VI Parada, Valenzuela City Chapter 1 Problem and It’s Background This chapter contains the Introduction , Statement of the Problem , Hypothesis , Theoretical Framework, Conceptual Framework , Significance of Study and Definition of Terms . Introduction Malunggay ( Moringa Oleifera ) popularly known as a “ Miracle Tree” in many countries , because of it’s nutritional value and medicinal purposes . The plant usually grows in the tropical climates such as Philippines , India , and Africa . The plant can grow to as high as 9m with white trunks . Malunggay has a white fragrant flowers that produces long pods . Malunggay can be cut in 3ft in length and planted in the ground . It is widely used as a vegetable ingredient in cooking , as herbal medicine for illness . The pods produce a clear , odourless and sweet oil . Malunggay leaves may be eaten as greens , in salads and as vegetable ingredients for soups . It’s flowers are cooked and eaten either mixed with other foods or fried in batter .The bark has a whitish-grey color and surrounded by thick cork . The tree has an open crown drooping , fragile branches and the leaves . The bark , sap , roots , leaves, seeds , oil , and flower are used in traditional medicine in several countries . Malunggay can be a treatment in prostate and skin cancer , rheumatism , arthritis , and joint pains . Ampalaya (Momordica Charantia) also known as bitter melon and bitter gourd is a tropical and subtropical vine in the family of Cucurbaceace . It is widely grown in the Amazon , Carribean and Southeast Asia such as Philippines for its edible fruit . Ampalaya or bitter gourd as the name implies its bitter taste due to the presence of momordicin , and believed to be the most bitter of all vegetables . It is a climbing vine that grows up to 5m , with up to 20cm long . The leaves are heart shaped 5-10cm across , cut into 5-7 lobes . Ampalaya bears fleshy green fruit , oblong shaped with pointed ends , ribbed and wrinkled bursting when mature to release seeds . Ampalaya seeds are flat with reminated margins . Ampalaya leaves and fruits are excellent source of Vitamin B , iron , calcium , betacarotene and phosphorous .It has been a folkloric cure for generations but has now been proven to be an effective herbal medicine for many ailments . Ampalaya is used as herbal treatment for diabetes , HIV , coughs , skin disease , sterility in women , heal wounds, antipycrtic , treat stomach problems such as colitis , dysentery and intestinal parasite .The Philippine Department of Health has endorsed Ampalaya for an alternative medicine for liver problems . Ampalaya known for increases the production of Beta cells by the Pancreas , improving body’s ability to produce insulin , that controls the blood sugar for diabetics . Hypothesis : There is no significant difference in the Level of Acceptability of Ice Cream made from Ampalaya-Malunggay as perceived by respondents when demographic profile is considered. Significance of Study: The result of the study will provide ready and available information on the utilization of Ampalaya-Malunggay for the production of Ice Cream . This study is significant to the following: Students - This research will engaged the students to eat vegetables through ice cream and provide them a healthy body . Theoretical Framework Ampalaya also known as Bitter melon has been used in various Asian and African herbal medicine systems for a long time.In Turkey, it has been used as a folk remedy for a variety of ailments, particularly stomach complaints.In traditional medicine of India different parts of the plant are used to relieve diabetes, as a stomachic, laxative, antibilious, emetic,anthelmintic agent, for the treatment of cough, respiratory diseases, skin diseases, wounds, ulcer, gout, and rheumatism. According to the Memorial Sloan Kettering Cancer Center, Momordica charantia has a number of uses that are thought to be beneficial; including cancer prevention, treatment of diabetes, fever, HIV and AIDS, and infections. With regard to the use of Momordica charantia for diabetes, several animal studies and small scale human studies have demonstrated a hypoglycemic effect of concentrated bitter melon extracts.In addition, a 2014 review shows evidence that Momordica charantia, when consumed in raw or juice form, can be efficacious in lowering blood glucose levels.Contrary to this evidence, multiple reviews have found that Momordica charantia does not significantly decrease fasting blood glucose levels or A1c, indicators of blood glucose control, when taken 8. 8. VI Parada, Valenzuela City in capsule or tablet form Momordica charantia may be beneficial in diabetes, however the effects seem to depend on how it is consumed.More studies need to be performed in order to verify this effect. The malunggay plant is known to different parts of the world under various names including, but not limited to, horseradish tree, drumstick tree, and dool in some regions. It is one of the more popular and publicized plant that is acknowledged to have nutritional, as well as, medicinal value. It is rich in vitamins A, B & C, minerals such as iron and amino acids. Fortunately, the plant is easily accessible as it can be found not only as part of the wild life, but also in the backyards of many Filipino homes. Malunggay proves to be a low-maintenance plant to grow, and is able to propagate in almost all kinds of soil. Most of the parts of the malunggay had been proven to be useful, both for consumption and for its preparation as a medicinal plant. Its flowers, leaves and young pods are associated and perceived to be important because of the health benefits that it provides. The malunggay plant, which belongs to the Moringaceae family, can grow as high as nine meters. The bark of this tree has a gummy quality in it, and when peered closely, is comprised of white wood that is soft in nature. It derives one of its names, horseradish, from the taste of its roots. The malunggay leaves, which are used in certain Filipino viands, have a very distinct shape that makes it easily recognizable. They are circular, thin sheets that are attached to a main stalk. There are various parts of the malunggay plant which are being used for health reasons. For one, the leaves of this plant proved to be a good source of calcium, iron, ascorbic acid and phosphorus. Its other parts such as the seeds, the young pods, and the flowers have been established to benefit individuals as far as anti-oxidant, anti- diabetic, circulatory stimulations, and such other activities that are most beneficial to mankind, are concerned. There have been claims that malunggay can be used to lower blood pressure, aid in pains caused by rheumatism, headaches and migraines, as well as its being an anti-tumor plant. Malunggay is also used for purgative and anti-fungal purposes, as well. All these prove the claim that this plant is indeed multi-purpose. Scope and Delimitation The scope of this research was the acceptance of ice cream made from ampalaya-malunggay to freshmen students in Valenzuela City Polytechnic College. VI Parada, Valenzuela City Definition of Terms Tropical Climates – is a climate typically found within the tropics, while a few locations outside of the tropics are consider to have a tropical climate. Pods – an elongated seed vessel of a leguminous plant such as the pea, splitting open on both sides when ripe. Stem – a plant stalk. Prostate – is a compound tubule alveolar exocrine gland of the male reproductive systems in most mammals. Vines – a plant that has long stem that climbs. Sterility – the quality or condition of being sterile. Colitis – inflammation of the colon. Insulin – a hormone that controls absorption of sugar by the body, secreted by islets of tissue in the pancreas. Lobe – a rounded projection, as a lower end of ear; any of the divisions of the lungs and brain. Shelf Life – the length of time that food may be stored and still be good to eat. 11. 11. Local Study Ampalaya, also known as Bitter Melon, is a crawling vine that grows well in tropical countries, particularly in the Philippines. The term Ampalaya refers to both the plant and its fruit, which is elongated, green and has a rough and rumpled skin. Known for its bitter taste, the Ampalaya is at once a staple ingredient in Filipino and Asian cuisine and a reliable home remedy for various illnesses, particularly diabetes. Ampalaya has long been a popular part of many Asian vegetable dishes. Though notorious for its bitter taste, Ampalaya is rich in iron, potassium, beta-carotene and other nutrients. But aside from its role as a healthy food, Ampalaya is especially valued by diabetics for its known anti-diabetes properties. The traditional remedy is made by pounding the raw fruits of Ampalaya into a bitter liquid, or by boiling the leaves and fruits for a few minutes; the resulting water then drank as a herbal tea. “Ampalaya fruit prepared as a tea is well- tolerated and may be a useful dietary adjunct in the treatment of type-2 diabetes.
