Smoke Generator



a device used to produce smoke in smokehouses. A smoke generator makes it possible to regulate the process of curing in sausage production. In the most basic smoke generators (grates, with gas or electric heating) smoke is produced by smoldering oak, alder, or asp sawdust (without a flame). In smoke generators with mechanized feeding of sawdust, a specific concentration of smoke may be obtained by regulating the amount of sawdust. In smoke generators with electric heaters, smoke production may be regulated by changing the temperature of the heater (from 200°C to 400°C). In smoke generators with automated regulation of the composition of the smoking agent, full combustion of sawdust is ensured by the feeding of air, which cools the smoke to the temperature required for curing. There are smoke generators that regulate the quantity of sawdust being fed by means of a magnetic vibrator. In a friction smoke generator, smoke is produced by the action of heat, which is generated by the rubbing of wood against a rotating metal surface.
