laboratory with corn sugar or coal tar as a base to create the synthetic nutrients. Ascorbic acid, for instance, can be synthesized from this base using fermentation and chemical manipulations, depending on the manufacturer and its proprietary process. The ascorbic acid is then sold as vitamin C (8, Pg. 51).” Longevity nations did not and do not have supplements. Their nutrients are derived solely from plant-based sources. These plants have drawn minerals from the soil to produce minerals and vitamins for the human body to consume, assimilate, and absorb in the correct format. There is no “magic bullet”. We cannot circumvent the necessity of eating a plantbased diet rich in minerals and vitamins. In chapter 18, I will list naturally occurring mineral and vitamin supplements that act as a boost to a balanced plant-based diet. I must stress, however, that the majority of the diet plan is achieved by eating a plant-based diet with some fish. Eventually, optimal health will be achieved without needing natural supplementation as a result of Bio Dynamic farming and vortex/structured/energized water which will increase the mineral content in food. 1. Chapter 13 - Exercise It is common knowledge that exercise contributes to good health and a toned physique but the mechanism of exercise is not greatly understood, nor is the impact of exercise on important bodily systems such as lymphatic drainage and circulation. When exercise occurs, the body concentrates its energy on the muscles. Breathing increases and the heart beats faster, pumping extra blood, oxygen, and nutrients through dilated blood vessels to the muscles while blood flow is reduced via contracted blood vessels to nonessential organs like the stomach, intestines, and kidneys. “When you exercise, your muscles act something like electric motors. Your muscles take in a source of energy and they use it to generate force. An electric motor uses electricity to supply its energy. Your muscles are biochemical motors, and they use a chemical called adenosine triphosphate (ATP) for their energy source. During the process of "burning" ATP, your muscles need three things:   

They need oxygen, because chemical reactions require ATP and oxygen is consumed to produce ATP. They need to eliminate metabolic wastes (carbon dioxide, lactic acid) that the chemical reactions generate. They need to get rid of heat. Just like an electric motor, a working muscle generates heat that it needs to get rid of.

In order to continue exercising, your muscles must continuously make ATP. To make this happen, your body must supply oxygen to the muscles and eliminate the waste products and heat. The more strenuous the exercise, the greater the demands of working muscle. If these needs are not met, then exercise will cease -- that is, you become exhausted and you won't be able to keep going (1).” The activity of exercise promotes healthy circulation via the leg muscles. “By their (the legs) contractions and relaxations during the time we are upright, the leg muscles overcome the force of gravity. They pump into the venous system the blood that was sent to the legs. Because of the pressure breakers – and one directional valves in the vein – the blood in the leg veins is pushed upwards against gravity by frequent contractions of the leg muscles. This is how the leg muscles act as hearts for the venous system in the body. This is a value to exercise that not many people appreciate. Leg muscles also cause an equally effective flow within the lymphatic system and clause edema in the legs to disappear (2, Pg. 167).” As discussed in chapter 4, the lymphatic system is a crucial and often overlooked bodily system. Pressure changes in the body created by increased respiration and arterial pulsing that occur as a result of exercise, drive lymph formation and transport. Lisa Bryant in, “How Can Exercising Improve Your Lymphatic System?” explains, “Lymph flow increases by approximately 2 to 3 fold while exercising when compared to rest (3).” Without exercise, the lymphatic system becomes clogged, sluggish, and dysfunctional. Because 72% of American

women and 64% of American men do not participate in any type of regular physical activity,(4, Pg. 338), it is no wonder that the lymphatic system of the average Westerner’s is clogged by fatty waste from cholesterol build-up. The notion of exercise, however, is a modern concept mainly afflicting the Western or first world as lifestyles have become increasingly sedentary. Physical exertion is no longer part and parcel of a daily routine as it was for the Hunzakuts and all other longevity nations. The Hunza people did not go to aerobics or yoga classes; they did not jog or cycle, swim laps or run on a treadmill but they had excellent physiques and, as we know, exceptionally long healthy lives because they exerted their bodies daily. “The value of Hunza land is terraced. Beginning at the Hunza River and going halfway up the mountainside, these staircase terraces or farms, while beautiful, are also natural outdoor gymnasiums. Because the people are all farmers, and their homes are located in little villages; they must climb up and down these terraces all day long in order to care for the land. The stamina of the people is beyond words. In fact men over a hundred years of age were observed going up these mountainsides just as though they were men of fifty. We, in other parts of the world could enjoy good health too, if we were not afraid of physical exertion. Exertion sometimes is a good way to exercise. To illustrate this, let us think of the people who live in apartments. In buildings where people have to climb several flights of stairs to reach their living quarters, the residents usually complain because there is no elevator in the building. If the truth were really known, these people would call it a blessing to live where they must climb several flights of stairs, instead of riding elevators.” (5, Pg. 124) Because our work is no longer our exercise, in most cases, exercise must be actively sought. Kurzwell in Fantastic Voyage: Live Long Enough to Live Forever, list the following activities as being excellent exercises: walking, swimming, cycling, cross country skiing, rowing, golfing, skating, climbing, tennis, quash, tai chi, dancing, aerobics, and distance running are excellent options that will help to reduce the risk of cardiovascular disease, cancer, and other illnesses. (4, Pg. 339). There are many other forms of physical exercises including pilates and yoga. Explore what works the best for your body and lifestyle. When selecting and exercise, it is best to choose an activity that can be enjoyed into old age. Distance running, for example, is a sport that the body is able to perform as the body ages. Conversely, sprinting is not. (2, Pg. 168). The timing of exercise is also an important consideration. The body is most able to focus its energy on muscle exertion on an empty stomach. If the stomach is full, blood flow is diverted away from muscles to aid digestion therefore, the force of muscle exertion will be reduced. Also, weight loss will be impeded if the stomach is full. Professor Peter Hespel at the University of Leuven in Belgium, explains that your body breaks down fatty acids more readily when your body is experiencing low insulin and high adrenalin at the same time. If you eat a large meal and therefore have a full stomach directly prior to your workout, your insulin levels will be higher and will not contribute to a faster fat burn (6). Morning exercise prior to breakfast is ideal as it gives digestive system a chance to wake up. The Hunzakuts

worked in the fields for at least one to two hours each morning before returning home for breakfast. If morning exercise is not possible, having a cup of hot water with a slice of lemon helps to wake up the digestive system, initiating hunger. Lemon is also very cleansing for the liver in Chinese medicine. Sweating, while undesirable to most, is an important part of the exercise process as it eliminates deeply embedded toxins such as pesticides and pharmaceutical drugs from our fatty cells, according to Elizabeth Lipski, author of, Digestive Wellness. If sweating does not regularly occur because exercises is not high impact (like walking) or due to living in a cold climate, like Ireland, sauna’s and steam rooms are recommended. I use the steam room and sauna six times weekly after a 40 minute routine in the gym that includes treadmill, equipment training, and stretching. I go for walks on the weekends and when the evenings are longer in the spring and summer, I walk in the evenings. Swimming used to be a part of my daily routine but I am concerned about the chemicals added to most swimming pools. Below is a link that lists swimming pools around the world with low chlorine levels due to UV/ ozone treatment or the use of seawater. http://piscinasana.wikidot.com/ In addition to chlorine (sodium hypochloride), most pools also use low doses of a toxic acid called sodium bisulphate which, like chlorine, can be absorbed through skin, inhalation, and ingestion. Sodium bisulphate is so strong that it is used to remove oxidation layers from jewellery yet it is also a common food additive in beverages, drinks, sauces, meat and poultry, harking back to earlier chapters that discuss the problem of processed food: table salt, sugar, synthetic supplements, and chemicals all combined into foods that the body already has trouble processing. Randy Hatton of Vibrant Vital Water confirmed that swimming pools can be chemical free with the use of structured/ vortex water systems and other technologies. Chapter 14 – Breastfeeding While all three of my children were breastfed and I attended National Childbirth Trust (NCT) www.nct.org.uk meetings on the benefits of breastfeeding, I cannot speak on the subject from personal experience. However, my contributing research assistant is the mother of a 15 month old and she continues to breastfeed her son. She is therefore responsible for a great deal of the information put forth in this chapter. “Breastmilk is a ‘live’ food that contains living cells, hormones, active enzymes, antibodies, and at least 400 other unique components (1)”. Formula One of the first decisions a new mother makes is whether to bottle feed or breastfeed their infant. It is a choice that should not be made lightly and parents should be aware of the consequences of this very critical decision. It is a common belief that formula is nearly as good as, if not better than breast milk. Formula is actually the equivalent of sugary processed junk food being eaten twelve plus times daily. It is also lacking in a myriad of other quintessential health benefits found in breast milk that has evolved over thousands of years to be the perfect food for the vulnerable and rapidly growing infant. In contrast to breast milk, formula is not nutritious. The advent of commercial baby formula after World War II has had disastrous health consequences including a four fold risk of sudden infant death syndrome (SIDS), a fourteen fold increase in hospitalization, a five fold risk of gastroenteritis, a two fold risk of developing diabetes, an eight fold risk of developing lymphatic cancer, an increased risk of obesity, ear infections, asthma, and a host of other ailments (2). Baby formula is a booming industry that is completely unregulated. There is no transparency required of the manufacturers and ingredients are unlisted with no indication of what and where they come from. What is known about formula is that most brands are based on cow’s milk, “but before a baby can drink cow’s milk in the form of infant formula, it needs to be severely modified. The protein and mineral content must be reduced and the carbohydrate content increased, usually by adding sugar. Milk fat, which is not easily absorbed by the human body, particularly one with an immature digestive system, is removed and substituted with vegetable, animal, or mineral fats. Vitamin and trace elements are added, but not always in their most easily digestible form. (This means that the claims that formula is ‘nutritionally complete” are true, but only in the crudest sense of having added a full complement of minerals and vitamins to a nutritionally inferior product (1).” These minerals and vitamins added to breast milk are most likely synthetic which are not only not beneficial to the baby, but actually detrimental to his health, as discussed in chapter 12. Also discussed in chapter 12 is the complexity of seawater. Breast milk is very similar in that it is incredibly complex and not yet fully understood by science. Attempts to replicate either substance are futile.

Also, claims that formula is ‘sucrose free’ are highly misleading. “While most infant formulas do not contain sugar in the form of sucrose, they can contain high levels of other types of sugar such as lactose (milk sugar (from cows)), fructose (fruit sugar), glucose (also known as dextrose, a simple sugar found in plants), and maltodextrose (malt sugar) (1).” If parents believe that using a vegan formula such as one based on soya, is any healthier than cow based formula, they are sorely mistaken. “Soya formulas are of particular concern due to the very high levels of plant-derived oestrogens (phytoestrogens) they contain. In fact, concentrations of phytoestrogens detected in the blood of infants receiving soya formula can be 13,000 to 22,000 times greater than the concentrations of natural oestrogens. Oestrogen in doses above those normally found in the body can cause cancer (1).” According to Dr Joseph Mercola in, “The Health Dangers of Soy, “More than 90 percent of soybeans grown in the United States are genetically modified. Since the introduction of genetically engineered foods in 1996, we’ve had an upsurge in low birth weight babies, infertility, and other problems in the US… Soybean crops are also sprayed with chemical herbicides, such as glyphosate, which a French team of researchers have found to be carcinogenic. Soybeans – even organically grown soybeans – naturally contain “antinutrients” such as saponins, soyatoxin, phytates, trypsin inhibitors, goitrogens and phytoestrogens. Traditionally, fermentation destroys these antinutrients, which allows your body to enjoy soy’s nutritional benefits. However, most Westerners do not consume fermented soy, but rather unfermented soy, mostly in the form of soymilk, tofu, TVP, and soy infant formula (3).” “The artificial milk sold as infant formula is little more than junk food. It is also the only manufactured food that humans are encouraged to consume exclusively for a period of months, even though we know that no human body can be expected to stay healthy and thrive on a steady diet of processed food (1).” Breastfeeding “Before World War II, pregnancy and birth – and, by extension, breastfeeding – were part of the continuum of normal life. Women gave birth at home with the assistance and support of trained midwives, who were themselves part of the community, and afterwards they breastfed with the encouragement of family and friends (1).” It is largely common knowledge that breast milk will boost an infant’s immune system but this is only the tip of the iceberg. Breast milk is a living substance. It caters to the baby’s every need. For the first three to five days of a baby’s life, it drinks a substance called colostrum from the mother’s breasts. It is thick and dense with antibodies while also acting as a laxative to cleanse the baby’s bowels of waste built up in the womb (2). If a baby is born preterm, the breast milk adjusts to specifically support the early baby’s needs and it can mean the difference between life and death for the vulnerable new life. Amazingly, if a baby

becomes sick from something that his mother has not been exposed to previously and therefore has not produced antibodies for, the baby will transfer the organism into the breast through his saliva where antibodies will be produced immediately on sight and transferred back to the baby. The baby may still be sick but the new antibodies will lessen the impact of the illness and help the baby to cope (2). The protein composition of breast milk is mostly whey. It is abundant in taurine, the amino acid responsible for brain and eye development. Breast milk contains an enzyme called lipase which breaks down fat rendering it nearly self digesting, aiding the developing digestive system but the milk is not only easy to digest, it actually helps to rapidly develop the baby’s digestive system through gene expression, “the process by which instructions in a gene are used to synthesize a functional gene product, mostly proteins. When genes are expressed, it is as if they are "turned on (2).” Researchers have discovered that breast milk and formula have different effects on at least 146 genes. "At birth, the poor baby comes out of a nice protected environment, where everything is taken care of," said researcher Sharon Donovan of the University of Illinois, into a world teeming with bacteria and where nutrition must be obtained from a rookie intestine. The faster the baby's digestion tract and immune system get up to speed, the healthier the child. Some of the genes positively affected by breast milk protect against "leaky gut," a disorder in which foreign particles enter the bloodstream through the intestinal wall, Donovan said. Leaky gut is thought to increase the risk of allergies and inflammatory diseases, such as asthma, colitis and Crohn's disease — all of which may have higher rates among formula-fed babies, previous research has suggested (2).” Also, “breast milk is high in lactose, which is broken down in the body into glucose and galactose, and galactose is a valuable nutrient for brain tissue development. We know from animal studies that the more intelligent species of mammals have greater amounts of lactose in their milk. Cow’s milk contains lactose, but not as much as human milk and in a form that is not easily accepted by the human body. Soy-based and other lactose-free formulas obviously contain no lactose at all. Taurine, an amino acid found in breast milk, is important to the brain development. This amino acid is low in cow’s milk (2).” The actual physical act of breastfeeding also contributes to brain development. The skin-toskin contact initiates many subtle changes in a baby’s chemistry and the variations in feeding positions actually help the facial bones to develop properly. Breastfeeding also contributes to developed jaws and palates, probably because of the suckling action. When breastfeeding, the baby has to work hard to get milk, especially during the first few days of life before the milk ‘falls’ and the breasts contain the super rich colostrum. After the milk has come down, the baby’s suckling action is varied throughout the feed. The suck needs to be stronger at the beginning of the feed to draw the milk down and when the milk is flowing quickly, the baby must adjust his suck to accommodate the incoming milk. Towards the end of the feed, the suckle becomes slower. The variation of suckling is also a reaction to the varying milk

composition during the feed. The initial milk is thin and viscous. It is thirst quenching. As the feed progresses, the milk changes to a more dense creamy consistency that is rich and satisfying. Even the perfect formula, if that was possible which it is not, could not replicate this purposeful variation in milk flow and consistency. Breastfeeding has also evolved to initiate important developmental markers. When a baby is first born, they have limited vision. The length of their field of vision is exactly the distance of the suckling baby’s gaze up into his mother’s eyes who is gazing down upon her child. This creates a deep bond and shapes the delicate developing psyche of the child (4). The benefits of breastfeeding are numerous for the baby but there are also many benefits for the mother including the release of hormones that trigger the mothering instinct, the reduction of the uterus to pre-pregnancy size, the delay in menstruation, and the increase in metabolism which helps to aid weight loss. Also, breastfeeding is easy and cost effective. While the early weeks may prove challenging especially if the mother is not supported, it soon becomes very easy and natural; no bottles, no sterilization; no measuring. Beast milk is always ready and available. However, it is important that a breastfeeding mother continues the healthy diet that she hopefully maintained during pregnancy. If the mother is not eating nutritious food, the infant will not be receiving the full spectrum of minerals, vitamins, and other nutrients. But, nutritionally incomplete breast milk is still far superior to formula. The Hunzakut super longevity nation discussed throughout this book breastfed for about three years according to J.I. Rosdale in The Healthy Hunza’s. Alternatives “Infant formulas were never intended to be consumed on the widespread basis that they are today. They were conceived in the late 1800’s as a means of providing necessary sustenance for foundlings and orphans who would otherwise have starved. In this narrow context – where no other food was available – formula was a lifesaver (1).” If a mother cannot breastfeed because of a physical limitation or because her baby was adopted, there are options. For many, the idea of a wet nurse harks back to feudal times but actually, wet nurses still exist. There are women and many resources for finding appropriate one in the US. Disease screening is involved, of course, and it is even possible to select a wet nurse who is vegan or vegetarian. There are scarce resources for this in Ireland but it is a topic of discussion among midwives. Googling wet nurses in Ireland does bring up results. With a bit of work, a wet nurse in Ireland would surely be found. A cost would probably be associated but it may in fact be comparable to the cost of formula which averages around 1,500 euros annually. A second alternative is milk donation. There is a milk bank in Ireland but they limit donations to premature babies who are in great need of breast milk to prevent against a disease called NEC (necrotizing enterocolitis), a life threatening condition that affects a baby’s bowel. Premature babies are particularly vulnerable. Milk is also donated to babies undergoing surgery or with health conditions that can greatly benefit from the immune

support of breast milk. However, this service is largely unknown and if it receives more publicity, more mothers are likely to donate their excess milk, knowing how much it can help. Chapter 15 – The Healing Crisis The human body is incredibly resilient. It is a remarkably complex organism that has its own self-healing abilities. The immune system is the body’s defense system comprised of billions of white blood cells that protect against all manor of invaders including toxins, threatening microorganisms, and even the body’s own cells that have turned malignant. A healthy immune system can protect against all pathogens. Bruce Fife in, The Healing Crisis, uses the example of the bubonic plague, typhoid, and yellow fever that have struck down millions of people, yet millions of people have also survived these deadly infections. This is not because they were uninfected; it is because their immune systems were strong enough to overcome the invader. “All natural methods of healing are based on the concept that the body is capable of curing just about any illness if it is given the opportunity – that is, if negative influences such as environmental toxins, emotional stress, malnutrition, etc, are removed. The body has an amazing capacity to heal itself. When we get a cut, break a bone, tear a muscle, or get bacteria infections, the body immediately goes to work to repair the damage. We develop symptoms (mucus discharge, fever, coughing, vomiting, diarrhea, fatigue, etc) to fight and remove harmful substances. The body knows what to do in every case (1, Pg. 13).” The analogy of the car in comparison to the human body has been used throughout this book. As previously stated, many think more about what oil is being put into their car’s engine than what fuel (food) is going into their body. Ray Kurzweil and Terry Grossman in, Fantastic Voyage go one step further by comparing the body to household plumbing, “Even a clogged toilet or drain can wreak havoc on a normal household function. Our bodies are no different, and the prompt and effective removal of toxins is critically important to longevity. You are exposed to toxins in many forms: in polluted air and water, in your workplace, and in your food. You even form some of the most dangerous toxins within your cells yourself. Efficient and effective mechanisms for decontaminating and safely disposing of these toxins are critical to health maintenance and longevity (2, Pg 181).” The incredible abilities of the immune system are greatly reduced and hindered when the body is continually coping with malnutrition (whether from a lack of food or equally from a lack of the right food), and toxin overload. Fife explains, “When the immune system is overworked or when nutrients essential for the production of healthy white blood cells are lacking in our diets, our immune system cannot adequately do its job, sickness and disease results. If white blood cells are just barely able to keep daily toxins and pathogenic invaders in check, poisons are easily trapped in tissues and build up over time. These poisons can disrupt normal cellular activity, causing degeneration and further burdening the immune system. Good diet and lifestyle choices are the keys to maintaining a strong immune system (1, Pg. 20).” The incredible immune system is often working overtime from the moment a baby is born. As discussed in chapter 14, infant formula is the equivalent of junk food which is ingested by the baby up to 12 times daily. A baby’s system struggles because of its lack of living

enzymes and immune support of breast milk. As the child grows older, he is exposed to processed food, copious amounts of sugar from candy and fizzy drinks, trans fats from fried foods, and environmental toxins. When vegetables are consumed, they are rarely organic and often microwaved, rendering them dangerous to the body (which will be further discussed in later chapters). By the time a child matures to adulthood, their immune system is highly stressed, leaving the body vulnerable to infection. The current medical system then treats the symptoms of disease while ignoring the underlying causes. Fife expounds, “In traditional medicine, disease is often viewed as a set of symptoms, and treatment is focused upon removing those symptoms. The problem with this approach is that the symptoms are not the cause of the disease: they are only the body’s response to it. Suppressing or masking the symptoms will not cure the disease. Taking a pain pill will not cure a headache; it only deadens the nerves so that the pain is not felt. The cause of the headache remains. Taking cough medicine does not cure chest colds. Sleeping pills will not cure insomnia. Prozac will not cure depression. Ritalin will not cure attention deficit disorder (ADD). Cortisone injections will not cure arthritis. When the cause of the problem is not removed, medication must be used regularly to suppress symptoms (1, Pg. 20).” This is not to say that these medications should be avoided altogether. When suffering from a debilitating headache, for example, a painkiller is a lifesaver. However, the reason why such a powerful headache has manifested should be explored when it has cleared, especially if it is a regular occurrence. Medication is available when we need it but it should be used with caution and with moderation. Crucially, medication should not be seen as a solution. When the body is exhibiting pain, it is telling the brain that there is a problem that needs to be addressed. Taking a tablet is only a temporary band-aid. While pain is an obvious signal of trouble, no pain does not mean that internal functions are operating optimally and free from disease. “Many diseases, especially chronic illness, do not show up on diagnostic tests until the condition has progressed to an advanced stage. For example, 80 percent of the ability of the pancreas to produce digestive enzymes is lost before clinical symptoms occur and a problem can be detected. The loss in function of the pancreas, however, will adversely affect digestion and nutrient absorption, which in turn will affect the health and well-being of the entire body. So a person can be diagnosed as normal or healthy, yet lack good health because of subclinical conditions (1, Pg. 20).” Diseases affecting all parts of the body may be caused by toxins; “biologic organisms, environmental pollutants, metabolic waste, food additives and contaminants, as well as too much dietary fat, sugar and protein, stress (both physical and emotional trauma), malnutrition and poor lifestyle habits (lack of exercise, sunshine, and fresh air). When non harmful methods are used to correct these dis-ease-causing factors, health is restored (1, Pg. 22).” This process does not always happen speedily. In fact, it can take years. MJ Pangman in Dancing with Water says, “Detoxification was not meant to happen overnight. It can take months – even years – to release the deeply-held toxins that your body has carefully hidden to keep them from

damaging critical organs and systems of your body. Heavy metals are some of the most difficult toxins to remove. If you are drinking structured water and you are still not well hydrated, it is often because there are heavy metals and other pollutants that still need to be released (3, Pg. 217).” Often, however, when people begin cleansing, they are surprised when they become ill. Take for instance those who are giving up cigarettes. More often than not, the period directly following the cleanse is wrought with coughing, hacking, and illness which may have been absent while the person smoked. It is generally assumed that when something toxic to the body is given up, the body will react positively, however, when a toxic lifestyle is suddenly changed, the body must cleanse. Fife explains, “This is an area of confusion for many people. After eating healthfully they would expect to get better, not sick. The diet is supposed to make them healthy; why then, are they getting sick? These symptoms of illness are actually indications of improving health (1, Pg. 27).” Patricia Bragg in her book, Apple Cider Vinegar discusses her father’s experience with detoxification. “When he attended this military school from the age of 12 on, his body became so saturated with toxic poisons, mucus and putrid food residues that when he ate fresh fruits, he suffered not only hives, but also colds, and headache pains as well. These were erroneously thought to be allergic reactions. But they were the natural self-cleansing responses of his body that wanted him healthy and clean! The cleansing fruits were trying to push out the mucus and toxins through his skin, lungs, etc (4, Pg. 49).” Symptoms of sickness occur when detoxification is taking place because long embedded toxins are being released into the bloodstream and washed out of the body. This cleansing process can manifest as an elevated body temperature which is the immune system’s way of killing the invading organism via heat and stimulating white blood cell production. Mucus discharge, coughing, diarrhea, and vomiting are all designed to eliminate ‘nasties’ infecting the body. Fife uses an example of a clinically obese man who begins a detoxification process and becomes very ill with food poisoning symptoms. “On examination, his fat was found to contain substantial amounts of stored dieldrin (a pesticide), which had been metabolized as he lost weight. Over the years, his body had accumulated the toxin from his food and environment (1, Pg. 53).” Fife describes the illnesses following detoxification as “healing crisis”. While they are inconvenient, they are a positive move towards health and the first bout of illness is usually the worst. Fife explains, “…Although you may encounter several minor crises, the first major cleansing crisis is often the worst, which each succeeding reaction being milder and of shorter duration than the one before. The body becomes purer, stronger, and healthier with longer periods of symptomfree health, until you reach a plateau where you are relatively fee of symptoms and illness (1, Pg. 58).”

I believe that a detoxification cleansing program is unnecessary when a mainly fruit and vegetable diet is adopted. But, for those who want to speed up the process, a detox can be beneficial albeit shocking for the body. When I changed my diet without going through a detoxification program, I lost ten kilos in six months, restoring my body to what it was in my twenties. People commented that I looked unwell for the first six to nine months, and they were correct. My body was cleansing, releasing a lifetime of built up toxins. I was going through a healing crisis but after the cleansing was complete, my radiance returned. I regained weight but my waist and face have remained trim. I believe that the weight gain is due to my bones and muscles becoming denser as alkaline minerals have ceased being leached. If you find yourself in the throws of a healing crisis, it may be a tough period and you may wind up in a doctors office. A traditional doctor, however, will be unlikely to understand the process that your body is going through. Your body is eliminating toxins and a doctor is likely to prescribe more toxins in the form of antibiotics to treat your healing symptoms. A better option is to work with a nutritionist who understands plant and alkaline based diets. With the advent of Skype, your nutritionist of choice doesn’t even need to be in your country. Earlier in the book, I mentioned Gareth Edwards who is the foremost pH nutritionist in London. He studied under Dr. Robert Young and remove cancer patients from chemotherapy by introducing an alkaline diet. He has transformed lives through juicing, green vegetarian powder drinks, and introducing a vegetarian diet (with a small inclusion of fish). If you have cancer, “The Healing Crisis” is an essential read and it will also be necessary to find a nutritionist who understands pH in the body and knows how, via a mainly vegan diet, to cure the disease. Unfortunately Gareth Edwards is the only nutritionist I know of who fit this criteria. Dr Young’s office train microscopists (technicians who check your blood under a microscope). However here I refer to someone that is a nutritionist and pH (alkaline) trained.

Chapter 16 – Cooking Methods “Humans are the only animals on the planet who destroy the nutritional value of their food before eating it. All other animals consume food in its natural unprocessed state, but humans actually go out of their way to render food nutritionally worthless before eating it. No wonder humans are the least healthy mammals on the planet.” (1) Microwaves In a 2006 study, 68 percent of Americans said that they could not live without a microwave. This is a 36 percent increase since 1996. Disease, particularly cancer, is also steadily rising. Is this a coincidence? (2) The heating properties of the microwave were discovered by accident during World War II by the Germans. In the bitter cold of winter, soldiers gathered around a radar system, that detected incoming British bombers, to warm themselves in the heat of microwaves emitted. They consequently developed leukemia and cancer of the blood. However, “because it was apparent that human engineered microwaves heated tissue, Humboldt University in Berlin was given a grant in the early 40’s to develop microwave ovens. The objective was to provide the German soldiers with a warm meal that could be prepared both fast and with no fuel for use during the Barbarossa Campaign against the Soviet Union. However anyone who consumed this microwaved food likewise developed cancerous blood.” (3) After the war, the research initiated by the Germans was seized by the Russians and research continued by the Institute for Radio Technology in Kinsk (Belarus). They were so alarmed by their findings that they issued and international warning about the damaging health consequences of the unnatural method of cooking and they banned its use. However, big business and convenience won out and the ban was lifted under Perestroika. (3) In short, the Russians concluded that microwaving structurally degraded food, leading to the loss of bioavailable nutrients and rendering food carcinogenic. These findings are not surprising when it is understood what actually happens inside the microwave. “Microwaves from the magnetron within the oven bombard the food, causing the molecules to rotate at the same frequency millions of times a second. All this agitation creates molecular friction, which heats up the food. Of all natural substances, the oxygen of water molecules reacts most sensitively. This is how microwave cooking heat is generated – friction from the violence in water molecules. Structures of molecules are torn apart, molecules are forcefully deformed, and thus become impaired in quality. This is contrary to conventional heating of food where heat transfers convectionally from without to within. Cooking by microwaves begins within the cells and molecules where water is present and where the energy is transformed into frictional heat (4).” Microwaves are so powerful that they are used in the field of gene altering technology. Cells exposed to microwaves are impaired, “their natural repair mechanisms are suppressed and

cells are forced to adapt to a state of energy emergency – they switch from aerobic to anaerobic respiration. Instead of water and carbon dioxide, the cell poisons hydrogen peroxide and carbon monoxide are produced.” (4) The biological altering properties of the microwave on human cells also applies to the food that is cooked within the microwave and then consumed. Additionally, new compounds are created called radiolytic compounds which are not found in nature and are a direct result of radiation. (4) A small but well controlled Swiss study conducted in 1992 by Dr. Hans Hertel, confirmed the Russian claims and elaborated on the original study. “He found a decreased number of red blood cells, and of their oxygen bearing hemoglobin content, in people eating microwaved foods, along with increased cholesterol levels. Even more troubling is the creation in these foods of radiolytic compounds hitherto unknown in nature, the effects of which on the human body remains completely unknown” Hertel’s study also reports, “an increased number of leukocytes, or white blood cells, present in the body after the ingestion of microwaved foods. White blood cells are the foot soldiers of the immune system, so what this suggests is that the body was perceiving the microwaved food as an invader, or toxin, rather than as nourishment.”(5) After publishing his findings, Dr Hertel’s was subject to a gag order enforced by the President of the Court of Seftigen, Canton of Bern because of pressure from the powerful organization, the Swiss Association of Dealers for Electro-apparatuses for Households and Industry, known as FEA. This gagging order was later removed and compensation given to Dr Hertel for infringement on freedom of speech and impingement of scientific research. Studies have also been conducted on the impact of microwaving baby formula. Following her study in 1989, Dr. Lita Lee of Hawaii stated, “Microwaving baby formulas converted certain amino acids into synthetic - ‘non biologically active’ – cis-isomers. Further, one of the converted amino acids is known to be a neurotoxin (poisonous to the nervous system) and a nephrotoxin (poisonous to the kidneys). It’s bad enough that many babies are not nursed, but now they are given fake milk (baby formula) made even more toxic via microwaving (5).” In short, the microwave’s affect on human health is, at the very least, questionable. There are many who condemn the studies, calling them alarmist and not scientifically based. More studies are certainly needed but in the meantime, I prefer to stay clear of the modern heating device that was discovered as a result of its ability to heat flesh through radiation. There is a practical experiment that anyone can do at home if they question the dangers of the microwave. Take two similar plants (preferably with flowers) and water one with boiled water via conventional heating and the second with boiled microwaved water. Observe the changes and make a judgment for yourself. I conducted the study for two weeks and the first plant, watered with cooled boiled water, thrived normally while the second plant, watered with microwaved and cooled water, faded considerably. There is a wealth of science and more in depth information than is described in this chapter. Best cooking practices The Hunzakut longevity nation, whose diet is followed in this book, did not have microwaves. In the high altitude of the Himalayas, wood was scarce so cooking was limited to light steaming as to reduce the amount of fuel needed. According to Renee Taylor in Hunza Health Secrets, the Hunzakuts used a covered vessel to cook their vegetables over a small fire. The water simmered rather than boiled and it was served with the food or consumed later; never thrown away. When vegetables are steamed, some of their nutrients are lost in the water which is certainly why the Hunza people did not discard it. They also ate many of their organically grown fruit and vegetables raw and never removed the skin as it contains valuable minerals which are lost if pealed or even vigorously scrubbed and cleaned. (6, Pg. 102-103). From the video clip on the Hunzakuts in chapter 2, it is evident that they also cooked their chapatti and kernel oil on a flat pan at low temperatures. My nutritionist has advised me that cooking in an oven is a healthy option if the oven is kept at a low temperature and low smoking point oils are avoided. Steaming, however, is shown to be the most effective way to cook food if the water is preserved and consumed. Should you go for a steaming oven you must make sure you keep the temperature at its lowest, being 100 degrees Celsius (212 Fahrenheit). Studies conclude that boiling removes a great deal of nutrients from food but the question remains as to whether the nutrients are completely destroyed or if they remain intact in the water or stock of soup, for instance. Raw Diet The raw food diet is extreme but proponents swear by the health benefits of eating live food. The main argument is that cooking destroys important enzymes needed to aid digestion. However, some foods can only be properly digested when cooked (7). Based on the Hunzakuts, current research, and the advice of my nutritionist, a combination of raw food and lightly cooked food is the healthiest option, allowing for the greatest availability, absorption, and assimilation of nutrients. Whether eating food raw or lightly cooked, it is crucial to chew properly. “The action of chewing mechanically breaks down very large aggregates of food molecules into smaller

particles. This results in the food having increased surface area, an important contributing factor for good digestion. Saliva is not just important because it helps lubricate the food, it contains enzymes that contribute to the chemical process of digestion (8).”

Chapter 17 – Tests to check nutrition plan The journey to optimum health can be a long and confusing road. There are so many variables to consider, how can one really know if the body is finally in balance; happy? In this chapter, I will outline five practical tests that can pave the way for a long healthy life based on the longevity nation diet. In the bibliography at the end of chapter 4 I provide a sample of a standard blood test that you can do via your doctor which in Ireland costs of the order of € 30 ($40). This standard test includes your cholesterol levels. The tests below are extra to this standard blood test. 1. Test Expert Plus The Test Expert Plus (Previously called “Vega Expert”) is the one test that I recommend undertaking at the onset of the longevity nation’s diet. It requires a skilled practitioner to operate a very sensitive machine developed in Germany which combines traditional Chinese acupuncture and homeopathic theory. Without the use of needles, the machine detects stress factors in the body that are not normally discovered by traditional western medicine. Upon my advice, a colleague went to see Judy Lynam, a very skilled test practitioner in Dublin. My colleague eats a model diet. She is active, and feels balanced in most areas of her life yet certain symptoms have plagued her for years. She suffers from mild adult acne and irritated patches on her tongue. She has seen doctor after doctor and not only have they not been able to treat her ailments, they were entirely dismissive because she was not obviously sick. Herein lies the problem with western medicine: it is wholly unconcerned or unable to assist with underlying conditions at the cause of many common complaints such as skin problems, allergies, asthma, digestive troubles, etc. My colleague, skeptical by nature, was amazed by the results that the test yielded. When suffering from any condition that has been ignored or improperly treated by traditional western medicine, it is an incredible relief when the underling condition is finally identified, especially when a treatment is readily available. In my colleague’s case, bacterial, yeast, and fungus were impacting her skin due to a lack of friendly bacterial in the gut. This condition is called dysbiosis. A probiotic and digestive enzyme were prescribed along with homeopathic remedies ‘requested’ by her body (this process is much better experienced than described). Her endocrine system was also unbalanced and critically, her body was found to be acidic overall! Despite years, of eating a plant based diet, her underlying conditions were preventing all the goodness being ingested from being absorbed and assimilated. This is why the test is important to do at the onset of the longevity nations diet because one could be eating the healthiest foods available and appear to be quite healthy but her body was suffering. With the remedies suggested by Judy Lynam, my colleague became overall alkaline in a period of a month.

When I first visited Judy, she told me, “Your body should be overall more alkaline than acid – I can test every single organ for acid/alkaline balance! However, if part of the body is out of balance, the whole body can read acidic, also diet can cause this.” During the first year I was on the longevity nations diet, I saw Judy a total of four times for research purposes. I would recommend one test at the onset of the diet, a follow up appointment at 3 months, and a third after a year of being on the diet. Below I have chronicled my four visits to illuminate the test process and how my body changed. Test 1- first month of diet My frontal sinuses and adrenal glands were identified as being stressed and my body was overall acidic, as I had just moved to a plant based diet. Like my colleague, I also suffered from dysbiosis. Judy also tested for toxins such as parasites, metal intoxication, viruses, fungi, east, and bacteria. She identified a toxin called helicobacter pylori present in my esophagus, stomach, and duodenum. She prescribed the relevant treatments. Also, I had no mineral or vitamin deficiencies as I just moved from an animal based diet to the longevity nation diet. While a meat based diet will provide most essential mineral and vitamins, it causes disease throughout the body, as discussed throughout this book. Test 2 – third month of diet My body had moved to an overall alkaline state. Upon my request, Judy tested each individual organ for acidity vs. alkalinity but this is time consuming and not required. The overall reading is the most important. The toxins present in my body had been eradicated and dysbiosis rectified. I was also tested for high uric acid levels as I used to have gout. Luckily, they were normal. Test 3 – ninth month of diet My body remained in an overall alkaline state. No toxins were detected and my uric acid levels were not raised. It did however, indicate that I had too much salt. An iron and folic acid deficiency were detected. Unlike conventional tests that judge deficiencies based on statistical data, The “Test Expert Plus” identifies minerals and vitamins deficiencies or excesses in the individual. Test 4 – 13th month of diet My body remained in an overall alkaline state. No toxins were detected. Uric acid levels were normal. No mineral and vitamin deficiencies. The beauty of the test is that an infinite amount of information about bodily systems can be accessed. As a result, one could spend an entire session on food intolerances, which is what the test is renowned for. In reality, this aspect of the test is just the tip of the iceberg. Thus, for your first test, it is important to inform the test practitioner of your goals. The longevity nation diet set out in this book cuts out foods that cause food intolerances. The food intolerance test would be much more useful after a prolonged period on the diet. You can

expect that no food intolerances will be detected because the longevity nation diet eliminates foods that cause intolerances. It is more important to discover stresses in the body that could prevent proper absorption and assimilation of nutrients, like dysbiosis or digestive enzyme deficiencies. In the UK, inexperienced operators were responsible for negative experiences. This test is a necessary tool, so much so that many German GPs use them in their normal practices. Regarding cost; my initial consultation and test with Judy was €85 (€ 110). The cost reduced with each visit and my last test was €25 ($30) when I just checked a few items. Do not use the “Vega Check” as this is used for overall health indicators only. Make sure the operator is not using the “Check Medical Sport” because it only checks overall heath. It is critical that the operator uses the correct machine. In the US the machine is called the “Bio Expert”. 2. Conventional Laboratory blood and urine tests The standard method of checking for deficiency in the body is via blood and urine tests. There are other methods which I subjected to trials but I found them unreliable. There are many blood and urine tests available at varying costs through Biolab in the UK (www.Biolab.co.uk), as there are no labs in Ireland. While I recommend taking the “Test Expert Plus” test at the onset of dietary changes, the Biolab tests should be done after about a year on the longevity nation diet in order for the body to be fully cleansed and accepting of the new nutrients entering the system. Also, it is necessary to go through a nutritionist for analysis of the results. While this may turn some away, in the following chapter, I will describe the benefits of a nutritionist during the early stages of the longevity nations diet. Your nutritionist can also point you to your closest laboratory as well. Initially, I had Biolab check:

1. Minerals: calcium, chromium, copper, iron, magnesium, manganese, molybdenum, selenium, sodium, zinc, phosphate, potassium, iodine 2. Vitamins: vitamin A (retinol), B1 (thiamine), B2 (riboflavin), B6 (pyridoxine), B12 (alpha-carotene), beta-carotene, vitamin C, vitamin D (D2 & D3), alpha-tocopherol (vitamin E), gamma-tocopherol (vitamin E), folic acid, and red-cell folic acid. In total, all these tests cost approximately € 650 ($850). Fortunately, I discovered a significantly more cost effective and logistically easier method. Amino acid test An amino acid test requires a urine sample and it cost me €110 ($140). The results were sent to my nutritionist for analysis. From this one test, my nutritionist was able to determine mineral and vitamin deficiency which correlated with the expensive individual tests I had previously carried out. Additionally, the test also reveals amino acid levels. Amino acids are the building blocks of the human body. As discussed in chapter 8 under “Protein” there are 23 different types of amino acids, 15 of which can be produced by the body. The remaining 8, known as essential amino acids, must be obtained through protein rich food. I also used Biolab for this test but it is slightly more logistically challenging as it is a blood test that must be drawn by your GP. It therefore must be couriered due to the rapid degradation of the sample. Some countries, including Ireland, do not allow blood to be transported so you must have the laboratory make special arrangements. Your nutritionist can also assist with this. In short, you must obtain the blood kit from your local lab using your nutritionist details, have blood drawn at local GP, then courier the sample to your lab. The essential fatty acid test (EFA) identifies omega 3, 5, 6, 7, and 9 as well as saturated fatty acids and trans-fatty acids. My test revealed some deficiencies despite the fact that my diet includes apricot kernels, olive oil (or rapeseed) and some fish. My nutritionist then suggested plant based foods to correct my deficiencies. This test should also be carried out after a year on the longevity nations diet. A second test can be done after a few months to verify that dietary changes have been effective. 3. Flow System Audit Like the Test Expert Plus test, Flow System Audit can be carried out at the onset of the longevity nations diet to have a starting point and gain greater understanding of trouble spots within the body. However, for cost and or time efficiency, I recommend this test to be carried out after about 1 ½ years on the longevity nations diet after any deficiencies, identified in the Biolab tests, have been corrected and after a Test Expert Plus test has verified that there are no digestive enzyme deficiencies, no toxins present, that friendly bacteria exist in adequate amounts, that the body is overall alkaline and no mineral and vitamin deficiencies. Flow System Audit is described by Biomedx as, “a method that is able to measure several factors of the fluid dynamics of the internal environment of the body. This environment is often referred to as the “terrain” or “biological terrain”. While the various field of medicine examine, isolate, or treat one particular part or system of the body, Flow Systems Analysis gains feedback about the operation of the entire internal biochemical/electrical environment.” (1) The Flow System Audit Test analyses, urine (a reflection of what the body is letting go of), and saliva (a reflection of what the body is holding onto). Currently, Gabriel Donohoe is the only flow system audit operator in Ireland. Upon arrival at an appointment, he will require a urine sample. I recommend using a 24 hr sample which is also required for the amino acid Biolab tests. Biolab will have instructions for collection and they may also be followed for the Flow System Audit test. Pharmacies in Ireland do them. As mentioned in chapter 15, when I switched to a plant based diet, my weight dropped from 80kg to 70kg within months but I slowly regained the weight yet my physique has remained very trim. I believe that the dietary change allows the body to store more weight in muscles

and bones in the form of alkaline minerals. I did not have a bone density test carried out at the start of the diet but it would be interesting to see if the reading would change after being on a plant based diet for a year. The test costs in the order of € 50 ($65) and they use the heel of your foot. 5. Vitamin D test A vitamin D test is recommended for those living in a cooler climate, like Ireland, where sun is scarce. The test cost me €55 ($70) through Biolab. It tests your vitamin D2 and D3 levels. My nutritionist suggested that you do the test during the winter months to see if you need supplementation. I required supplementation living in Ireland and the plant based product I use will be discussed in chapter 18. Time line See test table timeline below.

Though the costs of each test is not extortionately high, the costs do add up. Luckily, they do not need to be done all at once. The cost for a nutritionist must also be factored in. This may seem like one expense too many but adopting the longevity nation’s diet is committing to a healthy disease free future. Chapter 18 – The Nutrition Plan “Balanced nutrition demands that an adequate supply of all the essential minerals be present in the body, as these minerals work as a team with vitamins in rebuilding the body cells. Minerals and vitamins are dependent on one another. Lack of one or more of either minerals or vitamins may cause the loss of many valuable nutrients in the body (1, Pg.157).” Implementing Dietary Changes at the Dinner Table Should both parents not believe in a non animal based, non animal milk, gluten free and refined sugar free nutrition plan then small steps must be taken that both parents agree upon. If one parent is not open to changing their children’s nutrition intake, I advise not to. If I could alter my diet at age 47 then your children can at age 18 onwards when they have more freedom to make decisions for themselves. One parent may decide to change their own diet, which they have every right to do but it can cause tension in the family if no one else is receptive to the dietary changes. In my case, I never cooked and suddenly I was sharing the kitchen with my wife, eating a different meal from the rest of my family. It was a factor in my separation. I would recommend slowly convincing a partner or spouse to make small changes. Water with meals Research indicates that it is preferable not to have water with meals. Others say it makes no difference. Dr Jay Hoffman in Hunza Secrets of the World’s Healthiest and Oldest Living People says “Water should be drunk a half hour before the meal or two to three hours after the meal. Then it does not interfere with digestion. If one drinks water with meals, the water has to be absorbed before proper digestion can take place (2, Pg. 140).” Digestive Enzymes are proteins but they don’t actually do the digesting. Water and acid react with your food (3). A plant based diet is rich in water, therefore, it should not be necessary to drink water with meals. Also, a plant based diet is alkaline forming and it must slightly alter the pH of the acids in the stomach. Why then pour more slightly alkaline water on the stomach acids? Very little concrete research has been carried out on this topic. Personally, I avoid water half and hour before a meal and then half an hour after. This rule, however, is not set in stone and I believe small amounts of say wine with a meal is fine. Digestive Matters A small percentage of people get bloated stomachs when they go on a fruit and vegetable (some fish) diet. It is worth noting that eating fruit and vegetables is a colon cleanse method in its own right. No doubt you need to get a “Text Expert Plus” (Vega) test carried out if you become bloated (see chapter 17). Be aware that the body is in a period of adjustment during the early stages of being on the longevity nation diet. In my case it was up until the end of the first year. Deeply embedded toxins and acidity will be released and this may result in additional wind or gas. The colon will also be working more efficiently therefore, bowls will be moved more frequently. Food Labeling For those who do not know, the first item listed has the highest percentage; then the second item, etc. If a product has a long list of ingredients, it is probably not that close to its original form and potentially possesses a higher risk of allergic reaction (4, Pg.2). If any product says “salt” I put it down as I know the producers do not know the basics of healthy eating. It should always read “sea salt”. Beyond food A healthy body is not only a result of good food. It is important not to pollute the body and sabotage healthy eating habits by using chemical products on the skin and in the mouth. Purchase natural deodorants, soaps, and toothpaste from health food stores. Food alternatives Unfortunately, crisps currently are out. Their trans fat content has a detrimental impact on the body. At one stage, I was eating too many crisps which did not go unnoticed on my fatty acid test. I provide alternatives in my nutrition plan. Most wraps contain gluten but there are alternatives. Many are not yet available in Ireland but they can be made at home. 100% corn tortillas are available and can be easily made. Gram (chickpea) crepes are also a great alternative and very easy to make. Another alternative wrap “Nori” edible seaweed. Most vegetables stocks still contain yeast. Yeast is a problem because most people are suffering from dysbiosis (lack of friendly flora and fauna in the gut). Without the friendly bacterial in the gut, the unfriendly bacteria will thrive. Yeast is one such organism that will spread and reap havoc. Also, yeast cannot be killed; it must be starved. Yeast feeds on sugar so all sugars, including most natural sugars, must be given up for a time while the yeast starves. Avoiding products that have added yeast is recommended. My nutritionist advises people to make their own stock and save water leftover from steaming vegetables. Jam is delicious but it is also packed with sugar. The general rule for jam making is a cup of fruit to a cup of processed white sugar. Healthier jams can be made at home using a bit of organic juice as a sweetener.

I have replaced oranges in my diet with other fruit. Surprisingly, oranges are a food intolerance culprit. The Hunzakuts did not have oranges but two of the longevity nations mentioned in chapter 2 did in small quantities and were eaten in minimally. Today, many oranges are genetically modified for economic reasons (5). Eggs are a key ingredient in a lot of baking but they are easily replaced with a product called, ‘Egg Replacer’. There are also many recipes that bypass eggs. I will provide names of books in the nutrition plan. A few final tips on minerals and vitamins Every single mineral is important but one to watch out for, especially if you are vegan, is iodine. Two teaspoons of vegetable stock that contain items such as wakame, sea spaghetti and Kombu should provide your daily requirement of iodine. Not all vegetable stocks contain iodine. If you do not consume, say, approximately one to two teaspoons of sea salt a day you need to ensure you get your intake of sodium and chloride from other foods. My last test (referring to chapter 17) showed a deficiency in vitamin B2 and B6 which I corrected by taking spirulina. Spirulina therefore turned out to be a vital part of my diet. I also lacked certain essential fatty acids (ETA,EPA and DHA). I found a plant based product providing these essential fatty acids which is listed my nutrition plan. Smoking is obviously out. High fructose corn syrup (HFCS) is a man made sweetener that is found in a wide range of foods, from ketchup and cereals to crackers. Soda’s are out due to high sugar content but most people are unaware of the salt content. Table salt are added to soda to induce thirst. To cover the unpalatable taste, huge quantities of sugar are added. Diet soda contains aspartame, also called, AminoSweet. This substance is highly toxic to the body. See link http://www.collective-evolution.com/2013/01/19/the-shocking-story-of-howaspartame-became-legal/ Monosodium Glutamate (MSG) is a synthetic flavour enhancer not prohibited by the FDA in the US and in a lot of processed foods. While it is legal, it produces adverse reactions in many. Request MSG free food at take aways and restaurants. It is an unnecessary additive that tricks the taste buds and is likely treated as a toxin in the body. The link provided in the bibliography lists all foods that contain MSG (6). Sulphur Dioxide (SO2) is a common preservative. Most non organic dried fruit contain the chemical, for example, dried apricots that are yellow, most likely contain SO2. Natural dried apricots are brown in colour. Genetically modified food, is now common in most supermarkets and grocers around the world. There are huge environmental ramifications of GM food and the debate extends to the impact GM foods have on the human body. This issue is too large to

discuss further but steer clear of GM food. Kenya has taken a great leap forward and banned all GM foods! Hopefully other countries will follow their lead (7). 8. It is no surprise that high levels of alcohol (ethanol) have a negative impact on the body. In Ireland during the Celtic Tiger years the death rates from alcoholic liver disease (ALD) increased by 188% from 1995 to 2009. Robert Lustig says, “A little alcohol induces heat shock proteins in the liver, which can be beneficial. Indeed, insulin sensitivity is a J-shaped curve. A little is Ok, a lot is not. How to design your personalized nutrition plan The longevity nation nutrition offers guidelines for healthy eating but every body is different; each person is unique as are their dietary requirements. Therefore, a customized plan is necessary to insure all mineral and vitamin requirements are being met while eating a planbased diet. Below are three different options for designing a personalized nutrition plan, each with a different level of individual work required. Option 1 I recommend that everyone transitioning onto the longevity nation diet seek a nutritionist for consultation during the first year but the degree to which a nutritionist may be involved varies depending on which option is chosen. Option 1 requires the greatest degree of nutritionist involvement and therefore less work on the part of the individual. In option 1, a nutritionist will guide the diet by imputing your daily and weekly food intake into a software program that calculates recommended daily allowances. If the imputed diet is lacking any minerals or vitamins, the nutritionist will make dietary suggestions: remember, minerals and vitamins must be received through food and not synthetic supplementation. Nutritionists have their client’s best interests at heart, however, their personal perspective on diet may differ from the longevity nation diet. Therefore it is necessary to describe the diet and hold firm to its rules. Option 1 is the most user friendly as the nutritionist is also able to assist with questions and queries. A new diet can be a vast lifestyle change and an ear to talk to can be much welcomed as a regular doctor will be unlikely to understand and unable to assist. The nutritionist is also necessary for interpreting urine and blood lab test results (as discussed in chapter 17). The software package I recommend, the details of which will be provided as part of my nutrition plan, allows the user to input a daily or weekly diet. If the diet is relatively similar day to day, a one-day input is adequate but if the diet varies from day to day, a seven-day input is necessary. Chapter 19 – Vaccinations Today, vaccines are administered across the world. They are so commonplace and routine that they are believed to be safe and statistics appear to back this up. Doctors rarely disclose potential side effects and side effects are rarely reported. But are they as safe and necessary as we are lead to believe and could there be another way to tackle viruses? What are vaccines? Vaccinations may have originated as far back as 1000 BC and it is believed that inoculation was used in China before the 16th century. In Western society however the first vaccine was smallpox and designed in 1796 by the British physician Edward Jenner and Louis Pasteur furthered the concept (1). Vaccines are weakened and sometimes dead forms of viruses and disease germs that are mostly injected directly into the bloodstream in order to produce an immune response, small enough so the patient does not become sick but strong enough that the body will be able to fight against a future attack. Unfortunately, some patients do become sick and die as a result. In, Vaccines; Are They Really Safe and Effective, Neil Z. Miller explore each common vaccine, their histories, and positive or negative outcomes. I will explore two vaccines as case studies. Polio Polio is a contagious disease that has a range of symptoms. More often than not, it manifests as a cold and in severe cases it can cause paralysis and death (due to repertory paralysis). “95% of everyone who is exposed to the natural polio virus won’t exhibit any symptoms, even under epidemic conditions. About 5% of infected people will experience mild symptoms, such as a sore throat, stiff neck, headache, and fever-often diagnosed as a cold or flu. Muscular paralysis has been estimated to occur in about 1 of every 1,000 people who contract the disease (2, Pg. 14).” Some scientific communities have concluded that those who develop the extreme symptoms of the polio virus may be predisposed to the disease and the remainder of the population is naturally immune. The virtual eradication of the polio virus in the United States is largely assumed to be a result of the vaccine, however, medical investigators such as Dr. Robert Mendelsohn found no credible scientific evidence that this is actually the case. In fact, the polio virus was on the decline worldwide before mass inoculation of the virus. “From 1923 to 1953, before the Salk killed-virus vaccine was introduced, the polio death rate in the United States and England had already declined on its own by 47% and 55% respectively (2, Pg. 14).” Polio was also on the decline in Europe and many countries questioned the efficiency and safety of the vaccine. The countries that did not systematically inoculate their population

experienced the same eradication of the disease as inoculated populations. Shockingly, those populations who were inoculated actually experienced a peak in contraction of the virus following the release of the vaccine. In the United States, cases more than doubled the year of mass inoculation. Vermont had 15 reported cases of polio prior to inoculation in 1954 and 55 reported cases after inoculation (a 266% increase). Rhode Island reported 22 cases of polio prior to inoculation and 122 reported cases after inoculation (a 454% increase). New Hampshire’s reported cases went from 38 – 129, Connecticut’s cases went from 144 – 276 and Massachusetts’s cases went from 273 – 2027 (a 642% increase) (2, Pg. 18)! Even the creator of the polio vaccine admitted to its counterproductive affect. “In 1976, Dr. Jonas Salk, creator of the killed-virus vaccine used in the 1950’s testified that the live-virus vaccine (used almost exclusively in the United States from the early 1960’s to 2000) was the “principal if not sole cause” of all reported polio cases in the U.S. since 1961. In 1992, the Federal Centers for Disease Control and Prevention (CDC) published an admission that the live-virus vaccine had become the dominant cause of polio in the United States (2, Pg. 18 & 3).” Yet, the CDC currently states on their web site, “In the late 1940’s and early 1950’s an average of 35,000 cases were reported during the time period. With the introduction of Salk inactivated polio vaccine (IPV) in 1955, the number rapidly declined to under 2,000 cases in 1957. By 1965, only 61 cases of the paralytic polio were reported (4).” The CDC”s information leads the public to believe that the polio vaccine has been successful. The Bill and Melinda Gates Foundation has used these ‘impressive’ statistics to lead a polio vaccine campaign in India that has similarly impressive statistics in that the virus has been virtually eradicated. However, 47,500 cases of paralysis and death occurred in India as a result of the vaccine in the first year (2011) alone (5). There is no doubt that the intentions of the Foundation are good, yet the vaccine’s efficacy should be questioned when so many die and are permanently affected in the effort to eradicate the virus. Is there a better way to move forward? Measles The CDC web site (below link) states that the annual morbidity rate in the US for measles used to be approximately 530,000 per year and that by 2010 this reduced to 61 cases. The statistics demonstrate that the vaccine virtually eradicated measles between 1963 and the late 60’s. This ‘factual’ information is indeed impressive but upon closer inspection, it is evident that these numbers do not tell the full story. http://www.cdc.gov/vaccines/pubs/pinkbook/downloads/appendices/G/impact-ofvaccines.pdf Miller explains, “A significant decline in measles began long before the vaccine was introduced. From 1958 to 1962, the number of cases toppled by 38 percent. The death rate tumbled on its own even more. In 1900, there were 13.3 measles deaths in the United States per 100,000 population. By 1955, eight years before the first measles shot, the death rate had

declined on its own by 97.7 percent to 0.03 deaths per 100,000. Figures published in International Mortality Statistics confirm this reduction” (2,Pg. 27). Yes, the figures published on the CDC website are correct, however, they fail to demonstrate that the virus had already significantly declined before mass measles inoculation. The World Health Organization states that more than 95% of measles deaths occur in lowincome countries (6). Miller explicates, “Measles can be dangerous in populations newly exposed to the virus, and malnourished children living in undeveloped countries. In advanced countries, measles can be severe when it infects people living in impoverished communities with poor nutrition, sanitation, and inadequate health care.” (2, Pg. 26). This information suggests that the body’s immune system is equipped to fight the virus if it is in good health. Strengthening the immune system by providing the body with optimal nutrition should perhaps be the first line of defense against viruses but the powers that be condemn those questioning vaccines as irresponsible and reckless. Vaccination Promotion Miller goes further and discusses tetanus, mumps, rubella (the MMR), diphtheria, pertussis, acellular pertussis, hepatitis B, chickenpox, haemophilus influenzae type B (HIB), pneumococcus, meningococcus (meningitis C), hepatitis A, respiratory syncytial virus (RSV), HPV (cervical cancer), rotavirus, shingles, anthrax, smallpox, flu, and multiple vaccines administered simultaneously. Each exploration is as shocking as the next. So why does the medical community stand so firmly behind inoculation? The World Health Organization (WHO), the American Medical Association (AMA), the American Academy of Pediatrics (AAP), the Centers for Disease Control and Prevention (CDC), the Food and Drug Administration (FDA), major medical journals, hospitals, health professors, scientists, and coroners are all implicated in skewing statistics in favour of vaccines (2, Pg. 11). Pharmaceutical companies and those benefiting directly from the sale of vaccines are powerful people and many comprise of the aforementioned comities. According to these groups, vaccines have been responsible for a dramatic drop and eradication of many diseases. Initially, it appears that statistics support these claims however there seems to be another side to the story on deeper investigation. Because of the controversy surrounding vaccines, U.S. congress, passed the National childhood Vaccine Injury Act in 1986, requiring doctors to inform parents of the potential dangers and side effects of vaccines and keep records of vaccine dates, manufacturers, and lot numbers. Doctors are also required to report any vaccine reactions but few do. A survey conducted by the National Vaccine Information Center (NVIC) found that only a small percentage of doctors (18%) report any reactions to vaccines. “In New York, only 1 doctor out of 40 reported vaccine adverse effects to the government. According to NVIC, doctors often justify their refusal to report vaccine reactions by merely

claiming the shot had nothing to do with the child’s injury of death. Some pediatricians may actually believe this, because they quote vaccine policymakers in the AAP and SDS who tell them that the vaccine is completely safe. However, the fear of being sued for failing to warn parents of the potential dangers and contraindications may also be a consideration. (2, Pg. 98).” While 90% of doctors do not report adverse reactions to drugs including vaccines and a conservative estimate of 50% of adverse reactions are not reported, there are still about 25,000 reports made a year to the FDA and over 2 billion dollars of damages awarded over the last few years. “Numerous cases are still pending. Awards were issued for permanent injuries that included learning disabilities, seizure disorders, mental retardation, paralysis, and numerous deaths, including many that were initially misclassified as sudden infant death syndrome (SIDS) (2, Pg. 102).” For those concerned about the welfare of the pharmaceutical companies bearing the brunt of these law suits, there is no need for such empathy. US Congress placed a tax on vaccines that goes directly into a fund designated for vaccine related injury lawsuits. When parents pay for these vaccines, a portion of their money is going into a slush fund in the event that their child becomes grievously ill or dies from the vaccine. The following is the dilemma, if you are a doctor and don’t vaccinate your patients then you leave yourself exposed. The system is set up in such a way that even if vaccination causes fatalities that doctors and others are covered. Pharmaceutical companies place warnings on the vaccine containers indicating who should not receive vaccinations. In the case of measles as example Neil Miller listed thirty two ailments that pharmaceutical suppliers list to cover themselves. The sad reality is that it is actually not the pharmaceutical companies covering themselves but the government as they are in charge of the slush fund. Way forward The entire premise of and validation for vaccine inoculation can be traced back to Louis Pasteur, ‘the founding father of modern medicine’. As discussed in chapter 1, Pasteur believed that all disease was caused by external microbes or germs that infected healthy tissue of the body. Despite the fact that he retracted his own theory on his deathbed, the hypothesis persisted; molding the future of medicine and laying the foundation for the idea of the vaccine. According to Dr. Antoine Bechamp, the germ already exists within the body and that they are in fact, an integral part of living cells. Bechamp calls the germ the microzyma and he believed that they exist in everything from soil to rocks to air and importantly, in the human body (7, Pg. 188). These microzymas are ever changing and evolving like the lifecycle of a tad pole or butterfly. Bechamp’s hypothysis on the microzyma has been researched and renamed the protit, somatid, boids and nanobes. No doubt the microzymas will be one of the most studied areas in years to come. Gaston Naessens (post Bechamp) called the mircozyma the somatid and the following clip demonstrates how the microzyma evolves in the blood.

In other words, the key to diseases ‘contraction’ and disease prevention is in our hands. While a toxic diet and lifestyle will lead to sickness and disease, the longevity nation diet nourishes and supports the body and internal systems. Dr Harold Buttram states,“Many diseases will pass as subclinical infections without acute illness, or if there is illness, it will be relatively mild (2, Pg. 104).” Breastfeeding will also bolster a child’s immunity exponentially. Thus, a healthy nourishing diet coupled with breastfeeding should provide the immunity necessary to fight illness but crucially, illness should not develop in any serious form if the internal ‘terrain’ of the body is supported. The idea of not vaccinating children is scary. The medical community, peers, schools, family and friends put tremendous pressure on parents to be conventional and unquestioning of the inoculation regime laid out government health organizations but parents must remember that the decision is purely their own. If parents are concerned, research should be done and alternative health professionals would be helpful to consult such as naturopathic doctors, chiropractors, and homeopathic doctors. The Hunzakuts super longevity nation discussed in chapter 2 had no diseases other than child dysentery believed to be due to sanitation issues and yet communities around them contracted all kind of diseases (9, Pg 222). Chapter 20 – Stress Reducing and Holistic Balancing Methods Sally Beare in, The Live Longer Diet – Secrets of the World’s Longest Living People says, “What is stress? When you are stressed, your body switches into fight-or-flight mode”, ready to run away from the source of danger. Your heart beats faster, your breath quickens and your blood pressure rises. Your body makes stress hormones such as adrenalin and cortisol, glucose is released into the bloodstream and your cholesterol levels rise. Potassium and phosphorus are excreted, which makes your body more acidic, and free radicals are formed. Your digestion, libido and immune response are put on hold while energy is diverted elsewhere. Every one of these mechanisms also just happens to cause accelerated aging and diseases of ageing. Thousands of years ago, when we just had the odd fight-or-flight situation, this was not a problem, but today many people are chronically stressed. Stress devastates the immune system; researchers estimate that chronic stress contributes to up to 80 percent of all major illnesses, including cancer, heart disease and back problems. The first physical signs of stress include fatigue, irritability, inability to concentrate, insomnia and drinking too much (1, Pg. 242).” There are many methods for stress reduction. Breathing techniques, meditation, and massage will be explored but the greatest focus will be on the stress reduction affect of music on the brain and balancing the body’s natural vibrational frequencies. In order to understand the impact of stress and relaxation on the brain, neurons and hemispheric communication will be discussed. Vestibular Nerve “Neurons are core components of the nervous system, which includes the brain, spinal cord, and peripheral ganglia. A number of specialized types of neurons exist: sensory neurons respond to touch, sound, light and numerous other stimuli affecting cells of the sensory organs that then send signals to the spinal cord and brain. Motor neurons receive signals from the brain and spinal cord, cause muscle contractions, and affect glands. Interneurons connect neurons to other neurons within the same region of the brain or spinal cord (2).” Neurons produce an electrical charge that sends a signal at about 100 meters per second to their destination. The charge is generated by the movement of potassium and sodium through the nerve cell via specialized pumps. Both potassium and sodium are alkaline minerals and when the body is overall acidic, it must seek reserves of potassium and sodium in order for nerves to fire correctly and at speed. The myelin sheath is an insulating membrane that surrounds portions of the nerve in order for the signal to travel faster. It is comprised of alkaline minerals and these minerals can be robbed if the body is acidic and seeking alkaline minerals for other functions. Debt juggling is similar; should cash flow be insufficient, funds will continually be moved around and manipulated to pay bills. This scenario is similar to what happens in the body. The auditory vestibular nerve, or the vestibulocochlear nerve is the eighth of twelve cranial nerves, and is responsible for transmitting sound and equilibrium (balance) information from the inner ear to the brain and eyes (3). It is the first system to develop in the womb and is

considered to be the most crucial system for general functioning as it controls both dynamic equilibrium (balance in movement) and static equilibrium (balance in rest). “The vestibular system must be exercised through movements such as sustained walking, swimming, yoga, Tai Chi, hiking, bike riding, etc. When the vestibular system is activated through movement, it stimulates processing, i.e. learning. Fetuses begin exercising the vestibular system as early as two months. While extreme sports challenge the vestibular system, they also produce adrenalin and cortisol in the body which “destroys new nerve cell growth and development ”. The release of adrenalin and cortisol is free radical producing and accelerates the aging process (4, Pg. 40). Hearing is a crucial element of the vestibular system. Sound can be picked up in a process called bone conduction but the majority is processed in the ears. Two are canals for the transmission of pressure and the third is the sensitive organ of Corti, which detects pressure impulses and responds with electrical impulses which travel along the auditory nerve (part of the vestibular nerve) to the brain (5).” In the book, Smart Moves, author Carla Hannaford. Explains, “The cochlea in our inner ear is made up of an elaborate mechanism of hair cells, set up much like the keys of a piano. These hair cells respond to specific vibrations by stimulating specific nerve endings. The elegant “inner keyboard” is able to pick up one hundred tones in its 32,000 nerves, with the higher range of notes developing first in the cochlea (4, Pg. 42).” The following clip further expands upon and demonstrates in greater detail the importance of potassium and calcium in the cochlea that allows sound to be processed and transmitted to other body functions. https://www.youtube.com/watch?v=1JE8WduJKV4 Potassium, sodium, and calcium are all alkaline minerals and they are necessary for nerve functioning. This emphasizes the importance of maintaining overall alkalinity in the body by eating the correct diet (longevity nation) and reducing stress. For a review of body pH, refer to chapter 3. Later in this chapter, I will provide details of a test that measures hearing and a program to correct any out of step frequencies unless permanent damage has been sustained. It is also worth noting that in a review in the American Journal of Otolaryngology, it states, “It is now established that increased oxidative stress and chronic inflammation may play a role in some aspects of hearing disorders (6).” My audiologist believes, as research suggests, that free radicals permanently damage the hair cells in the cochlea. For more on oxidative stress and ORAC score refer to chapter 10.

Corpus Callosum The corpus callosum is known as the neuron super highway passing information back and forth from each hemisphere of the brain. “The hemispheres are controlled by the corpus callosum. It serves as a conduit or a bridge between both sides. The bridge can literally be exercised and strengthened until it is physically larger and more capable of transmitting information, thoughts and feedback between the hemispheres and a more integrated system creates better performances. The famous clairvoyant healer Edgar Cayce and Albert Einstein were found to have unusually large corpus callosums. The two halves of our brains cooperate by agreeing that one of them will be in charge. On many jobs they take turns being the boss, handling the responsibility back and fort between themselves every few seconds, minutes, or hours. This is called hemispheric dominance (7).” In a study conducted at the University of Düsseldorf they compared the corpus callosum of 27 right handed classically trained male pianists or string players to 27 right handed non musicians through MRI scans. They found that, “among musicians who started their training before the age of seven, the corpus callosum is 10-15% thicker than in non-musicians. Another study was conduced by Dartmouth University music psychologist, Petr Janata published by “Science” in 2002 confirming the ability of music to promote heightened memory, emotions, and skilled motor movements (8). These studies demonstrated that neurons speed and brain hemispheric communication is enhanced through music but music has also been shown to significantly reduce stress. The first auditory program below has significantly reduced my cortisol (stress) levels. As stress is acid forming, it is crucially important to reduce it. Most cannot immediately change their lifestyle therefore these programs are designed to reduce stress while improving brain function. 0 to 22,000 hertz range auditory programme The hearing range of humans and other animals is referred to in hertz. The normal hertz range in humans is approximately between 20-20,000 though this can differ considerably from person to person (9). The following two tests can be carried out by an audiologist. Tympanometry Test A tympanometry test identifies any blockages in the middle ear. If the middle ear is blocked, speech can be impacted. Many children who have delayed speech are found to have inner ear blockages. Because they cannot pick up many frequencies, speech is a challenge and impediments may occur. Some audiologist are now referring their patients to nutritionists as they are realizing that oxidative stress and foods with gluten, lactose, etc play an important role in hearing. The first step in clearing a blockage should be changing to the longevity nation diet. The mucus may clear during the first year without radical medical intervention. Hearing test The audiologist will use an instrument called an audiometer to test the left and right ears separately at intervals between 0 and 8,000 hertz in a booth. Above 8,000 Hertz the equipment become too specialized and expensive. Should any hearing issues be detected, carry out a second test after using the below programme for a three month period or more. However, please note that the programme below should be used even if the test indicated a normal frequency patterns. My test, above, shows that I am within this range after using TLP for over three months. However, I have sustained permanent damage in my right ear in the 6,000 to 8,000 Hertz range. This is evident because my subsequent test after using TLP for one year showed no improvement in this range. Human speech is in the 125 to 4,000 Hertz range. One can only say what you hear so I assume people with speech issues first port of call is to check their hearing. The Listening Programme (TLP) To correct any imbalances detected, I suggest an auditory program called, “The Listening Programme (TLP)”. It holistically keeps the body balanced when listened to five days a week for a three month period though I suggest you listen to the programme for life. It is similar to exercising the body; jogging for three months is great but it will cease to benefit the body if the exercise ceases. In the TLP program, an orchestra creates 'music' that produces specialized and sophisticated sounds with specific vibrational frequencies. While I believe it is the best and most cost effective program of its type available, it is still expensive. As more people become aware of this program, I anticipate that the price will drop when a second hand market is created. I suggest purchasing level 1 with animal sounds (nature) however there are a view alternatives that you can discuss with a TLP provider. TLP level 1 comes as either a 10 CD pack (roughly €450 in UK and $475 in US) or already downloaded on an IPod

(€750 in UK and $715 in US). This price excludes postage, speakers, and any consultation. Below is more on one off consultation fees. TLP is more expensive to buy in the UK due to European VAT rates. So I assume you will not save any money by purchasing TLP via the US if based in Europe. Also you cannot burn or copy the CD’s as it looses 80% of its capacity. Personally, I like having the 10 CD’s; that way, family members can listen to TLP on to their respective listening devices all at the same time. It is also imperative to have a good set of headphones. My travel set cost me € 40 ($50). TLP providers can assist you further on names of headphones. Shop around on Amazon and Ebay and if you are lucky you might be able to purchase it there. You should also search for your closest provider on http://advancedbrain.com/. Please note that I have no financial link with any TLP provider and I don’t speak on behalf of TLP providers. The audiometer hearing test discussed earlier is also called an audiogram test and used for monitoring performance by TLP’s main competitor and from my research this test is the most practical current test to measure performance. No doubt different TLP providers will have different views. Lori Riggs as an example uses a “functional assessment” where areas of concern are discussed before and after using the programme. Most TLP providers wish to provide you with an initial supervision service during the first say three months of using the programme. Should money be tight try to convince the TLP providers just to give you a “Jump Start” initial set up fee to get you going rather than a full supervision fee. Something like say € 75($100) for half an hours advice/support. It will no doubt be beneficial to have a supervision service should it be possible financially but in my view it is not an absolute necessity. The most important point is to achieve corpus callosum (super highway) growth so that the two hemispheres of the brain talk to each other. We need to practice our corpus callosum for life using a holistic programme. Most are extremely small and play a minor role in your energy system. However there are approximately 40 secondary chakras that are of significance; these are located in your spleen, back of your neck, the palms of you hands and the soles of your feet. For brevity purposes, we will only explore the seven primary chakras (10).” Referring back to chapter 14 on breastfeeding, it is worth noting for instance that there are chakras on a mother’s nipples and breastfeeding extend to far more than just the mothers milk. The link below shows the seven main chakras as sketched by Barbara Brennan who has the ability to see chakras (and the auric field) in great detail. Other gifted people have been able to see charkras/ auric field for thousands of years. Cultures who have recorded charkras are often completely disconnected

from one another giving the energy points credibility before science identified the energy centers in the body. It may be difficult for some to fathom these energy centers yet no one has seen a radio wave and their existence is unquestioned. http://karldeleeuwfoundation.com/ebook/chakras.pdf “In Vedic philosophy, the chakras are centers in the body that correspond to the physical plexuses and control the flow of a spiritual energy, such as survival, self-expression, love, and impartial vision. Every one of these energy centers has a vibration frequency with a corresponding note on the diatonic scale. When there is discord within our body, it is the result of one or more chakras vibrating out of tune. Sound plays an important part in healing as it sets a correct pitch with which to realign our chakras, hence the power and the passion of music. This concept of realignment was described in 1665 by the Dutch physicist Christiaan Huygens who called it “the sympathy of the clocks”. Interestingly, when I used “The Listening Progamme (TLP)” discussed in the former section, I could not hear surround sound at all. Instead of sound moving around my brain, sound was solely coming from one part of my brain in one hemisphere. When a legitimate healer used the Solfeggio turning forks on me the balance was corrected. Until my healing session, I never realized that I could not hear surround sound. 7.83 Hertz range (earths, our cells and pineal gland resonance) auditory programme Schumann discovered that the earth resonates at 7.83 Hertz and today it is called the Schumann’s resonance. Dr Wolfgang Ludwig carried out further research and discovered that subjects lacking the 7.83 Hertz resonance had serious health complications. In a study done at the Max Planck Institute for Behavioral Physiology in Erling-Andechs, volunteer students lived for four weeks in an underground bunker that completely screened out magnetic fields.

These students experienced emotional distress, migraine headaches and altered circadian rhythms. With brief exposure to 7.8 Hertz waves, their health returned. Hence astronauts in spacecrafts are equipped with Schumann resonance devices (12, Pg. 102). Each of our cells has a specific resonant frequency of 7.8 to 8 Hertz (12, Pg 102) and our pineal gland in particular operates at 7.83 Hertz. The audio download’s full name is “Schumann Resonance – Unforgettable Moments”. Breathing Techniques and meditation Breathing and meditation are vast subjects. They have been the focus of study for thousands of years and equally, there are thousands of books written on them. The point to emphasize is that being present in the moment brings calm and relaxation. During meditation, thoughts of the future and past, worries, and fantasies or daydreams are gently placed to the side to allow the brain to unwind. Performing a simple meditation routine for even five minutes a day can have a dramatic affect on stress and tension. It also teaches us how to live entirely in the moment, taking joy from the simple act of breathing that is the core of existence. Without breath, there is no life. When a baby is born, parents wait with anxious anticipation for the first breath followed by a great big cry. When a person is dying, their breathing slows down and many report a final distinctive exhale before the person passes. Breath work pioneer explains, “The awareness of breath movement encompasses the physical experience as well as the true nature of the self as we unfold our vital force into the outer world. It is this breath that we allow to come and go on its own which sustains the basic rhythms of our life processes (13, Pg. 14).” As essential to life as breathing is, we give it very little thought. The simple act of focusing on breathing for a few moments a day, leaving thoughts and worries behind can be unexpectedly liberating. One does not need to sit for hours in meditation like a devout yogi; five minutes will do to begin. It is free and can be done anywhere though a quiet comfortable place is ideal. I know many people who meditate in their offices. I have outlined below, a simple routine which can be followed or adapted. I am not an expert on the subject but I have many resources including colleagues who are qualified yoga teachers. A wonderfully simple and effective book to consult on breathing and meditation techniques is, Free Your Breath, Free Your Life, by Dennis Lewis.

One of the simplest, yet as effective as any complicated technique, is focusing on the breath. Just noticing the breath without judgment is the first step. Under stress, the breath may be shallow and short. Then slowly begin to draw the breath down further into the belly feeling it fill the diaphragm area around the third chakra (naval area), then the lower lungs and finally into the chest. Exhale with intension and release any stress allowing tight areas in the body to unwind. Exhaling though the mouth with a bit of force can be particularly stress releasing. Repeat this method. On meditation. As Richard Burnett says in his 19 minute clip in link below he sets out how important moving one’s attention away from external thought processes and on the “now” (right had bottom of below page). Rather than taking drugs for depression is it not best to use one’s own attention. http://mindfulnessinschools.org/ Below is a good free 15 minute mediation that you can download. http://www.maryhelenhensley.net/free-meditation/ Massage Because I spend the majority of my time in front of a computer screen, my shoulder muscles stiffen up. I try to go for a massage at least every second month to remove the knots. Depending on stress levels, it may be advisable to go more frequently. There are many different types of massage and it worth doing a bit of research to find one that is most suitable. For those uncomfortable with removing clothing, Thai yoga massage is a convenient option. It is very hands on and many practitioners use the Indian nadi points, which are comparable to acupuncture points. For a very deep massage, seek a Rolfing expert. “Rolfing targets the body's fasciae, the sleeves of connective tissue that envelop muscles and give the body shape (14).” Bodywork can be quite sore but has amazing results. There are many other massage techniques. Find one that suits you and enjoy. Reflexology is also a great relaxation method as it links into the meridian points that correspond to the charkas. It is recommended to have a massage a minimum of once every three months. Test to check your stress level This test is optional. Heathmat.com say “In recent years a number of investigators have proposed the DHEA/cortisol ratio to be an important biological marker of stress and aging. When individuals are under prolonged stress, a divergence in this ratio results, as cortisol levels continue to rise while DHEA levels decrease significantly (15, Pg. 27).” In the US (not Europe for unknown reasons) some labs carry out DHEA and cortisol saliva tests. My DHEA level before using the 0 – 22,000 Hertz auditory programme (TLP) was 6 and thereafter 5.9 so it stayed static. However I experienced a 30% reduction in my cortisol

levels over three months of using TLP. I cannot comment if other music programmes would have had a similar effect or not. Therefore it seems the TLP on its own reduced my stress levels significantly. Below, see the link of my test results. I ordered two test kits for $86 (€65) and then paid extra for postage to return the test kits. I suggest doing these tests with a 6 months period between. The tests must be carried out at the same time of day for consistency. Chapter 21 – Unlocking Emotional Walls We all have fears. John Demartini sets out seven fears in life that can immobilise people and cause them to lie to themselves about what their dreams are and what they are capable of accomplishing (1). 1. The spiritual fear of contravening the morals or ethics of some spiritual authority that you have given power to. 2. The mental fear of not being smart enough, not having a certain educational degree, not being creative enough, not having the memory or imagination to fulfil your dream. 3. The vocational fear of failing in business and not knowing how to manage a business sufficiently enough to fulfil your dream. 4. The financial fear of the loss of money, loss of income or not making it financially. 5. The familial fear of loss of loved ones, loss of respect from close family or loved ones, or loss of kids or spouse or parents. 6. The social fear of rejection or reprisal from someone or some group that you have given power or authority to. 7. The physical fear of ill health, death or disease or of not having the vitality or bodily strength, size or appearance needed to fulfil your dream. It is important to learn how to overcome these fears. Anything perceived as unusual or outside of the norm is difficult for people around you to process. To overcome your own self doubt and to push forward no matter what well meaning loved ones and other say, requires a strategy. I have set out below, a seven point plan that will have a dramatic affect on your life if followed. In order to live a disease free life, points 1 and 7 must be followed. Should you have “emotional walls” (step 7) stress is a likely culprit of bodily dysfunction as it is acid forming as discussed in Chapter 20. Items 2 through 6 address the potential for living an amazing life as the title of this book states. It is not necessary to commit to every point below but the more committed you are, the greater the result that will be achieved: in other words, the more you understand and put into practise the more “amazing” your life will be.

Understanding balance in life (Yin/Yang) Why do people rise to stardom and popularity only for it all to come crashing down around them? This is due to the balance in life. For every negative there must be a positive. Scientist and others know this. Wikipedia say “In Chinese philosophy, the concept of yin-yang is used to describe how seemingly opposite or contrary forces are interconnected and interdependent in the natural world; and, how they give rise to each other as they interrelate to one another. Yin and yang are actually complementary, not opposing, forces, interacting to form a whole greater than either separate part; in effect, a dynamic system. Everything has both yin and yang aspects, (for instance shadow cannot exist without light) (2). John Demartini sums up the balance of life very simply in an experiment that I think is genius. John is a human behaviour specialist and has written many books. He travels fulltime and speaks on many topics. He was also one of the participants in “The Secret”. John was like many teaching the power of positive thinking on the lecture circuit and years ago at the age of 27, he set out to write a book with over 2,000 positive affirmations. Prior to releasing the book, John decided to carry out an experiment. For three years, he wrote down how he felt at four consistent times during the course of his day: -3 if he felt very down; -2 not so down; -1 feeling little down; 0 ; +1 little positive; +2 more positive ; + 3 feeling really great. After three years passed he totalled up the score and it was zero! Therefore John’s feelings were completely balanced over time and he never published the positive affirmations book because life cannot all be positive and convincing ourselves that it is, is a delusion. This is not to say that affirmations do not work and are not powerful as long as you realize that there must be balance in life. John’s simple test is so telling. Once you know and understand that a higher power created total balance then you see negative experiences in a different light and know that for the world to spin around there needs to be balance otherwise the world will spin out of control. The balance in life is something that scientists cannot explain and something that you must either grasp or not. I hope you do grasp this concept that the ancient Chinese philosophers knew very well. Some will say you only trick yourself that negatives are not seen as bad. This is not the case. There is total duality. John Demartini sum it up well, “There are a lot of people who are supposedly the heroes; the people that have done super achievements and super-success and later down the line they

become the “villains” in some people’s perspective. The real truth is that they are human beings and they have both sides. But the second they take credit, they attract blame. Nature is trying to bring that balance. Instead of getting addicted to the one side. Embrace both sides of life because otherwise you are going to be trying to get rid of half of yourself and you will never appreciate and love yourself trying to get rid of half of you. If you manage your life by seeing both sides and embracing both sides equally; you won’t get caught in the illusions of “success” and “failure”; the egos of self-righteous, self-wrongeous, pride and shame and all the things that distract you.” When you initially grasp “the balance in life” it may be shocking and even a downer. Why can life not all be joy? However once you truly appreciate that this is how creation works and it has to be so then things start falling into place. Watch next time when someone leaves your life how someone else will come into fill the void. Or when someone is nasty to you someone will enter to give you encouragement. John studied the 250 or so “ology’s” such as astrology; biology; psychology; philosophy, just to name but a few, and took all this knowledge and summed the important points up into easy to read short books. He is exceptional in his dedication on gathering knowledge and in his research he found out what the greats all knew and could put the common threats together. In “Inspired Destiny” John sets out the seven areas of life: 1. Spiritual 2. Mental 3. Vocational 4. Financial 5. Familiar 6. Social and 7 Physical. You are then guided to figure out which category you fall into. I did not get mine right the first time. It took me some time to work out that my top area is “spiritual” and I never knew it. What you should be doing as a vocation is what you think about, what is around you in your place of living, and what you talk about. Whilst purchasing the above book, it is worth buying Count your Blessings and The Riches Within as well. Once you know what area in life you are in then you can start planning what you want to do within that field. Remember it is possible to make a financial return in any field. Also remember that the more niche your product the more people will be willing to pay for it if you satisfy a need. Don’t let well meaning friends and family put you off your dreams as they cannot see you making a success of your goals/ mission. I started researching “nutrition” in 2011 and it is now mid 2013. You will be surprised, if you dedicate time and passion into something that fits into your highest values, how quickly you can become knowledgeable and even pioneering. Once you set goals you need to be dedicated to it no matter what “the balance of life” puts in your path. In my case, I have not yet reaped any financial rewards from the writing of this book but I know that I am certain that that will come in time. This is why you need to find out what area of life you should specialize in because once you truly love what you do, nothing can be bigger than what you set out to do: your mission in life. It is also a great way to meet a partner that thinks like you do as you will be associating with people that are on your own wavelength.

You can set out a very simple plan on an A4 (8 x 11 in) sheet but it is critical to read it daily (Monday to Friday). Should you really want to notch it up my suggestion is to participate in John Demartini’s three day Master Plan for Life event https://drdemartini.com/ . Over the years John created this course where he asks 2,000 questions within the seven areas of life: imagine a ramped up version of an E Harmony questioner but designed to uncover a deep part of yourself and setting out your future plans in all seen areas of life. Once you’ve got your plan then you can update it yearly. It is amazing to look back after a year and measure your progress. If you do not have a plan that you fine tune yearly, you are essentially treading in the dark. This course will not be for everyone but it is hugely powerful. I don’t read my complete plan daily; instead I read a two page summary of my missions. You have to read it daily (Monday to Friday) and I cannot stress enough the importance of this. It is best to set a mission bigger than yourself. How to achieve this is best set out by Napoleon Hill in Think and Grow Rich. Again Napoleon’s book is for the serious punters who truly want to excel at their chosen mission. Listen to this clip and then revisit it a few times during the first year. Your subconscious mind will absorb far more than you think: Imagine a stream of water- the conscious mind being on the surface while the subconscious mind flows at varying depths that can be dipped into and brought to the surface (3). Research indicates that the conscious mind processes 40 bits of information per second whereas the subconscious mind processes 40 million bits of information per second (4). The flow of information below the surface is just too much to process at once. This is why it is good to sleep on important decisions. Therefore, like the Napoleon clip above you might not take it all in at once, however your subconscious mind will be keeping it below the surface for you to tap into at a later stage. This fact is very useful in doing research: knowing that even if you cannot absorb everything in your conscious mind, your subconscious mind is always storing it away. When you set a mission it is as if your subconscious mind lets the right information come to the surface at the right time. Another very important point in setting your plan for life is synchronicity. Carl Jung called it “Meaningful coincidences”. He described synchronicity as the experience of two or more causally unrelated events being observed happening together in a manner that is meaningful(5).” Information will also come to you. While you do need to put yourself out there and read up on your point of interest, it is as if important information is directed towards you. I researched the nutrition section of this book (chapters 1-19) in a six month period and my “workbook” research notes are on my web site. I then researched the “universe” in 2012 and returned to write and fine tune this book with my ghost writer Jackie. I can categorically state that there is no way that a person who knew nothing about nutrition before 2011 could produce 90% of the research in this ebook within a six month period of time. My biggest breakthroughs came via synchronicity/ signs. It is when events around you unfold and you just know that God and the Universe put it in place for you. You think, how is this possible? Then it happens again and again. Only if you experience synchronicity can you understand. Once you live with synchronicity your life changes. When you set your “Master Plan for Life”, you do not concern yourself with how you are going to reach your mission but you must have the strength to see your mission through

despite the negatives that may present themselves. And, the bigger the mission the more strength and will power you will need. However just know that God and the Universe will bring into your life people and coincidences that will make your mission possible. Don’t concern yourself with that side of things. Auto-suggestion / affirmations Napoleon Hill in his book Think and Grow Rich says “Nature has built man that has absolute control over the material which reaches his subconscious mind, through his senses.” Whatever instruction you or someone else gives you, your subconscious mind has to accept it. Therefore if someone says you are not smart or people are not supportive, you will be greatly impacted. You might have the brightest idea however as soon as one of the seven fears in life plants a seed of doubt it could derail you. It is up to you to regulate what information you allow below the surface of the stream of water that flows in your subconscious mind. To overcome this it is critical to say daily affirmations. For instance if you think you are not physically attractive put a saying in that say you are the most beautiful person in town . Reprogramme your mind: it is not rocket science. This process is like feeding your mind with flowers. The more flowers you plant the less space there is for weeds (6, Pg 51). We need to plant more flowers and surround ourselves with people that plant flowers and not weeds. Here is the problem: when you take on a big mission, loved ones and friends cannot see you succeeding. In my case, my background was property and until 2011 I knew very little about nutrition. I am not a doctor or nutritionist. How can I write a book about nutrition and think of making money out of it? I can fully see where my loved ones and friends come from because they are looking at things via their values. They don’t understand that I have a properly prepared master plan for life and that I am now actually in an area of life where I can really excel. My loved ones are projecting their value systems and fears onto me. They are well intentioned. It is important to understand this otherwise you will fall at the first hurdle. And then via affirmations you need to feed your subconscious mind with flowers. I have over fifty affirmations I say daily that are mainly suggested by John in his books, some by Anthony Robbins and some purely my own. A good short book with powerful affirmation for someone taking on a mission is The Pocket Coach by Dick Hensley. It has blank pages where you can insert your favourite quotes/affirmations. I also used some quotes from Anthony Robbins seven day CD set called Get The Edge Here are a few affirmations. It is fine to have specific affirmations and general affirmations - I am a genius and I apply my wisdom - Every day in every way I am getting stronger and stronger - With each and every breath I take; with each and every stride: I feel abundant cantered joy and love deep inside

- Dyslexia is a gift and I have a photographic mind with an infinite shutter speed (myself being dyslexic) - I break through my fears and I pursue what I love in life You do not need to take it to that level and have fifty affirmations. You can simply say “I am a genius and I apply my wisdom”. Try to say this at least 10 times a day. However the bigger your mission the more you need to plant flowers. The master of affirmations must Muhammad Ali. Lynne McTaggart in The Intention Experiment said Ali was the master of intension. He developed a set of mental skills that eventually altered his performance in the ring. Before a fight, Ali used every selfmotivational technique out there: affirmation: visualization; mental rehearsal; selfconfirmation; and perhaps the most powerful epigram of personal worth ever uttered: “I am the greatest” (7, Pg. 172). You can and must via affirmations use this fantastic tool to achieve your mission. However keep the balance in life in mind. Mentorship (role model) and studying the greats Sir Isaac Newton said “If I have seen further it is by standing on the shoulders of Giants” Why not stand on the shoulders of giants? Using golf as an example; Keith Cunningham always says that you need someone to check your swing. You cannot see your own mistakes but others can. Also, you don’t know what you don’t know. This is a simple sentence however the only way for you to find out what you don’t know is to learn it. There is no easier way than finding an experienced person who has been there and done it to provide you with the knowledge you need. It is important to note that a mentor is not there to do it for you - just to guide you in the right way and give you encouragement along your path. There is a complete lack of mentorship programmes and mentorship comes in different levels. To set out your overall goal/mission the names mentioned above and their programmes will greatly assist. One name to add is Louise Hayes and her DVD You Can Heal Your Life. Once you have your mission fine tuned you now need to put it into practise and having a more hands on coach to assist you is very important: someone to check your swing. You need to be reasonably advanced with your concept before approaching such a coach. As an example, to get my “Wellness” book up to this point and set up the products on my “Product” page I used the services of Gina Mostert of Inovizion http://www.coachdirectory.co.za/gina_mostert.asp Shortly after meeting her in late 2012, she told me, “Move quick and perfect later”. I knew from past life experiences how important what she said was. In the past I missed opportunities because I wanted to perfect too much and therefore missed the boat. Within that one sentence, Gina already paid ten fold for her six months coaching fees. As an aside, I knew at the time of meeting Gina and her husband via synchronicity that she would play an integral part. You start getting good at knowing who will and who will not play an important role in your mission.

The next important point is to study the people in the top of the field / area that you selected. If you take on a foundation with multiple missions then you need to study Mahatma Ghandi; Martin Luther King; Nelson Mandela and others. Should you be in property you need to find out how the likes of Donald Trump and others did it. You will then discover a blueprint for success. Join a charity or help someone in need Anthony Robbins suggests joining a charity and this had a massive impact on my life. Even if you are going through financial hardship, Just do it. There is something about helping others that helps you. It is said that the Universe rewards those who reward others. In fact, the charity I joined and the area where I first assisted has now become the basis for my second mission for my foundation “sustainable communities”. I recently heard of company in Dublin that annually sends out staff to assist with a charity they set up in Africa. What better way for team work in the company? If all companies had a similar approach, the world would be a different place. Unlocking emotional walls In my research I have found four powerful ways to unlock emotional walls. Methods two, three and four are currently not seen as mainstream and at this point in time I will only mention number one, namely A Course in Miracles by the Foundation for Inner Peace. Keith Cunningham first suggested this book at an event and it has been life changing. I read a few pages a day. It is mainly about that the way to love is about forgiveness. You programme your mind via reading (affirmations). Try it for a year, even if you are an atheist. The book was written by an atheist who was unexplainably inspired to start writing “The Course in Miracles” http://acim.org/ It is as if A Course In Miracles clears the dirty water under the surface to allow fresh water to flow into your conscious mind. We have been brought up with so many ideas and influences of others that we need to give our subconscious mind a “spring clean”. At the opportune time I will provide the details of methods two to four for free and can assure you, if you followed a minimum of two of the “unlocking emotional walls” methods, it will be life changing. However, it is important to first have a “spring clean” to ready yourself. I will notify people who subscribe to my foundation when I publish the information. My long term aim is to update my “Master Plan for Life” once a year over a three day period and repeat the programme (actual event) every 2nd year. 7. Think and Grow Rich by Napoleon Hill book. Wilder Publications, US (from €6/$8). Again this book will not be for all however powerful. 8. Keith J Cunningham used to do an three day event “Flying Solo”. I hope that he launches this event again. He is also particularly good in “How to buy or exit a business”. He has two books Keys to the Vault (€30/$40) and his latest book The Ultimate Blueprint for an Insanely Successful Business (€15/$20). Now it is time to get someone to check your swing using the golf analogy. A coach does not have to be local due to skype etc. Above I provided one web site of coaches however I have not got the knowledge to recommend coaches other than the coach I use. My coach cost €2,000 ($2,600) for six months. This includes one hour skype every say two weeks and e-mails between. Not someone to do the work for you.
